Flashback Friday - Marvelous One-Dish Recipes

Your family will dive into this dish...uses frozen hash browns,
soup, french fried onions and more...MMM!  Add a veggie and you're all set. 





This is a tasty dish with crescent rolls as a base, with broccoli...
creamy, cheesey. 





This is a hearty 'man's casserole' with layers of beef, mushrooms, soup, cheese, biscuits and eggs!

Leader Enterprise - October 11, 2017 - Keeping Meals Simple




Life can get pretty hectic with all the extra-curricular school activities. It always seems easier to get fast food, but if you can stick with a few simple recipes, everyone can eat (sometimes healthier) at home.  And that's always a good thing. 

It's been proven that sitting down to dinner together creates a strong family bond. I'm here to help you with ideas for some simple meals to add to your menu. 


HAMBURGER CRUNCH 

2 lbs. ground beef
1 T. onion, minced
2 (10.75 ozs) cans tomato soup
1 t. chili powder
4 c. corn chips, slightly crushed
8-oz. pkg. shredded Cheddar cheese

Brown ground beef and onion together in a large skillet over medium heat; drain. Stir in soup and chili powder. Spread corn chips in an ungreased 9" x 13" baking pan; top with ground beef mixture. Bake, uncovered, at 350 degrees for about 20 minutes or until bubbly. Remove from oven; sprinkle with cheese. Bake for an additional 5 minutes, until cheese melts. Serves 6 to 8.


CROCKPOT SLOPPY JOE CHICKEN

2 lbs. boneless skinless chicken breasts
1 (15 ozs.) can sloppy joe sauce (like Hunt's Manwich)

Lightly spray crockpot with nonstick cooking spray.  Place a few tablespoonsful of sauce on bottom of crock. Add chicken; pour remaining sauce over top. Place the lid on; cook on low for 4 hours.  When ready to serve; remove chicken and shred with 2 forks. Return chicken to crockpot; mix with sauce. Serve on buns or over rice. 

EASY CROCKPOT MEATBALLS

1-1/2 lbs. ground beef
2 eggs
1 medium onion, finely chopped  
1/2 c. cracker crumbs
salt and pepper
1/2 tsp. poultry seasoning or a dash of nutmeg
1 (10.75 ozs) can cream of chicken (or mushroom) soup 
flour
1 soup can of water
1 Tb. each: oil and margarine

In large bowl, combine beef, eggs, onion, cracker crumbs and seasonings. Shape into balls.  Roll in flour; brown in oil and margarine; drain.  In small bowl, combine soup with 1 soup can of water; pour over meatballs and simmer in the crockpot on low for 3 - 4 hours. (Or you can simmer on top of stove, covered, for 1 hour.) Serve over mashed potatoes, rice or noodles. 


A hearty meal ready in less than 30 minutes.  GO! 

QUICK CHILI MAC SKILLET

1/2 (1#) box elbow pasta 
1/2 - 1# lean ground beef 
1 medium onion, coarsely chopped
(or 3 - 4 Tb. dried minced onions)
1 - 2 tsp. chili powder
1 (14 ozs) can diced tomatoes, undrained
1 sm. can tomato paste
1/3 c. water (more as needed)
1 (15 ozs) can kidney or black beans, rinsed and drained
freshly ground salt and pepper, to taste
1/2 c. shredded Mexican cheese blend

In medium pot, cook pasta according to package directions.
Set aside to drain until ready to use. In same pot, brown ground beef and onion; stirring until no pink remains. Add chili powder, then tomatoes, tomato paste and water. Cook 2-3 minutes to blend flavors; add beans; heat through. Season with salt & pepper. Remove pot from stove; toss pasta into beef mixture; stir. Top with cheese just before serving. 


CHICKEN ALFREDO BUBBLE UP 

2 c. cooked chicken, chopped or shredded
2 c. shredded mozzarella cheese, divided
1 jar (15 ozs.) Alfredo sauce
1 pkg.(16 ozs.) flaky large biscuits (like Grands - 8 count)
garlic powder, to taste, optional

Preheat oven to 350. Grease a 9" x 13" baking dish.
Remove biscuits from package and cut each biscuit into 6 pieces. Place biscuit pieces into large bowl. Add Alfredo sauce, 1 cup of cheese and cooked chicken into bowl with cut biscuits. Mix well to combine. Spread mixture evenly into prepared pan. Top with remaining mozzarella cheese. Bake 35 minutes or until biscuits are brown and cooked through. Let it sit for 5-8 minutes before serving. Yield: 6 servings

I Heart 4 little Fergusons! A LOT!

I was soo blessed to be able to make a trip to the Midwest recently to meet and visit blogger Tonya Ferguson and her 4 (very precious) little Fergusons! 

I had a shirt printed with this on the front to wear on the plane. 

Tonya has introduced me to the idea of making t-shirt scarves, so I made this braided one to accommodate my shirt also.


Let me tell you first hand...these precious little babes are every bit as sweet as they seem to be!!  Their mama trains them well.  They always called me 'Miz B' - never by my first name.  And they decided I was their 'new' grandma too - how fun is that???

I am a teacher at heart and loved making memories with them.

I'm not sure who enjoyed reading time more...them or me.
I have always loved reading to my own kids. I had a home daycare when they were small, and we had reading time every day. 

One of my favorite pix that Tonya posted at Facebook was this one of adorable Pax who fell asleep in my lap while I was reading.  That little guy has WON MY HEART! (We really didn't plan to coordinate our colors for the photo=). 

I was privileged to be there to help celebrate Avery's 4th birthday.
What fun to share in that special time with family and friends. 



