Easy Blender Zucchini Cream Pie

After a friend brought over a big zucchini, I was excited to try this easy recipe.  I shared a couple of pieces with that friend who gave it to me, and she asked for the recipe!

You'll never know it has zucchini - and you can say 
'This pie is good for you!' haha 

It was easy enough to double the recipe to make 2 pies! I topped my pieces with Cool Whip but it's wonderful without
the added topping.  
I reduced the sugar amount just a bit and thought it was plenty sweet. 

It keeps well in the fridge for a few days, if it lasts that long!

EASY ZUCCHINI BLENDER CREAM PIE 

1 cup zucchini, peeled & cooked 
(I boiled it)
3/4 c. white sugar 
(I reduced from 1 c. in original recipe)
1 c. evaporated milk
2 Tb. all purpose flour
2 Tb. butter, melted
1 tsp. vanilla extract
1 large egg
1 9" unbaked pie shell 

Preheat oven to 425*. 

Peel, cook and drain zucchini.

Dump all ingredients (except pie crust) into a blender and mix well. 
(If making 2 pies, I suggest you make 2 separate batches as 2 will not fit into a smaller blender.)

Bake at 425* for 10 minutes; lower oven to bake at 350 for 20 minutes more. 

Will be just a bit jiggly in the center when it's done...it will set up when it cools.

Caramel Pumpkin Pie Smoothie (Ketose liquid all-natural Sweetener Product Review!)



I've been crazy over smoothies for years. 

And this time of year is perfect for using pumpkin to whip up something up in the blender!  This treat is great for breakfast, lunch or even a bedtime snack!

I was sent a bottle of this lovely Ketose liquid sweetener to create a recipe and this is where I 'landed'. 

This is a very tasty all-natural sweetener, but is somewhat sweeter than the honey we use in our evening tea. To me, it doesn't have an aftertaste at all and certainly sweetens things up nicely. 

From their label: KetoseSweet+ contains allulose - a rare natural sugar found in maple syrup, figs and raisins. It is a safe, low-calorie, low-glycemic sweetener...with just 5% of the calories of regular sugar...it doesn't affect blood sugar levels. 

It has NO Alcohol Sugars and is a Clean Sweetener.

I used this to sweeten our butternut squash for dinner and it tasted wonderful! 
Just be cautious when using as it is pretty sweet....

I have not used Splenda in years.  I find it causes a lot of intestinal upset. And it isn't natural!  Normally I use xylitol for sweetener when baking, since hubby is diabetic, and I am borderline.  I have already fallen in love with this wonderful product!!!! 

I mixed up this 'healthy' smoothie, but as always, I love all the options you can have when whipping up smoothies in the blender. 

I used unsweetened vanilla almond milk, but you could use 2% or even canned coconut milk if you prefer. 

I also used vanilla Greek yogurt, but if you find the seasonal Pumpkin Pie yogurt or even Caramel, go for it!  I'm sure those ingredients would only make the recipe 'pop'.  (And you could add less sweetener because they do have sugar in them). 

I used a half teaspoon of vanilla extract, and half a teaspoon of caramel extract.  You can certainly adjust those to your liking also...using all of one or the other. 

I love quick and easy...you can be sipping this one down within minutes of deciding to make it!  You sure can't go wrong with that.  Even sip it on your way to work or school if need be!

This makes one large, serving or 2 smaller ones.  It is very filling and I've enjoyed it a few times already since creating it.  Recipe can be easily cut in half or doubled if desired.

CARAMEL PUMPKIN PIE SMOOTHIE

2/3 c. milk 
(almond or coconut, your choice)
1/4 c. pumpkin puree
1/4 c. unsweetened (Greek)(or vanilla, caramel or pumpkin) yogurt
 1 banana, sliced and frozen
1/2 tsp. vanilla extract
1/2 tsp. caramel extract
(or a full teaspoon of either kind) 
2 - 3 tsp. Ketose Sweet liquid, adjusting to taste
1/2 tsp. pumpkin pie seasoning (or cinnamon if you prefer)

4 or 5 ice cubes
whipped cream and pumpkin pie spice for garnishing

Combine milk, pumpkin, yogurt, banana, extract, sweetener, and pumpkin pie seasoning in blender.  Whir for about 30 seconds.  Add ice cubes and whir another 30 seconds.  (Add more liquid now if you prefer). Pour into a tall glass or divide into 2 servings.  Top with whipped cream and sprinkle with seasoning.

Strawberry Soup with Angel Food Cake Croutons



Oh what a fabulous, easy dish to serve those you love for Valentine's Day!

This is a cold soup - whirred in the blender - topped with toasted angel food cake croutons. 

