Jello Dessert

HAPPY BIRTHDAY TO SON, DAVE!!
(Our 9# 8 ozs. baby..and our last one)
We celebrate YOU today Sonshine! 


This is a yummy, creamy, fluffy and fantastic dish from my mom's recipe files. 

It was something special she made for us, on occasion, growing up. 

It's also in my cookbook.  I remember well...this was the dish I made when I held my first 'home party' (Tupperware) back in the day...so long ago.  

You'll love this.  The melted marsh(a)mallows ;-} add a smooth texture, and the cream cheese and mayonnaise make it nice and creamy.

We have enjoyed it with all flavors of red jello - it's your choice. Serve it as a salad or even a dessert. 

(You know, when I was a kid, jello was a dessert and we didn't get something baked every day)

It also makes a large batch, so feel free to cut the recipe in half for a smaller family. I've made it by hand, and also, using a mixer.  I think the mixer just
makes it fluffier and feels good in my mouth! 

Eat up!



JELLO DESSERT

16 large marshmallows
1 c. milk
1 (6 ozs) box dry (sugar-free) red jello (6 serving size)
1 (8 ozs.) box cream cheese, softened
1 (20 ozs) can crushed pineapple, undrained
1/2 pt. whipping cream, whipped 
(or 8 oz. frozen whipped topping, thawed)
1/2 c. mayonnaise

Place marshmallows and milk in double boiler (or microwave) and melt. (medium heat or power). In large bowl, pour mixture over dry jello and stir until blended and jello is dissolved.  Beat in cream cheese until smooth. Add pineapple; chill about 15 minutes.  Add whipping cream and mayonnaise.  Let stand until firm. 

Yield: about 12 servings

Mixed Nut Bars

I saw this old photo in my files...from the holidays!...and decided I needed to share this awesome recipe.

I love this recipe for the holidays, but truly, it's wonderful any time of the year. 

If you like butterscotch, you'll love these. 

It's a butterscotch/corn syrup mixture poured over nuts on a yummy flour, brown sugar and butter crust. 

Can't go wrong! And the recipe can easily be cut in half. 

(This one comes from my cookbook too!=) I'm not sure where I came across the recipe years ago. 


MIXED NUT BARS 

1-1/2 c. all purpose flour
3/4 c. packed brown sugar
1/4 tsp. salt
1/2 c. butter or margarine, plus 2 Tb. (cold)
1 (11 ozs) can mixed nuts, coarsely chopped
1 c. butterscotch chips
1/2 c. light corn syrup 

Preheat oven to 350*. Lightly grease or spray 9" X 13" X 2" baking pan.  In a bowl, combine flour, sugar and salt.  Cut in 1/2 c. of butter until mixture resembles coarse crumbs. Press into prepared pan.  Bake 10 minutes; sprinkle with nuts.  Melt butterscotch chips (I use a lower power setting in the microwave); add corn syrup and remaining butter; mix well.  Pour over nuts.  Bake 10 minutes.  Cool. 

Yield: about 3-1/2 dozen.

Creamy Twice-Baked Sweet Potatoes


This simple recipe would suit me just fine any time of the year. 

When we spent time in Florida this winter, I enjoyed a baked sweet potato
atleast 3 times a week.  It seems they're on the menu everywhere 
down there! 

The inside of the sweet taters is mixed with cream cheese, brown sugar and a dash of cinnamon...topped with toasted pecans.  

How could it get any better? 

This dish can be made up ahead and warmed when you need it. 
And I think re-heating in the microwave would work great, as long 
as your careful not to overheat. 

M-M-My mouth is watering just being reminded of how tasty these are. 

I adapted this recipe from one I found on a Taste of Home calendar. 



