Peanut Butter Honey Rice Krispy Cups


Oh how I do love quick and easy recipes! 

And this one has a healthy twist in that it uses honey instead of granulated sugar!

It was simply delicious and I'm sure I'll make it again and again. It uses ingredients I always have on hand too! 

These special treats can be DAIRY FREE (if you use vegan choc chips) and portioned in single servings!

Gotta LOVE that!  


 Be sure to try them soon - you'll be so glad you did! 

It's a great summer treat your family will love and you don't have to turn the oven on!

These lasted over 2 weeks in the refrigerator - I'm here alone and only had a few folks stop in to share them with.  *-*



PEANUT BUTTER HONEY RICE KRISPY CUPS 

1 c. crunchy or smooth peanut butter 
6 Tb. honey
1/8 tsp. salt
3 c. rice krispy cereal
1-1/2 c. chocolate chips 
(I used milk chocolate) 

Line a regular-size muffin pan with 12 liners; lightly spray with non-stick spray. 

Melt peanut butter, honey and salt together on low heat until well combined. Remove from heat.  (Don't boil!)

Stir in rice krispy cereal; mix well. 

Evenly divide mixture into the liners. 
(I pressed them in with the back of a soup spoon). 

Melt chocolate chips over low heat; stir until fully melted. Remove
from heat.  

Spoon melted chocolate over each treat, dividing evenly. 

Place in refrigerator until firm. 

Yield: 12 servings

Peanut Butter Honey Cereal Bites (Microwave!)


Can it even get better?

YES it can!

These tasty treats (not counting vanilla) are made in the microwave so they're fast!

And yeh....it only takes 3 ingredients to make them...

and with honey being one of those ingredients, they are a healthier choice! 

You're going to love these little snacks, and all the mouths you feed will love them too!  

They smell so great too.  

Use what kind of cereal you have on hand...lots of options here. 

Enjoy them for breakfast (they have sustaining protein!) or a quick snack to keep you full til your next meal. 

Plop them on a cookie sheet or into muffin liners. 




PEANUT BUTTER HONEY CEREAL BITES 

1/2 c. peanut butter
1/2 c. honey
1/2 tsp. vanilla extract
4 c. Cheerios (plain or Honey Sweetened) 

Line cookie sheet with parchment paper or line muffin tins with paper liners; set aside. 

In large microwave-safe bowl, add peanut butter and honey. 
Microwave on high for 1 minute; remove and stir until blended.
Microwave another 30 seconds (make sure it's boiling).
Add vanilla; stir well.  Add cereal and stir until evenly coated. 
Drop portions onto prepared pans. Allow to set. 

(You can also boil on stove top for 2 minutes over medium heat, stirring constantly)

Glazed Honey Spice Bars (No mixer needed)

I was so excited to find this tasty recipe at Pinterest (MY Pinterest boards)...originating from Jennifer Cooks blog.

So I ran (honestly, it was more of a brisk walk) to the kitchen to dig up
my old recipe of a similar treat that I haven't made in decades!


I guess it's one of those recipes that 'fell by the wayside' among all the new recipes I love trying. 

My 'original' recipe did not use honey, so I tried it this time, and added cloves
to the recipe, and just fell in love all over again. My hubby's cousin is a bee collector and he gives us quarts of local honey often, so I am well stocked!

(Did you know taking local honey is great to help you during allergy season?) 

I also used brown sugar instead of white. 

I love that you use 1 bowl and you don't even have to drag out the mixer! 

I could have easily eaten the whole panfull by myself..they are thin after all.  
*-*

Perfectly spiced and perfect with a cup of coffee or tea...or milk!

The glaze has an unusual ingredient...just a tad of salad dressing!
(Don't knock if til you've tried it...you won't even know!) 


My original recipe made an 8" X 8" pan of treats, and with only 2 of us in this house, I love being able to have a smaller portion 'anything', so that's what I made...

Recipe can easily be doubled, so get to the kitchen and whip these up today.
You won't be sorry! 

