Hulless Caramel Corn Puffs

These puffs are awesome just plain, but dressing them up with caramel makes for an amazing treat!

These were a fast seller at my last bake sale! 

Those annoying 'hulls' are missing in this terrific snack!

CARAMEL CORN PUFFS



1/2 c. corn syrup (or honey)
2 c. brown sugar
(I use 1-1/2 c.)
1 c. butter or margarine (2 sticks)
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking soda
2 bags (6 ozs. each) hulless puffed popcorn 



Preheat oven to 225*.  Pour corn puffs into a VERY large bowl.  (Recipe can easily be divided in half). 

Combine corn syrup, brown sugar, butter, vanilla and salt in saucepan.  Bring to a boil over medium high heat; boil and stir for 5 minutes.  Remove from heat; stir in baking soda; stir well.  Pour over popcorn and mix well.  Put on 2 cookie sheets; bake for 1 hour, stirring occasionally.  Cool. Store in tightly sealed container. 

Yield: 10 - 12 servings

Holiday (Peppermint) Popcorn Crunch Mix (Easy - Last Minute!)


I am almost giddy over this delicious concoction! 

You might want to call it a "Clean out the Pantry" treat! 

This very simple treat uses microwave popcorn as its base!

As we prepare to head to Florida next week, I had some things on hand I wanted to use up before we go.  I'm thrilled to say I was able to use the last of SEVEN ingredients and gave away bags of this tasty snack at church.

Almond bark..
Microwave Popcorn...
Pretzels..
M & M's...
Ghiradelli Peppermint Chunks in a bag...
leftover crushed candy canes
Sprinkles...

It tastes great!  And is not nearly as sweet as a lot of the other 'goodies' I made last week.  And it's pretty too!!!


I have said for a long time...RECIPES ARE GUIDELINES.  You don't ever have to follow it exactly...sometimes it's fun to do your own thing!

Use up what you have on hand and enjoy this treat that has many options to it!

Peanuts, or any kind of nut, would be a great addition! Maybe even some cereal! 

When I made a second batch, I used part peppermint chunks for the almond bark.

I also used the penguin bags for the Peppermint Version so I could tell the difference. 
(This is what I used...not the 'crunch' mixture...these melt nicely..
and it only gives a light peppermint flavor)

Have fun with this one!  Folks appreciate receiving something homemade from your kitchen..and I am very pleased with the end result of this 'experiment'. 


HOLIDAY (PEPPERMINT) POPCORN CRUNCH MIX 

*2 bags microwave popcorn 
(lite butter is ok)
*3 - 4 c. pretzels 
*12 ozs. white almond bark (or candy melts)
(or use Ghiradelli peppermint baking chunks for part of almond bark) 
*2 hands-full peanut M & M's
*crushed candy canes, optional
*holiday sprinkles, optional 

Cover 2 cookie sheets (with sides) with waxed paper; set aside. 

Pop the popcorn according to package directions; pour into an extra large bowl and be sure to remove any kernels that didn't pop. Mix in the pretzels. 

Melt almond bark in microwave according to directions. Pour over the popcorn mixture, stirring to coat, then add M & M's and continue to mix until everything is coated. Stir in sprinkles or add over top of mixture once you've spread it over the cookie sheet. 

(For the peppermint version, I sprinkled crushed candy canes over the top at the end)

Allow to dry (it doesn't take long!); break apart and place into decorated bags to give as gifts.

Gluten Free No Bake Chex Snack Bars

It seems there are more and more folks in the world who have to eaten gluten free. I feel bad for them because I know it can be a real challenge.

We have a teenage granddaughter who is gluten free.  If she eats something with gluten, her stomach gets upset.  WAAHH! =(  

I recently served refreshments at a Ladies Day at my church, and we needed to furnish GF foods, so this was what I fixed for 'dessert' for those ladies. 

I got some great comments and know I'll be making them again. They're delicious and even those who don't have to eat GF will enjoy these! 

They're easy and keep well for a few days.  I tweaked the easy recipe found



GLUTEN FREE NO BAKE CHEX SNACK BARS 

2 c. gluten free pretzel sticks, broken into small pieces
1 c. gluten free Corn Chex cereal
2 c. gluten free popcorn 
(I used the Original Skinny Pop
1/2 c. unsalted butter
1/3 c. natural creamy peanut butter
5 c. (10 ozs. bag) mini marshmallows
1/2 c. peanut butter M & M's 

Line a 9" X 13" baking pan with aluminum foil (nonstick is easiest to use), allowing about 2" to hang over the end or side. If not using non-stick, spray with non-stick cooking spray; set aside. 

In large bowl, combine pretzels, cereal and popcorn; set aside. 