TWICE-BAKED SWEET POTATOES 

2 medium sweet potatoes
3 ounces (light) cream cheese, softened 
1 Tb. brown sugar
(or 1/2 Tb. brown sugar Splenda blend)
several dashes ground cinnamon
2 Tb. chopped pecans, toasted 

Scrub and pierce sweet potatoes.  Bake at 375* for about an hour, or until tender. When cool enough to handle, cut a thin slice off the top of each; discard. 
Scoop out the pulp, leaving thin shells. 

In small bowl, mash pulp with cream cheese. Stir in brown sugar and cinnamon. Spoon into potato shells. Sprinkle with pecans. Place on a baking sheet.

Bake another 15 - 20 minutes at 375* or until heated through. 

Yield: 2 servings

Homemade Garbage Disposal Refreshers


Lemon is always such a good clean smell, don't you think?

I couldn't resist trying these little bits of lemony-cleaning-deodorizing 'thingies'. 


Keep them handy to toss into your disposal when you need to get rid of that nasty odor coming from it. 

The same day I made these, I put some green onions down the disposal and was so pleased with how tossing one of these into the disposal, running the water and the disposal, refreshed the air. 

NICE! 

Sometimes I don't have an orange or a lemon to put down the disposal, but I'm ready now! 

You may want to keep them in the fridge for a longer 'life' for the 'tablets'. 


I adapted this recipe from somewhere on Pinterest...


HOMEMADE GARBAGE DISPOSAL REFRESHERS 

3/4 c. baking soda 
1/2 c. salt

1 tsp. liquid dish soap

1 tsp. water

1 lemon

Sheet pan

Parchment paper

Small spoon or scoop
Airtight jar or container
Gather the ingredients for making the garbage disposal refreshers. Measure and add the baking soda and salt to a small mixing bowl, and give a stir until smooth and blended.



Grate the lemon peel into the mixture along with adding the liquid dish soap and water.



Slice the lemon in half; squeeze the juice into the mixture. Continue stirring and adding juice until the mixture resembles course sand.



Cover a sheet pan with waxed paper or parchment paper, use a small spoon or scoop to mold the half rounds, and then tap them out onto the pan. I used my smallest spring-loaded scoop. Allow to dry overnight.

Keep handy in an airtight container.

Austrian Cream Cheese Bars


I certainly have no idea how these delightful bars got their name, I just know they are AWESOME Austrian Bars!

A caramel-y, chocolate-y, nutty cream cheese cookie you will die for. 

This is a recipe from my cookbook...shared with me by a friend at church. 
(Thank you Cindy!)

After my granddaughter had first taken a bite, she looked at me and proclaimed...
"We need this recipe".  =) 



AUSTRIAN CREAM CHEESE BARS 

1-1/2 c. all purpose flour
1 c. packed dark brown sugar
(can add 1 Tb. molasses to light brown sugar) 
1/2 tsp. cinnamon
2/3 c. butter, softened 
1 (8 ozs) pkg. cream cheese, softened
3/4 c. sugar
2 Tb. all purpose flour
2 eggs
1 (12 ozs) bag semi-sweet chocolate chips, divided
1/2 - 3/4 c. chopped pecans or walnuts, toasted

Preheat oven to 350*. 

Crust:
In large bowl, combine 1-1/2 c. flour, brown sugar, cinnamon and butter.  Beat at medium speed about 2 minutes or until crumbly and well blended.  Press mixture into ungreased 9" X 13" X 2" baking dish. Bake 12 minutes.  Remove from oven. 
(while crust is baking, begin mixing topping) 

Topping: 
In small bowl, beat cream cheese, sugar, 2 Tb. flour and eggs at medium speed until smooth, about 2 minutes.  Stir in 1 cup of chocolate chips.  Pour over partially baked crust.  Return to oven and bake 15 - 20 minutes or until topping is almost set.  Remove from oven; immediately sprinkle remaining chocolate chips over the top.  Return to oven for 1 minute to melt; gently spread melted chips over top.  Sprinkle with nuts. Lightly press into glaze.  Cool to room temp; refrigerate 1 hour.  Cut into bars.  Store in refrigerator.  