Sweet and sassy! Impressive too!

I served it to a group of ladies at church and they loved it. 

One of the 4 ingredients is Greek yogurt - if you don't care for it, or can't eat it, just omit it. It will still be good.

I love that this uses frozen (partially thawed) strawberries and can be made a few days ahead of time. 

If your mind works like mine....this is an easy recipe to memorize.  Each item added is half the amount (about) as the ingredient before! *-*

STRAWBERRY SOUP 

2 c. partially thawed unsweetened strawberries
1 c. vanilla yogurt
1/2 c. orange juice
3 Tb. honey (or sugar substitute - like xylitol)
1/2 tsp. vanilla 

strawberry slices for garnish 
(along with croutons) 

Add strawberries, yogurt, orange juice, honey and vanilla to the blender; blend until smooth....about a minute.  Refrigerate; keeps for several days. Serve cold topped with sliced strawberries and croutons. 



ANGEL FOOD CAKE CROUTONS

1 8 - 9" angel food cake, sliced 

Preheat oven to 350. Cut angel food cake slices in 1" X 1" cubes. Place on a cookie sheet. Bake about 10 minutes, stirring about halfway, until lightly toasted and browned. Allow to cool. Store in sealed container until ready to use. 

If you really want to dress it up, drizzle soup with chocolate!

Copycat Strawberry Julius

It's August...and it's hot outside.  What do you do to cool down? 

I love copycat recipes...and I sure do love my Orange and Strawberry Julius.  But do we know for sure if they are truly a COPYCAT???  It really doesn't matter to me...as long as it tastes good.  

I adapted a recipe I found for a Copycat at Sweet as a Cookie. I love being able to use a sugar substitute in recipes like this one....and I normally reduce the amount of ice so I can easily sip it through a straw...and not constantly get brain freeze!

Hope you enjoy this tasty, and cooling treat. 

NOW GO CHILL! 


COPYCAT STRAWBERRY JULIUS

1 c. frozen sliced strawberries, slightly thawed
1/2 c. cold water
1/2 c. cold milk
1/4 c. white sugar
(I love using equal amounts of xylitol 
or 3 - 4  pkts. stevia)
1 tsp. vanilla (important!)
1 c. crushed ice 

Add all ingredients to a blender; process on high until smooth, about a minute. Add more water for perfect consistency if needed. 

Serves 2 - enjoy right away!

Tangerine Paradise Punch (w/essential oils)

I'm SO glad I tried this recipe I recently saw on the AromaTools website, using doTerra essential oils to add an extra kick to this awesome recipe! 

Summer's not over yet...we still have time to 'chill' with refreshing drinks like this healthy one. 

I used sugar free lemonade (a naturally sweetened mix like Crystal Lite),
50/50 reduced sugar orange juice, and frozen mixed fruit. 
I had a mixture of pineapple, peaches, mangoes and strawberries. 

Use any fruit combo you'd like.


My hubby and I both raved about how refreshing this simple drink is. 
And you don't need ice because the fruit, blended in the blender, makes
it very cold and tantalizing. 

This would be so special to serve to girlfriends who have come for a visit or just as a special treat to serve your family.

We thought 3 drops of the tangerine essential oil made this perfect, but

TANGERINE PARADISE PUNCH 

1 qt. ready-made lemonade 
(I used sugar free naturally sweetened mix, like Crystal Lite)
3 drops doTERRA Tangerine essential oil 
1 c. orange juice 
2 c. frozen fruit 
(I used peaches, mangoes, pineapple and strawberries) 


Put all ingredients in a blender. Blend until fairly smooth.

Pour juice into pitcher/cup. Serve and enjoy!

Parlor Coffee Float

What a simple 'jazzed up' coffee drink!  Perfect for pampering yourself.

After seeing this recipe in our local newspaper, I knew I had to try it. 

Sit down, put your feet up and enjoy sipping this delightful beverage. 

Smooth, creamy and sweet - just how I prefer my coffee!! 

Made with simple ingredients you may already have on hand...
Coffee...ice cream...chocolate syrup...half and half...

Top with whipped cream and a cherry if you want to go 'all out'.

PARLOR COFFEE FLOAT

Serves 2

1 1/2 c. strong brewed coffee, chilled
1/4 c. chocolate syrup
1/4 c. half-and-half
1 c. chocolate or coffee ice cream
Whipped cream, to serve
Maraschino cherries (optional) 


In a blender, combine the coffee, chocolate syrup, half-and-half and 1/2 of the ice cream. Blend until smooth and frothy. Pour into 2 tall glasses and top with a scoop of the remaining ice cream. Top with whipped cream and a cherry, if desired.


