Cheesey Slow Cooker Stuffed Bell Peppers (Freezer Friendly Link)

I have never cared for green peppers, so we don't eat them often, but after someone gave us a few recently, I wanted to make stuffed peppers since hubby likes them...a lot.

I was so tickled to find this recipe at The Recipe Critic...but I adapted it some, and hubby just loved them.  I ate the filling by itself and it was pretty tasty I'd have to say. 

The recipe called for wild rice...all I had was some basmati, so I cooked it in some of the tomato juice from the salsa (I substituted for canned tomatoes), but jazzed the recipe up in other ways. I also added some hot sauce...which hubby loves, so you can certainly adjust that to your own liking. 

She used raw ground beef...I browned and drained mine before stuffing peppers. 

You could add taco seasoning if you wanted to put a Mexican twist on this dish. 

After I made this special dish, and before I typed up the post, I happened upon this awesome idea for Freezer Friendly Slow Cooker Sausage Stuffed Peppers

I ran to the store at the last minute and bought 1 red pepper so I could fill my crockpot. I think the cheesey topping made extra tasty. 




CHEESEY SLOW COOKER STUFFED BELL PEPPERS 

  • 6 medium to large bell peppers
  • 1 # lean ground beef, lightly browned, drained
  • 1/2 c. onion, chopped
  • (It's OK to add add onion to beef while browning) 
  • 1-1/4 c. mild (or hot) salsa, undrained 
  • (or 1 - 14 ozs. can diced tomatoes)
  • 1 cup wild rice, cooked (any kind of rice is fine)
  • 2 Tb. worchestershire sauce
  • 1 tsp. salt
  • 1 tsp. pepper
  • (I used garlic pepper - we liked more)
  • 1-1/4 c. shredded cheese, divided
  • 1/4 c. water

Cut off each top of the peppers and scrape out the seeds and membranes. After I cut out the seeds with a knife, I scraped the inside clean with a spoon - it worked great). Set aside.

Combine ground beef, onion, salsa (or tomatoes), rice, worchestershire sauce, salt, pepper, and 1 cup of cheese. Stuff each pepper with mixture. Place in bottom of crockpot. (You can crowd them a little because they get smaller as they cook). Add water to bottom of crockpot...it will help steam and soften the peppers. 

Cook on low for about 5-6 hours or high for 3 hours until peppers are tender.
(The sides of peppers tends to burn on high...I suggest using low)

About 15 minutes before serving, sprinkle remaining cheese; enjoy when cheese is melted.

Crockpot Family-Favorite Chili

Thank you Betty Crocker for this tasty chili. 

I had already thawed 2# of burger, not knowing what I'd do with it.  Then...

We had a cold and rainy day and it was the perfect time to cook up some chili.  We like chili even when it's warm outside, but that hasn't happened in these parts just yet! 

I googled crockpot chili and here's what I landed on...hope you enjoy too.

I tweaked it just a bit by using part salsa for the tomato sauce. I was out of chili powder, so I used a chili seasoning mix packet, so use whatever suits your fancy to season this hearty dish. 


CROCKPOT FAMILY-FAVORITE CHILI 

2# lean (at least 80%) ground beef
1 large onion, chopped (about 1 cup)
2 cloves garlic, finely chopped
1 (28 ozs) can diced tomatoes, undrained
1 (16 ozs) can chili beans in sauce, undrained
1 (8 ozs) can zesty tomato sauce
1 c. favorite salsa 
(Or just use 15 ozs. tomato sauce and no salsa)
2 Tb. chili powder
1-1/2 tsp. ground cumin
1/2 tsp. salt & pepper, each 
(I used chili seasoning packet and eliminated these spices) 


In large skillet, brown beef and onion; drain.

In 3 - 4 qt. slow cooker, mix beef, onion and remaining ingredients.



Set your slow cooker on low for 6 - 8 hours...or high for 3 - 4.

