Biscoff Fluff Dip



If you've ever tasted the delectable treat Biscoff, you KNOW
you're going to love this dish. 

And if you've never tried it, you're missing out BIG TIME! 

Biscoff is a spiced shortbread with bits of caramely flavors similar to the texture of peanut butter - you should be able to find it in the same aisle at the grocery store.

In Belgium, people developed a habit of putting their favorite cookie, Lotus Biscoff, on their bread! Some used the whole cookie, some crumbled it, and others soaked it in their drink first. Delicious, but hardly practical, until someone had a bright idea. Why not make a creamy cookie butter? An innovative Belgian woman created her own recipe and entered it in a competition for a TV show. And guess what? She won! Afterwards, she and Lotus Bakeries worked together to bring Lotus Biscoff cookie butter to its smooth perfection.


Lotus cookies are sometimes given out on airplanes
as a special treat. 

You can use 'light' ingredients in this recipe, but I suggest you
use full fat.  The dip will last longer and hold up better with
full fat ingredients. 

Now that we've established the basics, let's get on with this simple and amazing dish.... 

Get ready for the crowd to go wild....and be sure to have copies of this recipe on hand. 

And be careful not to eat the jarfull with a spoon!  It's hard to resist!

BISCOFF FLUFF DIP 

1 (8 ozs) block cream cheese, softened to room temp
1 (7 ozs) tub of marshmallow creme
1 heaping cup Biscoff cookie butter
3 Tb. whole milk or 1/2 & 1/2
1 tsp. pure vanilla extract
1 (8 ozs) tub frozen whipped topping, thawed
10 Biscoff (Lotus) cookies, coarsely crushed,
plus a couple more crushed for garnish 
1/2 c. mini chocolate chips, divided
Dippers: Biscoff cookies, pretzel crisps, graham crackers,
strawberries or apple slices 

In a large bowl, beat cream cheese until creamy and smooth. Add in 
marshmallow cream and cookie butter; beat until smooth.  Add
milk and vanilla, beating until blended.  

Fold in whipped topping with a rubber spatula, adding crushed
cookie butter crumbs and about half the chocolate chips until
thoroughly combined and fluffy. 

Cover and chill for 2 hours to let flavors blend.  Set on the counter
a few minutes to soften before stirring.  Stir and transfer to serving bowl. Garnish with extra crushed cookies and remaining
chocolate chips.  Serve with your choice of dippers.

Hot Cocoa Dip (3 ingredients - serve with fruit or cookies)


Maybe you've seen this amazing recipe floating around on the internet?  

It's a real keeper - can be made quicklly and enjoyed with cookies or fruit!



I wanted to be sure I didn't forget about it, so am posting it here.  

It would be super any time of the year, but especially now during the Christmas holidays.  

Recipe is easily doubled if you need a whole lot.

HOT COCOA DIP

1 jar (7 ozs.) marshmallow creme (may also be called Fluff) 
1 tub (8 ozs.) frozen whipped topping, thawed
2 - 3 packets of hot cocoa mix
mini (or macro - very tiny) marshmallows for topping

In a large bowl, beat marshmallow creme with whipped topping until blended.  Add in cocoa mix and blend until smooth. 

Sprinkle with marshmallows and crushed candy cane if you'd like.

Serve with fruit, graham crackers or shortbread cookies. 

It's great to give away as a gift too!

Flashback Friday - Perfect Pineapple Dishes for Special Days

Peppermint Mocha Cheesecake Dip {Option to add Essential Oils}

I am SO excited to share this simple recipe with you!

I've wanted to make it for a long time and I finally made it to share for a Thanksgiving feast with friends-like-family! 

I saw the recipe at Melissa's Served Up With Love months ago and have been thinking about this so much, I really did dream about it a while back!!!  I made a few simple changes, that are optional, so just do your 'thing' like I did, and it's sure to be gobbled up quickly. 

