Oven Baked Chili Dogs

CALLING ALL ADULTS & KIDS TOO!

These chili dogs may be somewhat messy, but they are outta this world wonderful as well!

I know most hot dogs are not among out healthy choices in the world, but hubby and I have really gone wild over Nathan's all beef hot dogs,
and that's what I used for this simple recipe.

Instead of putting cold hot dogs in the oven, I first boiled them, just to warm them up a little, then put them in the buns and added the chili, cheese and onion before covering them with foil and baking for a little while.

It just speeds up the process so unless you have time to let them heat completely in the oven (45 minutes), you can warm the 'dogs' then add to the buns.

I am not much of a sandwich person, but when I'm going to eat
a bun with a burger or dog, I want it warm, and this is such a great
way to do that.

I added this recipe  to my second cookbook, after seeing it at Tonya's 4 little Fergusons blog, which is 'on hold' at this point in time. I love Tonya and her precious family and am excited about seeing them again in Oct.

Also, I did NOT add the mayo, mustard and relish as hubby wasn't in favor of that AND the chili, but I hear tell it's very tasty.

These special dogs need to be eaten with a fork.

(TIP) - If you're in a rush, just warm the hot dogs and the chili before baking - it will cut your baking time in half).

OVEN BAKED CHILI DOGS

8 hot dogs (we love Nathan's!!)
8 (whole wheat) hot dog buns
mayo, mustard, and sweet relish, optional
2 (15 ozs. each) can Hormel Chili Masters
(or use you own favorite chili)
2 c. shredded cheddar cheese
1/2 onion, finely chopped

Preheat oven to 350. Spread mayo on inside of each hot dog bun. Add relish and a stripe of yellow mustard if desired. Fill buns with hot dogs and squeeze them all into a 9" X 13" baking dish, lined with nonstick foil for easy cleanup.
(you may be able to place 2 of them in the opposite direction to get them to fit).
Top hot dogs with chili, cheese and diced onion.  Cover (with nonstick foil) and bake 45 minutes.

Chili Cheese Dip {2 Ingredients}

I know this is an old classic, and everyone has their favorite version, but I didn't have it on my blog, and wanted to add it to keep it handy.

But it's perfect for the upcoming Super Bowl Game...

I hosted our kids and families for appetizers and desserts the Saturday after Christmas and this was certainly very quick & easy to prepare.

Only 2 simple ingredients and just a few minutes and this tasty dip can be ready to enjoy.

Use jalapeno or Mexican flavored velveeta for a special 'kick'.

Chunk up your cheese, open a can of chili (with or without beans) toss it in, microwave and stir!

I added mine to a crockpot so it would stay warm...

Simple De-Lish!!!

CHILI CHEESE DIP (2 Ingredients)

1 # Velveeta, chunked
(I used 2% and it worked great)
1 (15 ozs) can chili, with or without beans

Place cheese and chili in large microwave safe bowl.  Microwave on high for 4 - 5 minutes, stirring after 2 minutes, then continuing to stir after time alloted until mixture is blended and cheese has melted.  Add to crockpot to keep warm on low if desired.

Serve with tortilla chips, Ritz toasted chips or even assorted fresh veggies.

Yield: about 8 - 10 servings

Any way you serve it, it will be a hit!!!

White Trash Dip

First off, I have to say I have NO clue how this dish got its name.

But I DO know it's scrumptious and amazingly delicious.

I made this for a holiday gathering and saved it to share with you now.

This is yet another one of Tonya's special recipes from 4 little Fergusons. I've learned that I can count on her recipes being YUM-OO!

And it's only 5 easy ingredients!! That simplicity always grabs my attention.

If you're gearing up for the big game...or even if you're not, you'll love this easy dip. (I'm not at all about football, but I AM all about the food that goes with it!)

It goes together quickly...and is devoured quickly also.

WHITE TRASH DIP

1 lb. bacon, cooked, drained and crumbled
1 - 15 ozs. can chili with beans
2 - 8 ozs. pkgs. cream cheese, softened
2 c. shredded cheddar cheese
4 whole green onions, chopped
Tortilla chips, for dipping

Preheat oven to 350 while you're preparing the bacon. In large bowl, mix together chili, cream cheese, cheddar cheese, bacon and onion until smooth. Spread into a glass pie plate sprayed with nonstick cooking spray and bake for 20 minutes until hot and bubbly.

Serve with chips (and make sure you move out of the way quickly or you'll get run over!=)

Quick Corny Chili

This delicious thick soup puts a 'twist' on your everyday chili recipe.

Open a few cans, add them to browned ground beef, onions & celery and heat.  You're ready to serve!  EASY PEASY!!!

I love this recipe so much I added it to my cookbook!

It has several options too...you can make as the recipe states for more of a sweet & sour kind of chili, not using as much chili powder.

Or...you can just add a pkg. of chili seasoning instead. You can melt cheese in it if you'd like.  Or top it with shredded cheese.

I love eating mine with corn chips. Saltines would be good also.

However you decide to fix it, know that it's very yummy and easy.  Great for a busy night on the run.

Serve with cornbread or a sandwich and your family will have happy tummies.

QUICK CORNY CHILI

1 lb. ground beef
1 med. onion, chopped
1/4 c. chopped celery
1 (16 ozs) can pork and beans, undrained
1 (16 ozs) can kidney beans, rinsed and drained
1 (15 ozs) can whole kernel corn, undrained
1 (10-3/4 ozs) can cream of tomato soup
1 (10-3/4 ozs) can vegetable soup
1/4 - 1/2 c. water
1/4 c. brown sugar, optional
(may use 2 Tb. brown sugar splenda)
1 Tb. vinegar
2 - 3 Tb. chili powder, to taste

Brown ground beef, onion and celery; cook until tender; drain grease.  Add remaining ingredients, simmer until heated through.

Yield: 8 - 10 servings

With the holidays fast approaching, it's great to have something easy and delicious like these recipes to whip up quickly! Even if you just have a busy weekend ahead, (I have a cookbook signing on Sat!!  Yippee!) this is one that's easy to throw together and the family can help themselves whenever....

OH HOW I LOVE THIS TACO DIP!!!  So much that it's in my cookbook! *-*

I've made it for many parties and grandkids birthdays.

Easy Taco Dip
1-16 oz. can refried beans
1/2 c. mayonnaise or Miracle Whip
1 c. sour cream
1 env. taco seasoning (I don't use the whole thing)
grated cheese
sliced green onions, optional
sliced olives, optional
tomatoes, diced, optional
1 bag tortilla chips

Spread beans in bottom of 9" X 9" dish or on large plate or pie plate.  Mix mayo, sour cream and taco seasoning; spread over beans. Sprinkle with cheese, onions, olives and tomatoes, if desired. Cover and chill a few hours for best flavor. Serve with tortilla chips.
