Ramen Broccoli Slaw

I had enjoyed eating this before (love those potlucks!) but hadn't ever made it myself, until I saw this easy recipe featured at Mix it up Monday at Lisa's Flour Me with Love blog.

The recipe was posted by Marissa at Rae Gun Ramblings. And it's so simple to make! She has an awesome tutorial there is you want to check it out. Please be sure to let her know I sent you over. 

Have you ever purchased a bag of broccoli slaw?  Makes all that shredding so easy - I think it would be great steamed too.

It's best to let this salad stand atleast a few hours before serving, and overnight is even better....the noodles get softer that way.

Always good to have a 'make ahead' dish when you're preparing a big meal huh?


RAMEN BROCCOLI SLAW

1/4 C. Vegetable Oil
1/8 C. White Vinegar
1 Tsp. Sugar
(Splenda worked fine)
1/8 tsp. Pepper
1 pkg. Ramen seasoning


Ramen Noodles (uncooked and crushed)
16 oz. Bag Shredded Broccoli Slaw
1/2 C. (slivered) Almonds
(I toasted mine in a skillet on the stove)
4 green onions, sliced

Mix the first 5 ingredients together to make the dressing.

Add the rest of the ingredients and toss.
(It may seem like there won't be enough dressing, but there will be)

Serve it immediately or up 2-3 days later.

Deep Dish Gooey Cookie Pie


After seeing this simple recipe at Back for Seconds - I just couldn't quit thinking about it.  I had a choco chip cookie mix in the cupboard and when I had a hankerin' for some sweets, I whipped it up quickly and was enjoying it warm.  MMMMM!


It's so 'EASY PEASY' - only THREE ingredients - and it has many options...use sugar cookie or peanut butter mix, nutella instead of peanut butter, nuts, m & m's (or chopped candy of choice)... whatever 'turns your crank'.

Simple and delicious!  It's a winner as far as I'm concerned.  I'm not even fond of marshmallows, but I could NOT leave this alone.

Very attractive cookie pie too - this would make a great dish to prepare for a bake sale...

or if you're like me...whenever you're craving something sweet and want it NOW! 

Pour yourself a tall glass of cold milk and enjoy a big chunk of warm cookie pie.

You'll be sure to love me forever!



DEEP DISH GOOEY COOKIE PIE
1 batch of chocolate chip cookie dough
(I used a dry mix but you could purchase ready-made)

1/2 - 3/4 cup mini marshmallows

1/2 cup creamy peanut butter


Preheat oven to 350*


Press half of the dough into a greased 12" cast iron skillet (I used a 9" round cake pan.) Top with dollops of peanut butter evenly all over the dough. Sprinkle with marshmallows. Top with remaining cookie dough, making sure to spread it evenly.

Bake for 25 minutes or until edges brown and cookie is set. Tastes great at room temperature but is super yummy warmed up with ice cream on top...and maybe a drizzle of hot fudge if you want to go 'whole hog'.

Or taste it as soon as it cools from the oven.

(I'm not sayin' if I did or didn't do that...
but just be careful not to burn your mouth =)

Cinnamon Roll Baked Oatmeal Cups

I've never met an oatmeal flake I didn't like!

As you know....I love love love oatmeal. 

I love it in cookies (of course!), in fruit crisps, in muffins & cakes and especially cooked for breakfast!

This is a fabulous and seriously simple recipe I found at
Joy in My Kitchen. She has some great oatmeal dishes there.

This is a yummy breakfast that is quick to mix - cooks in about 15 minutes - and tastes like a cinnamon roll.

Make it ahead and reheat it for a fast breakfast if you want! It's a great way to warm your tummy and begin your day on the right foot...


Even if it hadn't been featured at a linky party, I still would have HAD to try it.

And who wouldn't love oatmeal in your own little ramekin?

With frosting no less!?


CINNAMON ROLL BAKED OATMEAL CUPS

1 c. old fashioned oats
(we prefer a 7-grain purchased at a local bulk food store)
1/2 c. applesauce, unsweetened
1/2 c. milk
(I used 1%)
1/2 tsp. vanilla extract
1 tsp. cinnamon
3 Tb. maple syrup
1/8 tsp. sea salt

Optional Frosting:

1 - 2 Tb. cream cheese, (1/3 reduced fat)
4 Tb. powdered sugar
1/2 tsp. vanilla extract
optional: milk, added until desired smoothness is reached

Preheat oven or toaster oven to 375.

Lightly grease 4 - 1/2 c. ramekins, custard cups or small bowls.  Or....lightly grease 2 - 1 c. ramekins; set aside. 

Mix together the oats, applesauce, milk, vanilla, maple syrup, cinnamon and salt in large bowl.

Pour the oat mixture into each dish.

Bake at 375 for 15 - 20 minutes or until center is set.

Meanwhile, in small bowl, blend frosting ingredients and mix until smooth.

Serve baked oatmeal topped with cream cheese frosting and cinnamon.  Add a few nuts if desired.

OH MY!  This is a terrific way to begin your day, but I enjoy it for lunch and sometimes dinnertime too.

{Sugar Free} Strawberry Cheesecake & Weekend Potluck #17



to all Moms....


WELCOME TO WEEKEND POTLUCK! 


AND....

A simple and delicious dessert....Strawberry {Sugar Free} Cheesecake Pie. Use regular pudding if you prefer. {Mom will love you for it!}
BEAUTIFUL FOR THE EYES...TASTY FOR THE TUMMY!


STRAWBERRY CHEESECAKE PIE


1 - 8 oz. pkg. cream cheese, softened
1-3/4 c. 1% or 2% milk, divided
1 - 3 ozs. pkg. (sugar free) instant pudding - 4 serv. size
(cheesecake or white chocolate)
4 to 8 oz. {lite} Cool Whip
1 - 9" graham cracker crust
2 c. fresh strawberries, cleaned and sliced
1/2 pkg - 16 ozs. pkg. (sugar free) strawberry glaze
The S-F glaze is wonderful!

In large bowl, beat cream cheese until smooth. Add 1/2 c.milk; blend well. Add remaining milk and
instant pudding mix. Beat for 1 minute.
Stir in Cool Whip and pour into pie crust.
Mix strawberries with the 1/2 pkg. of glaze
and spread over top of pie. Refrigerate any leftovers.
Yield: 8 servings