Happy Cinco de Mayo! Chicken Quesadillas

I don't always celebrate this special holiday, but I'm always ready to
celebrate my favorite ethnic food - Mexican!  OLE!

I did take a couple of years of Spanish in high school.

You know how easily we lose things when we don't use them, right?...so I really don't remember much.

But I don't have to speak Spanish in order to enjoy eating it, right?

Hubby and I enjoy Chicken Quesadillas often and anytime I share this recipe, it seems it becomes a favorite for others as well.

OK - so here's another cream cheese recipe!

If you haven't figured it out already, cream cheese is my favorite product...so put that in my favorite ethnic food and I'm ready for a party...and probably a siesta after that.  *-*

If you don't care for cream cheese, I feel sorry for you...

I just can't help myself.  I loooove the creaminess and taste!

I use it in sooo many recipes.

This is definitely a very favorite dish!

Since I first tried this amazingly simple recipe, I've not looked back, and we just keep enjoying them every time I make them.

There aren't very many repeated dishes in my kitchen, but this is definitely one that is.



These are really very easy to put together...

I mix - by hand - equal parts of cream cheese and salsa.

After I cook the chicken and dice it, I add the chicken to the cc/salsa mixture, then place the ingredients inside a tortilla (we like whole wheat), add grated cheese and onions and some black beans if you want...

then use my foreman grill to cook them quickly.


OH YUM!!!  Or should I say...MUY BIEN!! 

Here's a basic recipe to try...add more cream cheese or salsa to your liking.

Quick & Easy CHICKEN QUESADILLAS
(From The Better Baker)

1 8 ozs. pkg. cream cheese, softened
3/4 - 1 c. salsa
3 c. cooked chicken, chopped
1 - 2 c. (mexican) shredded cheese (I used 2%)
1/2 med. onion, chopped
soft flour tortillas
black beans, sliced black olives, optional

Mix cream cheese and salsa until blended. Stir in chicken by hand.  To prepare quesadillas, spread chicken mixture over half of the tortilla, sprinkling with cheese and onion. Fold tortilla in half; heat until cheese is melted; serve with sour cream, if desired, and enjoy. Sprinkle beans or olives over cheese before heating.

I do love to use my foreman grill for ease in this recipe, but the tortillas can also be heated on both sides in a skillet.

Kielbasa and Red Beans from halfmysize.com

I had this cookbook laying open on my cupboard, so I would have a reminder to make the casserole recipe on this same page.

It was lunchtime and I didn't have any leftovers when I saw this recipe...just tempting me to try it.

So I threw it together and we really enjoyed it.



Reminded me of the time we enjoyed chili over rice while on the beach in Hawaii 28 years ago this week - when we celebrated our 15th wedding anniversary.

I appreciate that this cookbook gives nutritional info so you can fit it into the eating plan you're trying to follow.

Hope you'll enjoy it one day soon - we think it's delicious and will enjoy this simple dish again soon.

I used peach salsa and brown rice, because that's what I had on hand, but of course, you have that option to use what YOU have....

KIELBASA AND RED BEANS

1 - 14 ozs. pkg. smoked turkey sausage, sliced into 1/2" pieces
nonstick cooking spray
1 sm. onion, sliced or chopped
1 clove garlic, minced
1 - 15 ozs. can kidney beans, drained
1 c. salsa
(the peach salsa worked its 'magic' in this dish)
Salt, black pepper, red pepper flakes to taste
Dash of hot sauce, optional

Spray medium saucepan with nonstick cooking spray.  Saute garlic and onions about 2 minutes, until softened but not mushy.  Add smoked sausage; stir and cook sausage for 2 minutes.  Add beans, salsa, spices and hot sauce.  Just before it boils, lower heat;cover and simmer for about 25 minutes.  Serve over rice, if desired.  Serves 4

I didn't add salt or pepper while cooking, but added fresh ground pepper to the top when serving.

Nutritional info per serving: (doesn't include rice) Calories: 257; Fat: 5.3 gr., Fiber 4.3 gr.
