Special Egg Salad 

Hope you have been enjoying this awesome summer with not-so-high temps. I am so amazed at how tall the corn is this year. I ooohh and aaahh every time I see those tall sprouted and beautifully green crops.

Eggs are such a versatile ingredient, it's easy to become overwhelmed with ideas for preparing them. Eggs can be fried, scrambled, boiled and baked. They can be enjoyed any time of the day, as a meal or a snack.

Deviled eggs seem to be on every summer menu. They're great for potlucks and picnics. At my house, they're always the first dish to be eaten up.
Fried eggs can be a very personal matter. What's the perfect way to fry an egg? There’s just an egg,a bit of fat, some heat, a little salt..maybe some pepper, and of course, enjoyed with buttered toast. When it comes to fried eggs, there are many versions of perfection. Personally,I like to steam my fried eggs but enjoy a runny yolk to dip that toast in.

Maybe you've had some eggs in the back of the fridge and aren't sure if they're good or not. Here's a simple test: Fill a bowl with water, enough to cover the egg. Gently drop the egg into the bowl. Fresh eggs sink and lie on their side. Older eggs lie but bob slightly. Eggs that are about 3 weeks old stand on their end. Bad eggs float to the top.
Have you ever tried cooking eggs in the center of a large sauteed onion ring, or even a (veggie) pepper circle? It's fun for something different. 
When boiling eggs, be sure not to overcook them. That will cause a green ring around the yolk. To boil perfect eggs, place them in a pot, covering totally with water. Bring to a boil; cover, then set aside for about 15 minutes. Cool; then peel. It's always best to use older eggs for hard boiled eggs. Fresh eggs are a killer to peel!

I think the best way to peel an egg is to first, crack the cooled shell all over. Roll on the counter or shake them in the pan they were cooked in. Start peeling, dipping in cold water to rinse off the shells as you work.

Chopped hard boiled eggs are a great addition to a lettuce salad, and in this special egg salad.In my humble opinion (others have told me as well), this is the very best egg salad to pass over your tongue. I always make a double batch.


SPECIAL EGG SALAD


1 (3 ozs) pkg. (reduced-fat cream) cheese, softened
1/4 c. (fat free) mayonnaise or salad dressing
1/2 tsp. sugar
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/8 tsp. salt
1/8 tsp. pepper
6 hard cooked eggs, chopped
wheat bread
lettuce leaves

In a small mixing bowl, beat the cream cheese until smooth. Add the mayonnaise, sugar, onion powder, garlic powder,salt and pepper; fold in the eggs. Cover and refrigerate for 1 hour before serving. Toast bread and serve sandwiches with lettuce for added crunch. Yield: 6 servings.


DEVILED EGGS 

1 dozen hard boiled eggs
1/3 c. mayonnaise
2 Tb.Greek yogurt, or sour cream
1-1/2 tsp. white vinegar
1-1/2 tsp. dijon or spicy brown mustard
1/2 tsp. sugar
1/2 tsp. Frank's hot sauce,optional
1/2 tsp. kosher salt
1/2 tsp. garlic/pepper blend
(or ground pepper)

After peeling eggs, cut in half lengthwise. Remove yolks; place in medium bowl and place egg whites on platter. 

Mash the yolks with a fork. Add mayo, Greek yogurt, vinegar, mustard, sugar, hot sauce, kosher salt and garlic/pepper. Combine until smooth, using a fork. Either place mixture in ziploc bag and cut a hole in one end to pipe into the whites, or just use a spoon. Garnish with paprika. (To kick up the flavor, add, or top eggs with cooked bacon crumbles, grated cheese, almonds or olives) 

This recipe is a wonderful way to use up leftover scrambled eggs.

BREAKFAST QUESADILLAS 

3 eggs
1 Tb. water
(makes fluffier scrambled eggs)
2 -8" flour tortillas
1/2 c. shredded cheddar cheese (or your family's favorite)
2 bacon strips, cooked and crumbled
1 green onion, thinly sliced
sour cream and salsa, optional,for garnish 

Spray a large skillet with non stick cooking spray. In a small bowl, whisk the eggs and water. Add eggs to skillet and cook over medium heat until completely set up. 

Place tortillas on a griddle. Spoon eggs over half of each tortilla; sprinkle with cheese, bacon and onion. Fold over tortilla and cook on low for 1-2 minutes on each side, or until cheese melts. Serve with sour cream and salsa. Yield: 2 servings 

This is the recipe I served for Bean Days at the Leader office. Always thrilled to hear so many say they REALLY liked them! Feel free to substitute the chili or pinto beans with mixed beans, which can be bought in a jar.

THREE BEAN BBQ WITH SAUSAGE

1 (15 ozs) can pork & beans, partially drained
1 (15 ozs.) can pinto beans, drained
1 (15 ozs.)can chili(or kidney)beans, drained
1 lb. pkg.smoked sausage, diced
1 small onion, chopped
1/4 c. brown sugar
2 Tb. dijon or spicy brown mustard
2 Tb. ketchup
2 Tb. molasses (or pancake syrup)
1 Tb. Worcestershire sauce
few drops of hot sauce 

Mix all ingredients in crockpot. Cook on low for 4 hours or on high for 2 hours. Yield:6-8 servings.

Enjoy an egg-cellent rest-of-the-summer!

