Zucchini Casserole (My Mom's Favorite Side Dish)

My mother would can zucchini and make it taste like pineapple?! It's amazing the many flavors zucchini can 'take on'...

This is my favorite way to eat zucchini and it was my mom's favorite way to serve it. I didn't want to take the time to make it myself, so I'm sharing my (her) recipe along with a ToH photo....

The cornflake topping makes for great crunch and taste.

ZUCCHINI CASSEROLE
(From The Better Baker & my mom=)

4 cups peeled, diced zucchini
1 grated carrot
1 grated onion
1 can cream of chicken soup
1 cup sour cream (don't use fat free)
1 box stove top stuffing
salt and pepper to taste
1 cup crushed cornflakes mixed with 1/4 cup melted butter

Preheat oven to 350. Boil zucchini in salted water for 4 minutes - drain. Mix all ingredients together in large bowl and place in greased 9" X 9" casserole dish. Top with cornflake crumbs. Bake 45 minutes, uncovered.

You can also add chopped cooked chicken to make this a one-dish meal!

Yummy! For some reason, I'm the only one that eats zucchini in my house. I wish I could be making delicious side dishes like this all the time!
