Cowboy Chili (& Sweet Cornbread Muffins)

Everyone needs a great chili recipe.  This is sure to be a hit. 

I revised a recipe found in our Walmart flyer.  It's thick and very tasty. 

And pretty simple to make. I'm sure it's named because it's hardy enough to satisfy some hard-workin' cowboys! 


COWBOY CHILI 

2 lbs. ground turkey (or lean ground beef)
1 large onion, chopped (about 1 cup) 
2 Tb. chili powder
1/2 tsp. ground cumin
1 or 2 (15 ozs) can petite diced tomatoes, undrained
3-1/2 c. V8 or tomato juice 
2 garlic cloves, minced 
1 small green (or red) pepper, chopped, optional
2 cans (15 ozs. each) red kidney beans, rinsed and drained
fresh ground pepper and shredded cheese for garnish

In large saucepan, cook the turkey, onion, chili powder and cumin over medium high heat, until turkey is cooked thoroughly, stirring often (drain grease if necessary). Add tomatoes, tomato juice, garlic, chopped pepper and kidney beans to sauce pan; bring to boil. Reduce heat to low. Cover and cook for 15 minutes or until vegetables are tender. 

Serve topped with pepper and cheese. 

Yield: 6 - 8 servings 

This easy recipe for Sweet Cornbread Muffins would go great served with this chili.  The muffins are made from a Jiffy cake mix and a cornbread mix.

Three Bean Turkey Chili {Crockpot}

This is an easy and healthy recipe I saw from Kraft. 

It's delicious and I hope you try it soon.

It's wonderful with crackers or cornbread...or cornbread salad.  MMM! 

I was in a rush when I made it on top of the stove, but it's great to throw in the crockpot and let cook during the day too. 



THREE BEAN TURKEY CHILI 

1/2 lb. ground turkey
1 - 28 ozs. can diced tomatoes, undrained
1 - 16 ozs. jar chunky salsa
1 - 15 ozs. can black beans, rinsed
1 - 15 ozs. can kidney beans, rinsed
1 - 15 ozs. can great northern beans, rinsed
1 tsp. chili powder
1 tsp. ground cumin
1 pkg. (7 ozs) 2% milk shredded cheddar cheese
ritz crackers

Cook turkey in large saucepan on medium-high heat 10 minutes or until no longer pink, stirring occasionally. 

Add to slow cooker with all remaining ingredients except cheese and crackers; stir.

Cover with lid.  Cook on high 2 - 3 hours (or low for 4 - 5 hours).

Spoon into bowls; top with cheese. Serve with crackers.

Mini Meat Loaves from Make Ahead Meals for Busy Moms Cookbook

OK - try saying that 3 times in a row huh?  All I can say is...MMMMM!  *-*

Meatloaf is one of my all-time favorite meals and I guarantee this one is tasty! I recently made this recipe while at my daughter Deb's and the house smelled divine while they baked in the oven.

Actually, I made meatballs and browned them in the oven. After they cooled, I put them in the freezer for Deb to make something later.  They tasted divine!

The author of this great cookbook, Jane Doiron, has become a special email buddy. She has done much to help me get things set up at Facebook and my blog, to spur more traffic. She's a busy school teacher, mom & wife. I certainly appreciate her sharing her expertise with me.
