Peanut Butter Pumpkins!


                                                                         
WELCOME TO MY PUMPKIN PATCH! 

(OK - pretend you're hearing trumpets blowing)...

 ♫ PUM...PUM...PUM...PUM...♫

These are some special little PUMpkins! 

I am just giddy with delight as I type this.  This is such an easy, cute and fun recipe...especially this time of the year. 

And only THREE simple ingredients!
(Four if you count the food coloring) 

 I usually try to have an easy recipe for my grandkids to make when they're here for our T'giving meal, and I think this just might be the one. 

I was happy to find the recipe that inspired me to make these at Mimi's Meals & Deals.  I would also be happy if you'd stop by and check out more lovely recipes and 'deals' Mimi shares there.  And please don't forget to tell her I said hello. 

My sweet little granddaughter, Chloe Lyn, came over to spend some
time with me...she helped me bake cookies for my upcoming bake sale.  And she helped her Papa and me with a project in the garage.  We had lots of fun and she was SUCH a big help to us. 

We visited our daughter and family just yesterday - she has our youngest grandchildren. Since I wanted to take them a special treat, it was extra special that Chloe got to help make these fun little fall treats for her cousins. 

We had a great time with them while we were there!! 


I mixed these by hand - though Mimi used the dough hook on her stand mixer. We added food coloring about 3 times to make them orange enough for our liking.  (You are starting with peanut butter-brown) Then we each stood a toothpick by our little pumpkin and leaned it over onto the pumpkin to make the creases.  We used mini chocolate chips for stems and I think they turned out just so cute. When we pressed the mini chocolate chip on top, it seemed to give it an even more realistic affect!

AND BELIEVE ME WHEN I SAY THEY ARE OH SO TASTY TOO! 

I think they would be really cute as cupcake toppers too!


PEANUT BUTTER PUMPKINS 

1-1/2 sticks butter, room temp
1 c. (smooth) peanut butter
1 - 1# box powdered sugar (about 3-1/2 c.)
Yellow & Red food coloring
(You'll want about 4 times more yellow than red)
Mini chocolate chips

Roasted Ranch (or Onion) Potatoes (& Sweet Taters too)

This is one of those easy and delicious recipes that I am so fond of!

WHO WOULD ARGUE A RECIPE WITH ONLY 3 INGREDIENTS!??? 

These yummy taters make an awesome side dish to any meal. 

Oh how I love thee, Red-Skinned Potatoes!

I've served this dish to company too.  You could always cut up the potatoes a few hours ahead of time - cover with salt water and refrigerate until time to bake.
(Just be sure to drain them well before adding to oil mixture). 

You choose: Season them with dry ranch dressing or dry onion soup. 

Either way is fabulous! So use whatever you prefer and it's always simple. 


ROASTED RANCH POTATOES

2 lbs. red potatoes, sliced 1/2" thick or quartered
1/3 c. vegetable oil
1 env. dry ranch dressing (or onion soup) 

Preheat oven to 350. Combine oil and soup mix in large ziploc bag; add potatoes and shake until well coated.  Empty bag into ungreased 9" X 13" X 2" baking dish. (or use foil for easier cleanup). Cover and bake for 35 minutes; stirring a couple of times.  Uncover - bake 15 minutes longer or until potatoes are tender.

Yield: 6 - 8 servings

I also used this same recipe with a mixture of red & sweet potatoes.
It was awesome!

Easy Homemade Caramel Dip

Oh my word - I could eat this til I couldn't walk!

I love chocolate, but I also love caramel.  

I think most everyone looks for a tasty caramel dip this time of year. 
This is a thick caramel that has no problem staying on top of apples when you're dipping into this yummy treat. 

Four simple ingredients - a few minutes, and you are ready to rumba...and will be enjoying some amazing caramel. It really is as simple as 1 - 2 - 3 - 4! 

When I saw this recipe at my good buddy Lark's blog Lark's Country Heart I had no doubt I would be making it soon...and enjoying it too. I was not disappointed in the least. Please stop by and tell her I said hello. She shares amazing creations and feeds a lot of folks, virtually and in real life too.  *-* 

This is great on ice cream too - MMMM good!


EASY HOMEMADE CARAMEL DIP 

1 C. brown Sugar
1 stick Butter
1/2 C. light corn syrup
1 -14 oz. can sweetened condensed milk 
(if you'd like to cut back on the sugar amount, click here for the recipe for my homemade Sweetened condensed milk made with xylitol or splenda...it does have to set overnight)

Place all the ingredients in a medium saucepan, over medium-high heat.  Stir constantly,
until all the butter has melted and the brown sugar has dissolved. 
Boil for 2 minutes.

(I'm sure you could cook this in the microwave, but I have no directions to share...you'll have to do it at your own risk...but I would make sure I keep stirring it about every 30 seconds) 

That's it.  Let it cool to room temp and enjoy with apples or pretzels. 
It sets up more when it's refrigerated, so I just heat it up for about 30 seconds and it's ready to be enjoyed. 
Serve with sliced Fruit, or as a
Delicious as an Ice Cream topping.... Store in refrigerator up to 4 weeks.