Bacon & Cheddar Deviled Eggs

I found this yummy recipe some time ago at 
and just got around to making them. 

DRAT!  Why did I wait so long????

With Easter just around the corner, these would be the perfect dish for all those left over hard boiled eggs. 

They were very tasty and I am always wild about having any texture in 'smooth' food, so IMHO, adding the bacon made them perfect! 

I reduced the amount of mustard, so feel free to add more to satisfy your 
own tastes. I also added just a little bit of cream cheese, since my favorite 
Special Egg Salad has cream cheese.  SUCH an awesome dish.

I also added fresh ground pepper.  We love pepper on most things! 

This combo could also be used to make a sandwich spread too. 

I don't know about your gatherings, but it seems no matter how much 'other' food there is at a meal, the deviled eggs are always the first to be gone!

These may be devoured even faster than that - at lightning speed! *-* 



BACON & CHEESE DEVILED EGGS 

6 hard boiled eggs 

1/3 c. of mayonnaise, or more, to taste
2 Tb. cream cheese, room temp
1 tsp. mustard
4 or 5 strips bacon, crumbled fine
1/3 c. cheddar cheese, finely shredded
(or your favorite kind)
fresh ground pepper, to taste
2 Tb. green onions, finely chopped, divided
paprika

Cover eggs with water; bring to a boil, then turn off heat; let stand 15 minutes, then cool and peel. (I think they peel easier if you crack the egg all over first). Cut eggs in half lengthwise. In medium bowl, combine mashed egg yolks with mayonnaise, cream cheese, mustard, cheese, bacon and 1 Tb. green onion. Fill egg whites with the egg mixture and sprinkle the eggs with a little paprika, then sprinkle with remaining onions and more cheese, if desired.

Tasty Deviled Eggs

Deviled eggs always seem to be the first dish to be gone whenever our family gets together.

I think that's probably true at most potlucks and picnics too.

When I saw this 'dressed up' version from Kim at Sunflower Supper Club I knew I had to try them.  We loved them too...especially hubby.

I omitted the hot sauce, just because I was making for grandkids to eat, but next time I will be adding it...just for him.

I also substituted Greek yogurt for the sour cream, but that's always an option, so just use what your family enjoys most and you'll be all set. 

I also used a garlic pepper I had instead of plain pepper.  We love pepper at our house, so I used more than the original recipe too!

This recipe is the ULTIMATE in egg salad.  It's creamy and lasts a long time.
You won't ever go back to an old recipe after trying this one!

Special Pimento Cheese

I have ALWAYS loved pimento cheese. On occasion, I've been known to add it to my deviled eggs.  EGGS-elent way to enjoy deviled eggs!

I've even been found staring (& maybe even wiping the drool from my chin!=) at packaged pimento cheese at the store...
maybe it was because it wasn't something I was introduced to as a kid, but as an adult, I've fallen in love with this tasty 'dressed up' cheese dish.  

So when I saw this 'homemade' version from my sweet friend and 
'Sister of Shared Taste Buds' 
Veronica at Veronica's Cornucopia, I knew I'd found a winner! 
(Please stop by and check out her amazing recipes - many 'BLUE RIBBON WINNERS'...and don't forget to tell her I said hello) 

As you probably know, I love EVERYTHING with cream cheese and this is no exception!! 
We enjoyed this along with Roasted Red Pepper & Tomato Soup...a recipe that I found on the internet to use up the 'leftover' peppers after making this cheese mixture.
(I will share that recipe one of these days). 

Only to find out later, Veronica has a couple of recipes for that too!

Veronica just recently shared my recipe for Special Egg Salad so I renamed this as...


SPECIAL PIMENTO CHEESE

1/4 c. (2 oz) cream cheese, room temperature
(After making this a few times, I decided it's best with more, so I use
4 ozs)
1/2 c. mayonnaise
1/2 c. sour cream
1/8 tsp garlic powder

(we love garlic so I added a tad more)
  1/2 tsp minced dried onion

few dashes Worcestershire sauce
2 c. (8 oz) shredded sharp cheddar cheese*

(*see Tip below)
1/2 c. (1-1/2 oz) shredded Parmesan cheese
1 (4 oz) jar diced pimientos, drained
(I used roasted red peppers)
Salt to taste
garlic/pepper blend 

In medium bowl using a mixer, whip the cream cheese until creamy, then add remaining ingredients.  Beating it will help break down the cheese and pimientos and makes for a smoother spread. Cover; refrigerate; enjoy!

This is great as a sandwich spread or with crackers. It keeps in the fridge for several days...if it lasts that long! 

TIP: I would suggest you grate your own cheddar cheese - the store purchased often has wax on it and won't blend as smoothly.

When you have eggs, you have a meal! Thanks to Egglands Eggs, you have a healthier meal. I never want to be without my Eggland eggs. Scrambled with shredded cheese is good for any meal. Deviled eggs are a must for all family gatherings along with potato/macaroni salads. An omelet full of veggies, meat and cheese make a yummy meal. A breakfast sandwich with fried egg, slice of ham and cheese on an English muffin is great. Homemade ice cream and baking are my favorites. Poached in the microwave is quick. Also, boil eggs, peel and eat with salt and pepper..can reheat in microwave and snack on them...yum. aka:LUCY