It's so easy and will be a real hit at any (holiday) party!

Honestly, it whips up in just minutes!!! 

My hubby had surprised me with some Andes mints recently, and 
lo and behold...I hadn't eaten all of them when I made this tasty dip...


So I decided to top it off with chopped Andes, but mini chocolate chips would work just as well.  I also chopped a few small candy canes to top it off.
Loved the color AND the flavor of the peppermint candy canes too. 

I added a little more creamer, and I also added a couple of drops of peppermint essential oils.  You could use peppermint extract if you'd prefer, or none at all. 

Just taste as you mix and see what you think. 

I think this is a fabulous dish to take to share with any crowd. 
It's thick and smooth and just creamy enough to scoop with a graham cracker or pretzel and still hold its shape. 

Enjoy every yummy bite. 



PEPPERMINT MOCHA CHEESECAKE DIP 

1 pkg. (8 ozs.) cream cheese, softened
1/2 c. peppermint mocha coffee creamer
1 tub (7 ozs.) marshmallow cream 
1 tub (8 ozs.) frozen whipped topping, thawed
2 drops peppermint essential oils, optional
(or 1/2 tsp. peppermint extract) 
chopped chocolate candies and candy canes for topping 
(mini chocolate chips work great too) 

In large bowl, combine cream cheese, creamer and marshmallow cream; beat with mixer until smooth.  (Add essential oils or extract if using). Fold in whipped topping. Pour into bowl; top with chopped candies. 

Serve with chocolate or regular graham crackers or pretzels for a delightful sweet and salty treat. 

Serves 6 - 8

Flashback Friday - Perfect Pineapple Dishes

Using canned biscuits makes this a simple recipe. Wonderful for breakfast or brunch. Great served alongside ham. Delish!!!

Easy Baked Chicken Strips (with Healthy Honey Mustard Sauce)

I'm always in love with the recipes that I find at The Southern Lady Cooks .  I do believe Judy and I share taste buds!  I changed this recipe up just a tad by cutting the breasts in half, so they'd cook quicker, and substituting pork rinds for the flour, just to cut the carbs a bit.  Use either or...

Since my hubby doesn't care for chicken any more, I like having some 'just for me' and this recipe was great.

I have this recipe for Healthy Honey Mustard Sauce in my second cookbook, but don't think I've ever shared it here, so decided to make it to go alongside this tasty chicken.

This simple 3-basic ingredient sauce is so tasty...great on fish or in omelets too.

 It was a wondermous meal!!!

EASY BAKED CHICKEN STRIPS (& Healthy Honey Mustard Sauce)

3 - 4 boneless skinless chicken breasts, cut in half 
1/3 c. flour
(I used crushed flavored pork rinds  - salt & vinegar, and omitted salt)
1/3 c. cornmeal
1/2 tsp. salt (omit if using pork rinds)
1/2 tsp. black pepper
1/2 tsp. chili powder
1/2 tsp. dried basil
1/4 c. milk
4 Tb. butter, melted

Preheat oven to 375. Line baking dish with non-stick foil, or use regular foil and spray with non-sticking cooking spray; set aside.

In low bowl, combine flour, cornmeal, salt, pepper, chili powder and basil. Place milk in another low bowl.  Dip chicken pieces in milk, then in cornmeal mixture. Place in a baking dish; drizzle butter over top of chicken.

Bake for about 40 minutes, turning about 15 minutes before they have finished baking.

HEALTHY HONEY MUSTARD SAUCE

1/2 c. nonfat plain Greek yogurt (or lite sour cream)

1/4 c. honey
1/4 c. yellow or spicy brown mustard
a sprinkle or two garlic powder
salt & pepper to taste

In small bowl, combine all ingredients.  Refrigerate until ready to serve.