Yield: 15 - 18 servings

Iced Mexican Coffee Smoothie

Happy CINCO DE MAYO!! 

Mexican food has been my favorite ethnic choice for as long as I can remember. 

Being in the military, you meet folks from all over the world.

I once had a neighbor who was Phillippino.  She taught me to make the best fried rice.  She had an Irish mother-in-law who came to visit and did a 'jig' for me!

I wish I could say I learned to make some amazing Mexican dishes from Spanish friends, but I don't recall that I did. 

We love quesadillas and enchiladas at our house.  Mexican food is always my first choice when we eat out. 

Anyway - I've had this recipe in my files for some time. I loved the simplicity of it.
I'm not sure why it's called Mexican coffee. 

It didn't call for a stick of cinnamon, but only 1/4 tsp. so I added a tad more. 

I also used Splenda Brown Sugar Blend for the sugarThe almond extract made it very tasty.  Hubby really loved it too. 

I made strong coffee by adding an envelope of Starbucks VIA instant coffee to 1/2 c. water. Made it nice and strong.  Adjust to your own liking. 

Ole`!!




ICED MEXICAN COFFEE SMOOTHIE 

1/2 c. chilled espresso or strong coffee
1/2 c. (almond) milk
3 Tb. brown sugar
(or 1-1/2 Tb. Splenda Brown Sugar Blend)
1/4 tsp. cinnamon, or more
1/8 tsp. almond extract
1-1/2 c. crushed ice

Combine everything in the blender and process until smooth and frothy. 
Delicioso! 

I topped it with whipped cream and shaved chocolate, but a sprinkle
or two of cinnamon would be nice too.

Leader Enterprise - May 1, 2013 - Spring Cleaning Tips & Homemade Cleaners


Hopefully, spring has sprung and we're going to be enjoying more sunshine and warmer temps for a while. It's been hard to think of spring cleaning when it hasn't felt like spring, don't you agree?
Before I share some tips for spring cleaning, I want to first remind you of some of the FUN things about spring.  

~The flowers and trees begin blooming, adding color to our world, and everything'greens up'. Many look forward to planting a garden.
~We get to see more birds, and maybe, even wake up early because of all the birds chirping. (!)
~We all spend more time outdoors, soaking up the Vitamin D.
~No more heavy coats and flip flops and sandals enter our world again. AAAHHH that feels good!

I know it seems rather redundant to WASH your top loading washing machine, but think of all the dirt and grime that go through it yearly. It needs a bath too! 

Fill the washer with HOT water. Add 1 quart of chlorine bleach - no detergent and let the machine agitate for a minute, then let it sit for one hour. After one hour, allow the washer to run through its longest wash and spin cycle. Immediately fill the washer with HOT water again and add 1 quart distilled white vinegar. Let agitate for a minute, and again, let it sit for one hour. Using the bleach and vinegar will clean away bacteria, soap scum and mineral deposits from the wash basket and hoses. Every washer should be cleaned at least twice per year.