Nutrition information per serving: 301 calories; 112 calories from fat (37 percent of total calories); 12 g fat (8 g saturated; 0 g trans fats); 35 mg cholesterol; 43 g carbohydrate; 4 g protein; 4 g fiber; 107 mg sodium.

Chocolate Peanut Butter Banana Protein Smoothie


This is a simple and tasty smoothie with protein...I added it to my Smoothie Pinterest Board from Cooking Classy.

I adapted it just a little, and used my unsweetened protein powder, instead of baking cocoa to make it chocolate. I always have frozen banana slices on hand for these kinds of treats. I also used fewer ice cubes. 

It's creamy, delicious and filling.  This makes 2 servings.

CHOCOLATE PEANUT BUTTER BANANA PROTEIN SMOOTHIE

  • 2 lg. overripe bananas, sliced and frozen
  • 1 c. almond (or coconut) milk (or more if desired for consistency)
  • 1/4 (heaping) c. (natural) creamy peanut butter
  • 2 Tb. unsweetened protein powder
  • (or baking cocoa)
  • 1/2 tsp. vanilla extract
  • 4 - 5 ice cubes

Yield: 2 servings

  • Add all ingredients to a blender and process until well pureed. Serve immediately.

Banana Cream Pie Overnight Oatmeal Smoothie (Healthy)

If you've been with me very long, you know I'm a lover of smoothies...
and oatmeal...and make ahead dishes.

So when I saw this lovely intriguing recipe at Running with Spoons I just HAD to try it...

I often add oatmeal to my smoothies to help keep me feeling full, and I also loved the idea of soaking the
oatmeal overnight, so I added a tsp. of chia seeds too, as I often add them, but soak them for a few minutes first.  

I also added a little more cinnamon for my own personal taste...



This idea of prepping most of the ingredients before bedtime was a great invitation to me to try it.

I always have frozen banana slices on hand and love using almond milk (30 calories per cup of unsweetened!), so....away we went.

I really really enjoyed this, but did add more almond milk as it was too thick for me. Hubby prefers smoothies with fruit so this was not his favorite...but to each their own, right?

It's smooth, filling and very tasty...and good for you too.

BANANA CREAM PIE OVERNIGHT OATMEAL SMOOTHIE

1-1/2 - 2 lg. bananas, sliced & frozen**
(**TIP below)
3/4 - 1 c. (unsweetened) almond milk
1/3 c. rolled oats
1 Tb. natural almond or peanut butter
1/2 tsp. vanilla
pinch salt
1/4 tsp. cinnamon
1 tsp. chia seeds

Add all ingredients EXCEPT bananas to blender; cover & refrigerate overnight. 
In the morning, add the bananas, and blend until smooth for a frosty
creamy, tasty and healthy drink. 

**(When I have very ripe bananas, I cut them into slices on top of a piece of waxed paper on a plate or cookie sheet, spritzed with a little non-stick cooking spray.  Freeze until firm; place in freezer bags.  They won't stick together and you can add as many, or few, as you'd like.)

Cran-Razz Banana Protein Smoothie

I'm excited to share this post with you.  I decided to take part in the Chobani
challenge to see what you can create with leftovers....

We have plans to spend the winter in Florida so I have been trying to use up much of what I have in the freezer and pantry. 

Since I had some cranberries, banana slices and a few raspberries in the freezer, I decided to add some Chobani Greek Yogurt and make a tasty smoothie. I also added a little cottage cheese for added creaminess and protein.


M-M-M-M Good!
Oh how I love the creamy texture of Chobani Greek Yogurt!! It's very delicious and they have so many varieties to try. 

I also love that Chobani Greek Yogurt has NO articificial flavors or sweeteners, and NO preservatives!  It also has THREE kinds of probiotics and at least 11 grams of protein. 

YAY Baby!  Bring it on!!!

Here's the basic ingredients I used to make this luscious smoothie.

CRAN-RAZZ BANANA PROTEIN SMOOTHIE 

1/2 c. cranberries, fresh or frozen, partially thawed
1/2 c. partially frozen raspberries
1/2 - 1 banana 
(I keep slices frozen on hand)
1/2 c. coconut milk
(use almond or 2%)
1/2 c. water
1 (6 ozs) container CHOBANI strawberry/banana Greek yogurt
1/4 c. cottage cheese
(it gets obliterated in the blender) 
2 - 3 pkts. Stevia or Truvia
(or could use a big squirt of honey) 

Place all ingredients in the blender. Cover; blend until smooth and frothy. 
Add ice cubes or more liquid to make it the consistency you want. 

Yield: about 2 servings
