Only 4 simple ingredients...dip them in syrup...they taste just like a pancake.
They can be made ahead also. 

Easy Mini Pancake Muffins




This simple 2-ingredient treat can be made by the kids with some supervision.
Such a special treat and the kids will love unwrapping and placing the pb cups on top of the cookies!

Strawberry Soup with Angel Food Cake Croutons



Oh what a fabulous, easy dish to serve those you love for Valentine's Day!

This is a cold soup - whirred in the blender - topped with toasted angel food cake croutons. 

Sweet and sassy! Impressive too!

I served it to a group of ladies at church and they loved it. 

One of the 4 ingredients is Greek yogurt - if you don't care for it, or can't eat it, just omit it. It will still be good.

I love that this uses frozen (partially thawed) strawberries and can be made a few days ahead of time. 

If your mind works like mine....this is an easy recipe to memorize.  Each item added is half the amount (about) as the ingredient before! *-*

STRAWBERRY SOUP 

2 c. partially thawed unsweetened strawberries
1 c. vanilla yogurt
1/2 c. orange juice
3 Tb. honey (or sugar substitute - like xylitol)
1/2 tsp. vanilla 

strawberry slices for garnish 
(along with croutons) 

Add strawberries, yogurt, orange juice, honey and vanilla to the blender; blend until smooth....about a minute.  Refrigerate; keeps for several days. Serve cold topped with sliced strawberries and croutons. 



ANGEL FOOD CAKE CROUTONS

1 8 - 9" angel food cake, sliced 

Preheat oven to 350. Cut angel food cake slices in 1" X 1" cubes. Place on a cookie sheet. Bake about 10 minutes, stirring about halfway, until lightly toasted and browned. Allow to cool. Store in sealed container until ready to use. 

If you really want to dress it up, drizzle soup with chocolate!

Pineapple Angel Food Cake {2 ingredients}



This is as easy as it gets Gang!

I know it's hard to believe this is really a recipe, but trust me it is.  It's another yummy recipe from my cookbook. AND it's a healthier option - NO FAT!

The first time one of my friends at church tried it, she was pretty curious...thinking it couldn't possibly 'work', but then it did, and now she makes it to serve guests in her home.

Just mix and bake - start heading to the kitchen now cause you're gonna want this for dinner tonight!

PINEAPPLE ANGEL FOOD CAKE 

1 - 16 ozs. box angel food cake mix
1 - 20 ozs. can crushed pineapple, undrained 

Preheat oven to 350. Place both ingredients in large bowl and stir with a wooden spoon until well blended.  Do not use a mixer; it will foam up. Pour into an ungreased 9" X 13" X 2" baking dish. Bake for 30 minutes.  Serve room temperature along with a dollop of whipped topping. 

EAT UP!!!!! 

(Update: One of my Facebook commenters recommends only a name brand cake mix...generic doesn't work for this recipe. Name brand is all I've ever used, so I'm glad to know this and wanted to share with you)
