Strawberry Kool-Aid Pie (No kidding!)

I knew I would have to try this easy pie and wasn't disappointed in the least!

It's so simple to put together and so worth the wait for it to set up!

My blogging buddy, Libby at Cooking with Libby, has some awesome recipes....I knew this one had to be a winner! I can always trust that the recipes she shares will be WONDERMOUS!!  Please stop by her blog and tell her I said hello.  She has a great personal story too.

Who doesn't LOVE recipes with only 4 ingredients????

EASY PEASY I SAY....lest we forget...SUPERDUPERYUMMY too!

I had some fresh strawberries and strawberry kool aid on hand, but Libby made cherry pie.  Either way, they'll be gorgeous and delectable!

Top it with whipped cream if you'd like for a special presentation.

STRAWBERRY KOOL-AID PIE

1 pkg. Kool-aid (unsweetened - any flavor)
1 - 14 ozs. can sweetened condensed milk
1 - 8 ozs. tub of frozen whipped topping, thawed
1 - 9" pre-made graham cracker crust
whipped cream and/or strawberries for garnish, optional

Place the kool-aid, sweetened condensed milk, and whipped topping in a large bowl.  Mix and stir until it's well blended. (I used my whisk).
Pour creamy filling into graham cracker crust. Refrigerate 2 - 3 hours until set. Garnish with toppings and serve.

It's definitely a Sweet Treat!

HAPPY BIRTHDAY AMERICA!

OH HOW THANKFUL I AM TO LIVE IN THE LAND OF THE FREE!

Just wanted to share a picture I took a couple of years ago.

I had tea party for two of my granddaughters, Charlie & Chloe, and some of their friends.

This was in July of 2009, and our invitations invited their friends to an

"All-American Girls Tea Party".

We wore hats and enjoyed star shaped sandwiches served on star-spangled paper plates along with assorted homebaked cookies (the girls helped of course!) served in patriotic cupcake papers.  And we enjoyed bubble gum tea.

This picture shows what they accomplished for their 'team work' project.

It has been published in our local newspaper.

Chloe is on the far left in the picture, Charlie is second to the right...
(It kills me to look at this to see how much they've grown in the last 3 years!!)

They pushed disposable cups through our chain link fence!

Didn't they do a FINE job!?

Our neighborhood enjoyed viewing it all summer long.

Just in case you missed my post a few days ago...maybe you'll want to try these wonderful Patriotic Berry Kebobs

ENJOY A WONDERFUL AND SAFE HOLIDAY!!!

Patriotic Cookie Dough Dessert Pizza

From my archives...

I know our patriotic holidays are behind us, but I wanted to share this lovely dessert that is good all year long...especially in the summertime. You can use fresh fruit and it's so atttractive!

I made this for our July 4th celebration at our son's and came home without a crumb.

And if you're like me...a PROUD AMERICAN...the good ole Red, White & Blue is 'appropriate' any time of year!!

After seeing Becca from Crumbs and Chaos linked this recipe up at a recent Weekend Potluck....I knew I'd HAVE to make it.

It isn't as quick as some of the recipes I make, but it was delicious.....lest we forget 'beautiful' as well.
Good enough to 'salute'....*-*

It has eggless cookie dough dropped over the top, which gives it a special spin on other dessert pizzas.

The only thing I changed was 'Red, White & Blue' in the title to 'Patriotic'.

PATRIOTIC COOKIE DOUGH DESSERT PIZZA

CRUST:

1/3 c. butter, room temperature
1/2 c. sugar (I used xylitol)
1 egg
1/2 tsp. vanilla extract
1-1/2 c. flour, plus more for rolling if needed
(I patted it free form on a pan and only floured my fingers)
1 tsp. baking powder

SUGAR COOKIE DOUGH:

1/4 c. butter, room temperature

1/4 c. sugar (or xylitol)

1/2 tsp. vanilla extract

1/8 tsp. salt

3/4 c. flour

1 Tb. milk or cream

SAUCE:

2 Tb. cream cheese

1/4 c. heavy cream

(I substituted about a cup of whipped topping)

1 Tb. sugar

(no sugar needed if using whipped topping)

TOPPINGS:

Fresh Blueberries
Fresh Raspberries or Strawberries
1/3 c. white chocolate chips

Make the crust: Preheat oven to 350°. Beat together butter and sugar until light and fluffy. Add egg and vanilla, mix well. Stir in flour and baking powder. If it's too crumbly, use your hands to knead it together a few times. Form an 11 inch circle on a parchment paper lined baking stone or pizza pan. Bake for 10-12 minutes or until light golden brown. Cool completely.

