Double Chocolate Coconut Cake Mix Cookies

YA'LL KNOW I'M A COOKIE MONSTER!

I love me some crunch...and some chocolate too.

This is a wonderfully yummy cookie and since it's made with a cake mix, it's great for making when you're in a rush...like if your child tells you that you're suppose to furnish treats for the next day? Or for a bake sale?

Grab your cake mix from the pantry and you'll have cookies in no time.

Couldn't resist trying this simple recipe after seeing it at Eat at Home
I am wild about Tiffany's easy recipes and this one did not disappoint.
Please stop by and tell her I said hello. I really love participating in her linky party on Wednesdays when she does "Ingredient Spotlight".

These tasty treats are crisp on the outside and chewy on the inside.

If you're not fond of coconut, then add what you prefer - nuts, peanut butter or butterscotch chips and your favorite extract to compliment whatever you want...or just add vanilla extract.

DOUBLE CHOCOLATE COCONUT CAKE MIX

1 - 18 ozs. box devil's food cake mix
1 stick butter, softened
2 eggs
1 tsp. coconut extract
1/3 c. shredded coconut (or more to taste)
1/2 c. mini chocolate chips
chopped nuts, optional

Preheat oven to 350. In large bowl, mix cake mix, butter, eggs and coconut extract until blended. Add coconut and chocolate chips. Drop by heaping teaspoonsful onto baking stone or cookie sheet.  Bake 8 - 10 minutes. Remove to rack to cool.

(Sorry - I forgot to record how many this makes, but I think it was about
3 dozen)

Super Sweet Blogging Award

I truly appreciate every award I've been given, but have a terrible time keeping up with giving them away.  I'm trying to get caught up some now...

Every single day I get a comment or a like is a real 'charge' and blessing to me.  How exciting to know folks are reading what we post as bloggers!  And on those
special days when you get a blogger award, it makes the sun shine brighter and inspires me to keep doing what I love to do...share my recipes, and life in general, with ya'll.  Thanks to all of you who care and support me on this amazing foodie journey.

It's been a little while back when I received the Super Sweet Blogging Award from a wonderful fellow blogger, The Home Heart. When you have a moment please check out her great blog. Not only is it full of awesome recipes, as her header reads...it's about "Home, Family, Health & Life - And everything in between".  I would be SO tickled if you stopped over and see all the 'goodies' she shares there!
So without further ado….The Super Sweet Blogging Award:
The Super Sweet Blogging Award.  This award goes to those bloggers who give the sweetest comments, or have the sweetest blog.
     a.  Cookies or Cake?    I'll take a crunchy cookie over a soft piece of cake any day of the week.
     b.  Chocolate or Vanilla? Depends...if it's ice cream, definitely vanilla.  But I love love love chocolate most-anything else.
     c.   What is your favorite sweet treat?  I love a panfull of warm brownies or cookies from the oven.
     d.   When do you crave sweet things the most?  When I’m trying to behave the most!
     e.   If you had a sweet nickname, what would it be? Mrs. Bakery *=*
The rules are…

(I'm making my own 'rules' here....In giving you this award, you do not HAVE to send it on, but I would like you to receive it anyway.)
  1. Say something sweet about the blogger who nominated you, thank them and then link to their blog.
  2. Answer the above questions.
  3. Nominate a “Baker’s Dozen” (13) other bloggers for the award and notify them of their nomination.
My Baker’s Dozen are:

Congratulations to the winners, may you carry on the great tradition of inspiring and encouraging others :)

THE ADDICTIVE BLOG AWARD - Getting & Giving Awards Fun

 The Addictive Blog Award!

Yes Siree - NO doubt about it. I AM addicted to my blog!
I would be highly honored if any of you would be too.  *-*

First off I would like to say Thank You to
my good friend Angie at A 'lil Country Sugar
who bestowed this special award to me.
Angie has a great blog and is one of the most creative gals
I know....she amazes me with her own ideas & creations.
Please take some time to visit her, and let her know I sent you over.
I just know you will find some mouth-watering dishes there.

The rules that adhere to this award are:
1. Thank the person who nominated you and link them back.
2. Share a little bit about why you started blogging.
3. Copy and Paste the award onto your own blog.
4. Nominate up to 10 other bloggers you think are addictive
enough to deserve the award.

(Makin' my own rules here... because I totally understand how difficult it is to find time to pass it on...I would be honored if you simply received the award...pass it along if you can...it's up to you)

I began blogging at the urging of my daughter, Deb, who is a blogger herself. She still loves to tease me because she always reminds me that I kept telling her..."I'm not sure what I will blog about!"
I had NO clue what I was getting into...she did my set up for me and got me going.  It took me about a year to really get the feel of it, but now...as I've already confessed to you...I am addicted.  Oh how I love being able to share the great dishes we enjoy, and to help expand the ideas for others - whether you're a rookie or are well seasoned -  in the kitchen.

There are many wonderful bloggers out there...I sure am thankful for the friendships we build as sisters of the foodie world as we leave comments and email each other.

I'm passing this award to:

Three Bean Turkey Chili {Crockpot}

This is an easy and healthy recipe I saw from Kraft.

It's delicious and I hope you try it soon.

It's wonderful with crackers or cornbread...or cornbread salad.  MMM!

I was in a rush when I made it on top of the stove, but it's great to throw in the crockpot and let cook during the day too.

THREE BEAN TURKEY CHILI

1/2 lb. ground turkey
1 - 28 ozs. can diced tomatoes, undrained
1 - 16 ozs. jar chunky salsa
1 - 15 ozs. can black beans, rinsed
1 - 15 ozs. can kidney beans, rinsed
1 - 15 ozs. can great northern beans, rinsed
1 tsp. chili powder
1 tsp. ground cumin
1 pkg. (7 ozs) 2% milk shredded cheddar cheese
ritz crackers

Cook turkey in large saucepan on medium-high heat 10 minutes or until no longer pink, stirring occasionally.

Add to slow cooker with all remaining ingredients except cheese and crackers; stir.

Cover with lid.  Cook on high 2 - 3 hours (or low for 4 - 5 hours).

Spoon into bowls; top with cheese. Serve with crackers.

Easy Old-Fashioned Green Beans

This is my most favorite way to enjoy fresh (or frozen) green beans!

Oh so yummy! Definitely one irresistible side dish!

And let's don't forget easy!

I think bacon makes everything taste better.

The 2 of us filled our plates and shared one whole batch of these in one sitting.

Bacon-y and sweet! Your kids will ask for MORE.

If you really want to, you could use turkey bacon, but the 'real stuff' makes these over-the-top wonderful!

OLD-FASHIONED GREEN BEANS

6 bacon strips, cut into 1/2" pieces
1/2 medium onion, chopped
2 lbs. fresh green beans, cleaned
2 Tb. brown sugar
(I reduced it from 3 Tb.)
2/3 c. water

In large skillet, cook bacon about 5 minutes over medium heat until crisp-tender, adding onion about halfway through browning. Add beans, brown sugar and water. Stir gently; bring to a boil. Reduce heat; cover and simmer for about 15 minutes or until beans are crisp-tender.  Remove to a serving bowl with a slotted spoon.

Yield: about 6 servings