You can just as nicely roll them in powdered sugar while they're
warm instead of making the glaze.  They are fabulous either way!


GLAZED HONEY SPICE BARS 

6 Tb. vegetable oil (or melted butter) 
1/4 c. honey
6 Tb. brown sugar 
1 c. all purpose flour 
couple dashes of salt
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. cloves
1 egg, beaten
1/2 c. chopped pecans


Glaze: 

1/2 c. powdered sugar
1/4 tsp. vanilla extract
1/2 tsp. miracle whip salad dressing
1-1/2 tsp. water 

Preheat the oven to 350*. Spray 8" square pan with non-stick cooking spray; set aside. 

In medium bowl, combine all ingredients; whisking until blended. 

Pour into prepared pan; bake for 17 minutes, or until top bounces back when touched.  

When you remove from the oven, cool about 3 minutes, then press down on the bars with a metal spatula. (Gives it a different texture...I LOVE it!)

In a small bowl, whisk glaze ingredients and pour over bars, spreading
evenly.  You may want to roll them in powdered sugar (while warm) instead.

Strawberry Soup with Angel Food Cake Croutons



Oh what a fabulous, easy dish to serve those you love for Valentine's Day!

This is a cold soup - whirred in the blender - topped with toasted angel food cake croutons. 

Sweet and sassy! Impressive too!

I served it to a group of ladies at church and they loved it. 

One of the 4 ingredients is Greek yogurt - if you don't care for it, or can't eat it, just omit it. It will still be good.

I love that this uses frozen (partially thawed) strawberries and can be made a few days ahead of time. 

If your mind works like mine....this is an easy recipe to memorize.  Each item added is half the amount (about) as the ingredient before! *-*

STRAWBERRY SOUP 

2 c. partially thawed unsweetened strawberries
1 c. vanilla yogurt
1/2 c. orange juice
3 Tb. honey (or sugar substitute - like xylitol)
1/2 tsp. vanilla 

strawberry slices for garnish 
(along with croutons) 

Add strawberries, yogurt, orange juice, honey and vanilla to the blender; blend until smooth....about a minute.  Refrigerate; keeps for several days. Serve cold topped with sliced strawberries and croutons. 



ANGEL FOOD CAKE CROUTONS

1 8 - 9" angel food cake, sliced 

Preheat oven to 350. Cut angel food cake slices in 1" X 1" cubes. Place on a cookie sheet. Bake about 10 minutes, stirring about halfway, until lightly toasted and browned. Allow to cool. Store in sealed container until ready to use. 

If you really want to dress it up, drizzle soup with chocolate!

Cafeteria Peanut Butter Balls

I finally got around to making this simple no bake 'healthy' treat.

I've had this recipe for years and have many similar ones on my blog, but
I'm always up to trying ONE MORE. 

This is very tasty. I made it to take along to my grandkids before my visit, then realized IT HAS POWDERED MILK...and my grandson, Sam, is lactose intolerant.

UGH!

So I whipped up another batch for him minus the milk. You can just add more honey or oats to get the consistency you need to roll them.

The kids will love them in their lunches or for after school snacks...
everyone will love them for a bedtime snack too. 

Try them soon. I made half a batch and it yielded about 20 walnut-sized  balls.

CAFETERIA PEANUT BUTTER BALLS 

1 c. honey
1-1/4 c. natural creamy peanut butter
1-1/2 c. dry powdered milk
3 c. quick or old fashioned oatmeal, uncooked
1 - 2 Tb. wheat germ, optional
1 - 2 Tb. flax seed, optional
1/2 c. mini chocolate chips, optional
(or mini M & M's)

In large bowl, combine all ingredients (except choc chips) with a mixer until smooth. Roll into balls between hands; place on waxed paper lined cookie sheet; freeze about 15 minutes, or until firm. 

Remove from freezer and store in a large ziploc bag; keep in the refrigerator.  