Make the cookie dough: Combine all cookie dough ingredients in a medium size bowl. Set aside.

Make the sauce: In a mixing bowl, whip together cream cheese, heavy cream and sugar until peaks form.

Assemble pizza: Spread sauce over cooled crust. Top with berries, white chocolate chips and chunks of cookie dough. Cut into wedges and serve.

AND JUST FOR SOMETHING FUN ON THE 4TH...

I froze blue gatorade and red hawaiian punch into ice cubes and added them to diet 7-up - my family was surprised and loved it!

The red began melting before I got the picture, but it gives you an idea....

Leader Enterprise - June 20, 2012 - getting nutrition into our kids

With summer comes delicious summer veggies - from your homegrown garden, farmer's markets or road side stalls - this is a perfect time to buy local and to enjoy the best that summer has to offer. There is nothing like fresh fruit and fresh-picked veggies in the good ole summertime. I'd like to share some health statistics that I found at www.Zonya.com.Zonya Foco is a tv host, author and professional speaker. Visit her site for more extensive information.
"The American Institute for Cancer Research has determined that 35% of all cancers are related to our diet! Heart attacks, strokes and triple bypasses have now found their way into the lives of 20-yr.olds.
Adult-Onset Diabetes: had to be renamed "Type 2 Diabetes" due to the vast numbers of children developing this lifestyle-induced type of diabetes.
Autopsies from young accident victims found 50% blockages in arteries of children as young as 7.
Creating healthy habits in children isn't always easy. So I'd like to help you to get your kids to eat healthier. Maybe together we can turn some of these alarming statistics around before it's too late."
MAKE VEGETABLES FUN: Cutting veggies into shapes can help your children want to eat their veggies. Make 'ants on a log' by putting peanut butter in a celery stick, and top with raisins ('ants'). There are all kinds of cookbooklets on the market these days to help you have some foodie fun. Do whatever it takes to get your kids to enjoy more veggies. Keep fresh vegetables ready to eat on hand in the fridge. Have small containers of dressing for them to use as dip. Whenever kids ask for a snack before dinnertime, place veggies on the table and tell them to eat all they want. They might not like that at first, but when they're hungry enough, they will glad to have good-for-them veggies. They may even up up liking them more.
SLASH THE SUGAR:A 12-ozs.can of regular soda pop contains 40 grams of sugar which is the same as 10 teaspoons. Maybe you could have them choose their snack: either a cookie, a soda, or some ice cream, but hopefully not all three. Mix high-sugar cereals with healtheir whole-grain, high-fiber cereals. By doing that a little at a time, they will hardly notice.
GET SNEAKY: You can't imagine all the recipes I make by using beans that have been whirred in the blender or veggies into a smoother texture. Adding broccoli or carrots into spaghetti sauce is a great way to camoflauge things they wouldn't normally eat, and they won't suspect a thing! Make stir-fries and add some sweet and sour sauce, or serve with reduced-fat cheese.
GET YOUR KIDS INVOLVED:I know it can sometimes be a pain, but take your kids grocery shopping with you, even if you do it one at a time.Ask them to pick a new vegetable or fruit the family has never tried before, then allow them to help you prepare it for eating.Kids can learn new skills, and they are more likely to eat something they've had a hand in preparing.
MAKE FRUIT & VEGGIE DESSERTS: I have always loved this quote by actor Jim Davis: Vegetables are a must on a diet: I suggest carrot cake, zucchini bread and pumpkin pie.I wholeheartedly agree! What a great way to get those nutritients into your kids and watch them enjoy them without realizing they're eating a healthier choice. Blueberry buckle or a strawberry dessert are great treats. If you're willing to use reduced-fat and low-sugar recipes along with whole-grain flour, that's even better. Remember:when serving dessert, everyone should save room for this additional intake instead of cleaning your plate so you can have dessert. Help your kids to know when to stop and not overeat.
ENJOY SMOOTHIES: This is a great way to get more fruit into your kid's diets. Freeze strawberries, bananas, or pineapple then add to milk and yogurt. Add crushed ice if desired. Blend until smooth and enjoy. I love pina colada smoothies by using coconut milk along with pineapple.
TEACH KIDS TO SAY NO! TO SUPER SIZING! I think this one speaks for itself.
Here is a wonderful new recipe that I am so impressed with. It is very moist and chocolate-y and has a 'secret' ingredient. No one will ever know all that you have 'hidden' it in this tasty bread, but it all adds moisture and nutrients. With the fruits and vegetables in this recipe, you can begin your day with a big dose of your daily nutritional requirements by enjoying a piece or two for breakfast.
Cucumbers are not one of my favorite vegetables, but this cucumber cracker/bagel spread sure is. It lasts up to a week in the fridge.

