Guess you know by now, I'm pretty partial to this special lady and know I can always trust her family-friendly dishes.
This is such a hearty one-dish meal...Tonya has dubbed it "Man Casserole" as it's one of her hubby's favorites. (Mine too!) With all these amazing flavors together, it's one Out of this World Dish!!
I adapted it somewhat...one thing I did was to use Greek yogurt instead of sour cream. Use whatever your family likes best.
With layers of ground beef, mushrooms, french fried onions, mushroom soup, and more...AND THEN...topped with biscuits, and an egg sauce...you can't go wrong!!!!!!!!!!
Serve with a salad or veggie and you're all set to enjoy a delightful meal!

BEEF STROGANOFF CASSEROLE
1 c. plain Greek yogurt (or sour cream), divided
2 (10.75 ozs) cans mushroom soup
(or 1 lg. family size)
2 lbs. ground beef
8 ozs. mushroom pieces & stems
2 garlic cloves, minced
garlic pepper or just salt & pepper
1 lg. (6 ozs) can french fried onions
1/2 tsp. salt
(I didn't add)
2 cans (8 count) buttermilk refrigerated biscuits
2 eggs
1 tsp. celery salt
Preheat oven to 375. Spray 9" X 13" baking dish with cooking spray.
In small saucepan, heat 1/2 c. Greek yogurt (or sour cream) and soup. Set aside.

In large skillet, brown burger, mushrooms and garlic, seasoning to taste. Mix with the yogurt/soup mixture and place in bottom of prepared pan. Top with ff onions. Flatten each biscuit, cutting in half (from top to bottom) and placing over top of casserole as if you were putting puzzle pieces together, overlapping a little as you try to seal them together.
(You may have a few biscuits left over - bake them separately for a snack or breakfast).

Combine remaining 1/2 c. Greek yogurt, eggs and celery salt. Pour over biscuits. Bake 25 - 30 minutes or until biscuits are brown and cooked through.
TIP: You want the meat portion to be hot when topping with the biscuits...otherwise you may end up with gooey biscuits underneath.