Yield: 36 - 40 balls

Simple Baked Oatmeal (Healthy)

The BAKER family is quite the group of Bakers...imagine that?!

One of my dear sis-in-loves has started a page at Facebook for family members to share favorite recipes...especially those passed down from generations.

We have quite the collage of amazing dishes going on, and when I saw this easy oatmeal dish shared by a niece, Tobie, I knew it would be the first thing I tried.

I'm so glad I did too...this recipe has many options.  You can mix it up according to any special diets the family may have...

gluten free oats, coconut or almond milk, coconut sugar or honey...
I also added chopped apple and raisins...omit if you want.

Mix it up - pour it in a square pan or pie plate, bake ahead and reheat for the next day..or two. 

It's delicious! Since we eat a lot of oatmeal dishes, I love having some ready to enjoy when I get up in the morning. 

This recipe is simple. Do hope you'll give it a try. You can even bake the dough in regular muffin pans...for bite sized breakfasts!

SIMPLE BAKED OATMEAL


Preheat oven to 325 - grease deep pie plate or square baking dish; set aside. 
(If you prefer single servings, bake in 12 greased muffin tins).

In medium bowl combine:
2 c. quick cooking oatmeal
(I used old fashioned and let it soak up the milk for a few minutes before baking)
1-1/2 tsp. baking powder

1/2 tsp. salt



Mix together in large bowl:



1 c unsweetened coconut or almond milk (or regular milk)

2 eggs, beaten

1/2 c. (unsweetened) applesauce or unsweetened apple butter 

1/2 c. maple sugar or coconut sugar (or packed brown sugar)

(I used about 1/3 c. honey)

1 apple, peeled and chopped, optional
(or add a cup of berries)

1/2 c. raisins, optional



Combine both mixtures then pour into prepared dish.
Bake for 40 - 45 minutes. Serve warm with milk.

Awesome Home Remedy: Magic Cough Syrup

I have been down with a big bug...Super Bug I called it. I wasn't sure it was ever going to be gone, but after a couple of weeks, I've finally turned a corner and am feeling pretty close to normal again. 

I was on meds from the dr. but can't imagine how I ever would have gotten through this tough time without my oils...they helped bring much relief. 

This cough syrup really is 'Magic'....I've used it in the past and almost craved it this time of sickness.  It brings comfort and relief and I just have to share with  you. 

My ears were full and achey, my throat was sore and I had a deep cough.  This REALLY helped!


This is just one more way my blogging bud, Tonya Ferguson, has influenced me toward a healthier world for hubby and me. Tonya posted this recipe at her 
blog for Sweet & Spicy Magic Syrup over 2 years ago. 

Please be sure to click that link for more detailed info about the ingredients in this cough syrup for best results

Using natural on-hand products like cayenne pepper, organic vinegar, local honey, fresh ginger (I used my doTerra oil) and some water...I also added a couple drops of clove because it has qualities to 'open up' breathing problems. 

(I used crushed red pepper flakes instead of cayenne, so you wouldn't normally have the little 'chunks' in the syrup, but it worked fine for me). 

Yes, it has a 'bite' but I'm telling you it brought such comfort to me.  Tonya's children have used this syrup for years...and they know it helps!

WARNING: DO NOT GIVE TO CHILD UNDER 1 YEAR BECAUSE OF HONEY!

MAGIC COUGH SYRUP

1/4 tsp. cayenne

1/4 tsp. (fresh is best) ground ginger

(I used 2 drops Ginger essential oil) 
1 - 2 drops Clove essential oil, optional
(Clove assists in anti-bacterial & anti-fungal levels) 
1 Tb. raw, organic apple cider vinegar
2 Tb. warm water
2-3 Tb. local raw honey

  In a small, clean jar, dissolve cayenne and ginger in apple cider vinegar and water. Add honey and shake well.
  Take 1 - 2 Tablespoons, as needed, for cough or sore throat. Shake well each time.  Does not need to be refrigerated if using in a few days time.
 (I normally take in one batch in a day's time).