I enjoyed visiting with the children's GREAT grandparents!! How  blessed they are to be close to them. I felt right at home with the grandparents too!


I taught the kids a fun finger play and they 'performed' at the party!
Even little Pax...who usually ran off when we practiced, got in on the act!

How I treasured time with family...I quickly learned to love these special ladies...moms.

Tonya and I got to spend a little time making t-shirt scarves - they make great gifts. This was the one I learned to make...T knows how to add special touches...flowers, embellishments, etc.

AND....Last, but certainly not least....Tonya and I got to meet another co-host from Weekend Potluck!!!  Kim from Sunflower Supper Club lives nearby and we were ecstatic to get to see the kitchen where she works and finally meet her in person. 

Another special blessing in my time there. 


They all made me feel like family - even Sophie, the family dachsund. 
It seemed when the last kid would leave my lap, Sophie would jump into it..unbidden..and lay down...right at home!

What sweet blessings to meet folks I feel like I've known, but
from afar.  

One very special blessing I've received in blogging is meeting new friends!
During our short time together, we made memories and friendships to last a lifetime!

The 4 little Fergusons and their family are MY 'new' family!

In Memory of my Dear Mother - Sweet Recipes for Life

In honor of my precious mom's birthday (Marie I. King would have been 88 on Sept. 18) I'm sharing these sweet thoughts.  Mom went to her Heavenly Home after developing blood clots in her lungs post-- knee replacement surgery.  She was only 64). Everyone in our family refers to her as a saint. She was one in a million for sure.


(And as a sidenote...I didn't mention my dad's recent birthday earlier this month.  We 4 siblings and families got together to help dad celebrate his 86th.  We are so thankful for his steadfast and unconditional love for his family and his Savior.  A good friend bought him this hat to wear while he opened gifts...too funny!)

Mom's Recipe for Love

Take a cup or two of laughter,
And a pinch of good advice.
Pour in patience by the bowlfull,
Then stir it once or twice.
Fold in lots of hugs and kisses,
And a mother's gentle care.
Cook until it's nice and warm,
And spread it everywhere.

Ingredients:



1 part of knowing who you are

Good News!

I truly enjoyed time with daughter Deb and family last week.  Little Sam is doing great recovering from surgery. Drs. removed 20% of his large intestine and he's now eating like a champ and his system is definitely a 'go'...if you know what I mean.  =)  Sam smiles so much and I just had to share one of my favorites shots of him...Thanks again for your prayers on his behalf. God is good...all the time!

He has the biggest blue eyes that just melt your heart!

Our Easter Brunch

Trust all of you enjoyed a lovely Easter weekend and are 'recovering' nicely. *-*

Last week, my good blogging friend, Lark of
me in a 'virtual' Easter dinner Round up...

I simply didn't have time to put it all together with pictures, so I figured I would go ahead and share what we really had for our Easter family get together.

We like to do brunch with our kids on Saturdays - it gives both our daughter-in-loves freedom to plan something with their own families, and frees us up on Sundays...as they are normally a busy day in our lives.

Sooo I thought I'd share some pictures/recipes from our meal...I would love to get a glimpse of the dishes you enjoyed with you and yours too.

I found this adorable 'nest' recipe at Once a Month Mom  It was easy to make - using shredded wheat, coconut and melted chocolate.  It was our edible centerpiece and was a real hit.

I looked at many ideas, and am so happy I chose this simple recipe. I would highly recommend it to anyone.  Check out the recipe and ideas at the link above.

We also enjoyed ham and havarti croissants. I've previously shared this in a recipe post on my blog...it was the first time my family had tasted them and I did hear quite a few raves!! 

I also made some using turkey as a few family members aren't wild about ham...both flavors were wonderful. 

Melt-in-Your-Mouth goodness!

We tried french toast made with hawaiian bread.  It was delicious.

We had ham and cottage potatoes (cheesey) that my family expects for all our get togethers. It's a dish I have fond memories of my mom making often.

Instead of adding water to the pan before putting the ham in the oven, I added ginger ale.  I'd read that recently and am not sure what it does, but the ham was terrific. I didn't measure, but mixed a honey/mustard/brown sugar glaze and poured over the top the last 30 minutes.  MMM!



COTTAGE POTATOES

10 lg. potatoes, cooked in skin (I used red)
1 med. onion, chopped
1/2 tsp. salt
1 slice fresh bread, torn into pieces
1/2 lb. Velveeta cheese, cubed
8 Tb. margarine, melted, divided
1/4 c. milk
2 c. crushed corn flakes


Cool potatoes - peel and cut into bite sized chunks.  Preheat oven to 350. Lightly grease 2.5 qt. baking dish. Mix together potatoes, onion, salt, bread and cheese.  Mix with 6 TB. melted margarine and place into prepared dish. Pour milk over potatoes. 

Topping:

Mix corn flakes with remaining margarine and spread evenly over top.  Bake uncovered for 35 - 45 minutes or until brown and bubbly.

For a flavor boost - may add small can of chopped pimentos.
(That's how my mama always made this dish, but I have too many picky eaters in this family to try it =)

We also enjoyed some fresh fruit and a cream cheese/marshmallow cream dip.


That fresh pineapple sure was delicious with the ham!

We enjoyed Cookies & Cream Brownies from Mandy's Recipe Box for dessert.

I crushed Nutter Butter cookies on top of brownie batter before baking.  I didn't add the glaze and they were plenty sweet for us.  What a delicious idea!  I don't know why I haven't thought of it before.



Our daughter-in-loves both brought dishes too, so we had more than enough to enjoy.

I will share another post later this week showing the craft idea my granddaughters made.  It was so cute & so fun...not to mention delicious!
