Flashback Friday - Marvelous One-Dish Recipes

soup, french fried onions and more...MMM!  Add a veggie and you're all set.

This is a hearty 'man's casserole' with layers of beef, mushrooms, soup, cheese, biscuits and eggs!

Stovetop Pork Chops & Gravy

This is a simple and tasty way to cook up pork chops and gravy in less than 30 minutes!  Comfort food!!

Every woman needs a quick and easy dish in her recipe 'arsenal' to whip up when you're in a hurry.

(If you want, you could brown some onions along with the chops to dress up the gravy)




STOVETOP PORK CHOPS & GRAVY 


1 Tb. vegetable or canola oil
4 bone-in pork chops (1/2" thick, about 1#)
salt & (fresh ground) pepper, to taste
garlic powder, to taste, optional
1 can (10.75) ozs. cream of mushroom or chicken soup 
(mushroom with roasted garlic would be great!)
1/2 c. milk (or water)


Mashed Potatoes, Hot rice or Cooked Noodles


In large skillet, heat oil over medium-high heat. Season pork chops then brown (don't have to be cooked through); remove; set aside.

In same skillet, combine soup and milk; bring to a boil. Add chops to the skillet; reduce heat to medium. Cover and cook for 6 - 8 minutes or until cooked through. 



Serve over potatoes, rice or noodles.

White Chili Dip {3 ingredients!}

SUPER Duper recipe for SUPER BOWL SUNDAY!

This one's E-Z, P-Z.....always gone first! kind of recipe. 

Only THREE ingredients...an optional four. 

What's not to love?  Quick, easy and deliciously wonderful. It's heated in the microwave...kept warm in the crockpot!

Feel free to use 'regular' tomatoes if you don't want the kick from the rotel.

My dear friend, Rosie, gave me this recipe and I added it to my most recent cookbook.  She said it is always gone QUICKLY anywhere she takes it!



WHITE CHILI DIP 

1(1#) pkg. Bob Evans sausage roll 
2 (10 ozs. each) rotel tomatoes (with green chilies), well drained
2 (8 ozs. each) (lite) cream cheese, softened
1 (15 ozs) can refried beans, optional

Brown sausage; drain.  Thoroughly drain tomatoes. In large microwavable bowl, combine all ingredients. 

Microwave 2 - 3 minutes until mixture is smooth, stirring every minute.  Place in crockpot (sprayed with non-stick cooking spray) on low to keep warm up to 2 hours. Serve with tortilla chips.

Saucy Apple Pork Chops (Oven or Crockpot Methods)

I've had this recipe for many years as I have always favored the combination of pork and apples.

I add sweet taters to the mix too.  Oh so yummy!

I'll give instructions for an oven method, but this time I used the crockpot. Makes for an awesome Sunday dinner after it's cooked while we're at church. 

This is another recipe from my new cookbook...."Love at First Bite".   It's chocked full of simple and yummy recipes like this one.

Just remember...I love quick, easy and healthy options. 


SAUCY APPLE PORK CHOPS 

2 c. applesauce
1/2 c. sugar, optional
2 Tb. soy sauce
1 garlic clove, minced
1/4 tsp. ground ginger or pumpkin pie spice 
(I use pps and add more) 
6 - 8 boneless pork loin chops 
(about 1/2" thick)
2 Tb. butter or margarine
fresh ground pepper, optional

In a medium bowl, combine applesauce, sugar, soy sauce, garlic and ginger; mix well.  Pour into a greased 9" X 13" X 2" baking dish.  In a skillet, brown pork chops in butter; (I season ours with fresh ground pepper); place over applesauce mixture.  Bake, uncovered, at 325 for 35 - 45 minutes or until meat is tender. 

Yield: 6 servings 

CROCKPOT METHOD:

I used about half the amount of applesauce, added the soy sauce and garlic, then added about 1/3 c. apple juice. Placed it in the bottom of the greased crockpot.  Seasoned the chops with pepper, browned them, placed them over the applesauce, then added medium chunks of sweet potato and quartered apples, leaving the skin on so they will hold their shape. Sprinkled with the pumpkin pie spice. Cover; let cook on low for 5 - 6 hours.

{Slow Cooker} Honey Dijon Pork Chops and Apples

I love simple meals...and of course delicious too, and this one really fits that bill. 
We eat a lot of chicken, and occassionally we eat the 'other white meat'.

After getting a very good deal on some boneless pork chops, I was happy to come across this delicious meal at Eat at Home.

Tiffany is my kind of gal (and her last name, King, is my maiden name, so I'm naturally partial to her=)  I think we share taste buds as she surely shares MY kind of recipes.

(Did you know I had to humble myself to marry my husband?  I went from a KING to a BAKER). {grins}

OH SO YUM too!

I LOOOVE pork chops with apples too, so I didn't have to think twice about trying this simply satisfying meal.

The recipe also calls for onions, but you can leave them out if you don't care for them.

The only thing I changed was adding a little liquid to the crockpot - apple juice, but Tiffany insists it isn't necessary.



SLOW COOKER HONEY DIJON PORK CHOPS AND APPLES (& ONIONS TOO)

1-1/2 lbs. pork chops, boneless or bone-in
5 small apples, peeled and sliced
1 onion, sliced
3 Tb. honey
1 tsp. dijon mustard
1/2 tsp. kosher salt
generous grinds of black pepper
(we put pepper on just about everything!)
1/3 c. apple juice

Place pork chops in bottom of crock. In small bowl, combine honey, dijon, salt and pepper together. Pour over apples and onions;toss to coat.  Place apples and onions on top of chops in slow cooker. 
Add apple juice. Cook 5 - 6 hours on high or 7 - 8 hours on low.

(I had thin pork chops and they were ready after 4-1/2 hours...on high).

I served it over rice.

Yield: 4 - 6 servings