I think most of us believe that a ceramic stovetop will be easier to clean because it's smooth, but sometimes it takes a lot of elbow grease to get it in shape. Here's what you need to give your stovetop a real shine..
Bowl of hot soapy water
Baking soda
A clean rag
Gloves (baking soda can be harsh on your hands. You'll be glad you are using them).
Fill a bowl with hot tap water and add a little dish soap. Wet the rag. Apply baking soda over the stovetop, especially any affected areas that need extra attention. Wring about half the hot water out of your rag. You want it soggy, but not dripping; lay it over the baking soda. Set your timer for 15 minutes. Swirl the rag in circles, using the soda paste as a gentle scrub. Dry the surface and give it a good shine.
*To clean microwave, place about 1 - 2 Tb. lemon juice in water in glass bowl. (I love using my 4-cup glass measuring cup for this) Microwave for about 4 minutes, then let it stand a few minutes while the steam works on the dirt inside. Using a damp cloth, wipe out the microwave and you'll leave it clean and lemon-y smelling. You might want to add this to your weekly list too.
Cleaning grout is a good springtime job. It's made easy with this formula: 7 c.water, 1/2 c.baking soda, 1/3 c.ammonia (or lemon juice) and 1/4 c.vinegar. Spray on grout,let stand for about an hour, then vigorously scrub with a brush. You'll be pleased with the changes.
I found these great thoughts about de-cluttering - 'letting go' - at www.springcleaning365.com. While it may be very difficult to get rid of clutter, it can bring great relief by doing it. I want to challenge you to get rid of one thing each day this month. 31 things that you don’t need.
You may think that’s impossible; that is until you think about it for a minute. Let’s quickly brainstorm to come up with some ideas of things we may be keeping around our home but don’t need, use, or love.
Old magazines
Books we’ve never read
Expired coupons
Clothes that don’t fit
Duplicate items
Gadgets that are never used
Outdated paperwork (ex. insurance policies from previous years)
DVD’s never watched
Toys the kids have outgrown
Formal dresses that will never be worn again
I bet the majority of us could knock out the entire month just by getting rid of one magazine or book each day! If not, I’m sure you can come up with 31 random things to trash, sell, or donate. Look at it this way. If you can get rid of 31 things that you don’t need, you’ll have 31 less things to clean or clean around. The chore of keeping your home clean and organized will be so much easier!!
I love using homemade cleaners, so I wanted to share these great ideas that work nicely. The same day I made these refreshers, I put green onions down the disposal. Then tossing one of these refreshers into my disposal made the whole kitchen smell better, and it also helps clean the disposal. Keep them handy to use anytime an unpleasant odor hits.
HOMEADE GARBAGE DISPOSAL REFRESHERS

2 tsp. water

1 fresh lemon

Cookie sheet covered with waxed or parchment paper

Small spoon or scoop

Airtight jar or container

Gather the ingredients. Add baking soda and salt to a small mixing bowl; stir until smooth and blended. Grate the lemon peel into the mixture along with adding the liquid dish soap and water. Slice the lemon in half; squeeze the juice into the mixture. Add juice and stir until mixture resembles course sand. Using a small spoon or scoop, tap mounds onto the covered cookie sheet. I used my smallest spring loaded scoop and thought it was perfect. Allow to stand and dry overnight. Keep handy in an airtight jar or container.




HOMEMADE FEBREEZE
1/8 c. fabric softener
2 Tb. baking soda
hot tap water
spray bottle (about 30 ozs) 
few drops of essential oil (lavendar or orange)for fragrance, optional

Using a funnel, pour fabric softener and baking soda into empty spray bottle. Fill bottle with hot tap water and shake well. (Be sure nozzle is closed before shaking). Spray away! Being frugal can save as much as 90% of what you'd pay in the store.

Homemade Febreeze (so simple)



I love making homemade 'cleaners' for the home. Not only are they frugal, but we can know what's in them.  It's good to know I'm not spreading chemicals in the home and the environment.

I was tickled when a friend sent me this simple recipe for fabric refreshener. I'm sure there are a number of variations on the net and at Pinterest for this recipe. I didn't do any research as this recipe seemed to be worth a try. 

Can't go wrong!  Try it - you'll like it.  I added a touch of lavendar essential oil too.  


HOMEMADE FEBREEZE

1/8 c. fabric softener
(I love Downy or Suavitel)

2 Tb. baking soda
hot tap water
spray bottle (27 ozs) 
few drops of essential oil (lavendar or orange) for fragrance, optional

Using a funnel, pour fabric softener and baking soda into empty spray bottle. Fill bottle with hot tap water and shake well. (Be sure nozzle is closed before shaking). 

Spray away!!! Making your own makes for a large savings for you!