CUCUMBER CRACKER/BAGEL SPREAD
1/2 cucumber (peeled and cut into chunks)
3 green onions, chopped
1 (8ozs) pkg. cream cheese, softened
1 tsp. worchestershire sauce
1/8 tsp. salt
May make in the food processor:process until cukes are coarsely chopped, then add remaining ingredients and blend until smooth. If preparing by hand, finely chop cuke and green onions. In medium bowl, combine veggies, cream cheese, worchestershire sauce and salt. Beat with electric mixer until smooth. Cover and refrigerate overnight for flavors to blend.

DOUBLE CHOCOLATE ZUCCHINI BREAD(WITH SURPRISE INGREDIENT)
non-stick spray
1-1/2 c. white whole wheat flour
1/2 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
1/3 c. unsweetened baking cocoa
1 c. frozen spinach, or 1/2 c. cooked spinach
2 Tb. canola oil
1 c. shredded zucchini (about 1 sm.or 1/2 med.)

1/2 c. unsweetened applesauce
2/3 c. granulated sugar
2 eggs, beaten (or 1 egg+2 egg whites)
1 tsp. vanilla extract
3/4 c. semi-sweet chocolate chips
Preheat oven to 325. Line a loaf pan with parchment paper (or waxed paper)and spray with non-stick spray. Set aside. In medium bowl, whisk the flour, baking soda, baking powder, salt and cinnamon until evenly mixed. Microwave frozen spinach for about 1 minute on high. Squeeze out extra water and drain. Process in a food processor with oil until finely pureed. Transfver to a large mixing bowl. Into spinach mixture, add zucchini, banana, applesauce, sugar, eggs and vanilla. Mix well. Then add dry ingredients and mix until incorporated. Then stir in 1/2 c. chocolate chips. Pour batter into lined loaf pan and dot the top with remaining 1/4 c. chocolate chips. Bake for 1 hour. Patriotic Berry Kebobs

When I saw this simple idea for Patriotic Berry Kebobs from Mommy Made From Scratch...linked up at our Weekend Potluck linky party, I knew it was exactly what I wanted to put together for our upcoming holiday.

It was so easy too.  I bought a prepared angel food cake that was on sale, and already had red and blue sprinkles in it. If you want to make your own (this one was cheaper to purchase than a mix!) just add some blue and red sprinkles to your batter.  I cut little star shapes out with one of my smaller cookie cutters, and also added bananas (dip in lemon water or pineapple juice if not serving right away).

I then decided I wanted to have a dip to go with the kebobs and lo and behold I came across a nutella yogurt dip, also linked up at Weekend Potluck, from Wonky Wonderful.  Click here for that simple 2-ingredient! recipe.

Hope you enjoy this beautiful and healthy holiday treat! It's a healthy way to celebrate!

Patriotic Berry Kebobs

1 pint of blueberries
1 pint of strawberries/raspberries

2 bananas, sliced, dipped in juice to preserve
1 angel food cake
whipped cream (optional)

(Nutella Dip is great too)

Cut the angel food cake into bite size cubes or shapes. Hull the strawberries (use whole raspberries) then simply skewer each piece of the recipe onto the skewer in whatever pattern you like. When finished the fruit and cake can be dipped in whipped cream or the nutella dip