Cheesecake Dip (For Berries or Fruit)

This is a simple dip with cream cheese and sour cream as the base.
Dip berries in it, then roll them in crushed graham crackers for a
'cheesecake' resemblance...or just dip crackers or vanilla wafers in it.
You can substitute vanilla extract for the almond extract. 
A great way to enjoy berries before summer is over! 

Or grapes or pineapple or bananas.....


CHEESECAKE DIP

8 oz cream cheese, softened

2/3 c. sour cream

6 Tbsp powdered sugar

2 Tbsp. milk

1/2 tsp. almond (or vanilla) extract
1 qt fresh strawberries
1/2 c. graham cracker crumbs


In a mixing bowl, beat cream cheese until smooth.  Add the sour cream, sugar, milk and extract; mix until smooth.  Transfer to a serving bowl.  Place the strawberries and crumbs in separate serving bowls.  Dip strawberries into cheesecake mixture, then into crumbs.  Makes about 2 cups.

Leader Enterprise - June 17, 2015 - Saying Thank You



Because June is known as the month of weddings and graduations, I wanted to share ideas from a little booklet entitled ”101 Ways to Say Thank You”, authored by Bonnie Ceban. We can use these ideas all year long. Since I send many cards during the year, I'm always looking for creative ideas and I appreciate these great reminders. 

From the book - “We show gratitude in many different ways in order to express to others how valued and appreciated they are in our lives. Most people learn to say thank you when they are children, yet adults allow the busyness of their schedules and the competing demands in their lives to crowd out the art of expressing gratitude. Consider who in your life is already overdue for an expression of thanks. Remember that a life overflowing with thanksgiving is one that will touch others more deeply and produce more genuine relationships.

Children don’t naturally express thanks; they need to learn the importance of doing so and then practice it in daily life until gratitude becomes a part of how they express themselves to others. Modeling how you thank your friends and family will help them to thank their friends as well.

A formal thank you is written. This is appropriate for graduations or other milestone events, such as weddings or anniversary parties.  If you determine not to use that gift until you have sent a thank you, it will motivate you to get those thank you notes out in the mail promptly.

Writing scores of thank you notes can become very tiring. Try to make the process more interesting and personal by including a memory or thought specific to that person. It can be from the event or from a different time in your life. Make it specific to them. Include in your thank you note just a few lines about what made the day special for you and how you will look back on the memories."

This recipe is among my long list of favorite dips. It's quick and easy to make too. Both these recipes would be great for any summertime get together.
MEXICORN DIP 

2 (11 ozs each) cans mexicorn
1 (10 ozs) (mild) rotel tomatoes and green chilies
1 (16 ozs) refrigerated french onion dip
Fritos Corn Scoops

Drain mexicorn and rotel well. In medium bowl, mix all ingredients (except corn chips) together. Refrigerate until cold to allow flavors to blend. Serve with corn chips.

Strawberry season is upon us and this is one delicious dish to help you celebrate summer and July 4th! It makes you want to scream MORE! Add some blueberries for a 'patriotic' touch.

STRAWBERRY PIZZA

1-1/2 c. all purpose flour
1 c. cold butter, cut into chunks
1/2 c. brown sugar
1/2 c. chopped pecans
1 - 8 oz. cream cheese, softened
3/4 c. powdered sugar
1 - 8 oz. tub Cool Whip, thawed
4 c. cleaned, sliced fresh strawberries
1 - 16 oz. pkg. strawberry glaze

Preheat oven to 350. In lg. bowl, combine flour, butter, brown sugar and nuts. Spread on 14" pizza pan or 10" X 15" X 1"cookie sheet. Bake 12-15 minutes until browned. Cool. In medium bowl, combine cream cheese and powdered sugar; beat until smooth. Fold in whipped topping and spread over cooled crust. Refrigerate for 15 minutes to set up. In large bowl, combine fresh strawberries and glaze until coated. Spread out over cream cheese filling, then top with dollops of Cool Whip to serve. Keep leftovers refrigerated. I use lite cream cheese and Cool Whip with sugar-free glaze.