In large pan over low heat, melt the butter and peanut butter. Stir in marshmallows and stir constantly until marshmallows are melted and mixture is smooth.  Pour over cereal mixture; stir until cereal mixture is covered.  Add half the M & M's and stir, then spread evenly into the pan. Gently press down on the mixture (I like to spray the back of my large metal spatula), but not too hard.  Let cool. Cut into 16 or 20 pieces, storing at room temp for 2 or 3 days...
if they last that long!!

3 Fun Easter Treats {Blast from the Past}

A sweet and salty mixture of peanuts, pretzels, popcorn and candy...covered with white chocolate.  Delicious and easy. 



Use goldfish (or whales) crackers....reese's pieces....or orange jelly beans to make these fun shaped treats...




Made with crushed mini wheats cereal and coconut...covered with chocolate and shaped into a bowl.  A fun conversation-stirring centerpiece.

Bunny Munch Mix

I am always inspired by the awesome recipes Tina shares at 
Mommy's Kitchen.

I so love quick and simple recipes like this one, but decided to adapt her recipe...
by adding pretzels & peanuts to make it more like my White Christmas Mix. 

How can you possibly go wrong having a sweet & salty dish for everyone to nibble on, in between chocolate eggs?  {wink}

This is basically a guideline - you can add or subtract anything you'd like...but if you just stick close to having 6 - 7 cups of 'filler' to the white chocolate, it should be just fine. 

This recipe is what I used...be sure to check out Tina's recipe at the link above for an simpler popcorn dish.



BUNNY MUNCH MIX 

4 c. popped popcorn, kernels removed
(a 1 - 3 oz. bag microwave popcorn = about 6 c. popped corn)
1 (6 ozs) box Baker's White Chocolate Baking Bars OR
6 ozs. white chocolate chips 
1 c. salted peanuts
1-1/2 c. pretzel sticks
Easter M & M's, plain or peanut


Place popcorn in large bowl; add peanuts and pretzels; mix. Set aside.

In small bowl, melt white chocolate according to directions, being sure to heat over low so it doesn't burn. When melted and smooth, pour over popcorn mixture, mixing well to coat all the popcorn/cereal mix. Can add M & M's now or when the popcorn mixture has dried.

Spread on waxed paper. Break into pieces when dry. Place in holiday bowl to serve or bag into individual treat bags.

Candy Corn Popcorn (3 Ingredients! - Microwave)




This is such great stuff!  My recipe-loving friend, Sandy, gave me the recipe.  

I had talked to her on the phone, needing to stop by her house to drop off something I had borrowed, and before I got there, she had made me a batch of this yummy treat.

It only takes 5 minutes...from start to finish...and you're ready to enjoy it.
Honestly! 

I love the ease of making it in the microwave!!!

I made it twice in two days, and now I need to go stock up on candy corn before the season ends. I made this with a bag of candy I just pulled out of the freezer from last year!

I like adding peanuts, just for a little protein, and I do enjoy sweet and salty.
(Yes, if you add peanuts, that would be 4 ingredients!) 
 
Don't use popcorn with butter,
I guess this 'sauce' won't stick to the popcorn. I use Kettle Korn, purchased at the Dollar store. I got 3 bags for $1!

I've seen another version that had added brown sugar, but this is plenty sweet just with the candy corn and butter. 

Enjoy it soon!!!!


CANDY CORN POPCORN

1 regular bag microwave popcorn, popped
1 c. candy corn
1/2 stick butter, chunked

Place popcorn in 9" X 13" pan; remove kernels. In medium microwavable bowl, place candy corn and butter. Heat 1 minute; stir until melted.  Pour over popcorn; stir.  Allow to stand a few minutes to set up. Chow down!

EZ Honey-Sweetened Cracker Jacks (4 ingredients)

I've been rooting around in my mom's old recipe file, and was tickled to come across this recipe.

It's easy to make and on the 'healthier side' too..using honey instead of sugar.

It tastes awesome too!

(You could always surprise your kids and place a 'prize' in the bottom of the bowl.=) 


E-Z HONEY SWEETENED CRACKER JACKS

1/2 c. butter (1 stick)
1/2 c. honey
3 qts. (12 c.) popped corn
(about 1/2 c. raw popcorn popped) 
1 c. peanuts, optional

Preheat oven to 350*. Lightly spray 2 large cookie sheets (with sides) with nonstick cooking spray. Place butter and honey into medium saucepan.  Heat, stirring occasionally, but do not boil.  Pour over popped corn & nuts; mix well.  Spread mixture over cookie sheet in a thin layer. 
Bake 10 - 15 minutes until crisp, stirring 2 or 3 times. 

Coating sets up as popcorn cools.
