Leader Enterprise - August 16, 2017 - Tips for Easy Meals




As you all know by now - I love simple and easy recipes.  I've been thinking about my third cookbook, FORK FAVORITES, that's recently been delivered to my door, and decided I should share some suggestions for making quick, easy meals. Even if you are just learning to cook, these ideas can help save you some time when you want to get a meal on the table quickly. 

1. Always read through a new recipe before starting. It's too tough to adjust mid-way through it. Check the size baking dish needed and the oven temperature. 

2. I like to get all my ingredients out on the counter, then place them in a different spot as I use them.  That way, if the phone rings and I forget what I was doing, I know where to begin again. In order to avoid confusion, I think it's easiest to add ingredients as listed in the recipe. 

3. We keep cleaned and cut up veggies on hand in the fridge. They're great for snacking. If your recipe calls for chopped onions, celery and/or carrots, chop them ahead of time. You can even freeze this combo. That's one less step you have to do when throwing your meal together. You don't have to do a week's worth of prep at once. Anything you can do ahead will help when mealtime rolls around. 

4. Keep cooked chicken and beef on hand in the freezer. Feel free to season your meat with taco seasoning, ranch dressing or whatever your family prefers. 

Here's a great recipe for preparing cooked chicken for the freezer, along with ideas how to use it.  

CREAMY CROCKPOT CHICKEN TACOS (OR NACHOS)

5 frozen chicken breasts
1 (16 ozs) jar salsa or picante sauce (your favorite) 
1 (1 oz) pkg. taco seasoning mix (= to 3 Tb.)
1/4 c. milk
1 tsp. cilantro
1/2# (more or less) Velveeta cheese, chunked
(cheddar or pepper jack would be great too) 
taco shells or tortilla chips
GARNISHES: chopped tomatoes, shredded lettuce, chopped green onion, sour cream and/or guacamole 

Spray 4-qt. crockpot with nonstick cooking spray.  Lay chicken breasts (still frozen!) in the bottom; cover with salsa or picante, then sprinkle taco seasoning over top.  Cook on high for 3 - 4 hours or low for 5 - 6. When cooked, remove breasts and shred with 2 forks.  Return to crockpot and stir in milk and cilantro.  Place Velveeta over top and heat (on low) until melted. Stir before serving in taco shells, warm tortillas or on tortilla chips with garnishes of choice. Cool before freezing. Yield: 6 - 7 servings 


MAKE AHEAD OLD-FASHIONED BEEF STEW

1 lb. beef stew meat
3 cups (24 ozs) V8 juice
1 cup (8 ozs) beef broth
1/2 onion, sliced
1 tsp. worchestershire sauce
1/2 tsp. dried marjoram
1/2 tsp. dried oregano
1 bay leaf
1 cup (8 ozs) frozen green beans
1 cup (8 ozs) frozen whole kernel corn
1 cup chopped carrots
(To save time and effort, I opted to use a bag of frozen stew vegetables instead=)

Pour all the ingredients, with vegetables still frozen, but broken apart as much as possible, into a 10-cup freezer container (gallon ziploc freezer bag works fine).

To serve, thaw.  Pour into a slow cooker.  Cook on low for 6 - 7 hours. Serves 8

(I suggest you always use fresh meat before freezing...refreezing meat that has once been frozen, is not a good idea) If you want to thicken sauce, mix some cornstarch with water then stir into stew before serving. Serve with biscuits for a filling meal. 

Instead of a sharing a quote, I thought I'd add a couple of jokes for the kids.

Leader Enterprise - March 15. 2017 - Crockpot Recipes






Crock pots are a good way to cook food without having to devote constant attention to a cooking appliance. People use crock pots to cook meals such as pot roasts, chicken dishes, stews, breakfast AND desserts! When your busy day allows you more time for preparation in the morning than in the afternoon, that's a good time to throw together a crockpot meal to enjoy later in the day with no fuss.

As oven temperatures vary, so do crockpot temps, so be sure to check before alloted time is up.

These first two recipes are ones that cook ALL DAY LONG so you can come home at the end of the day with dinner ready for you to enjoy. 
                                  



                                                 
CROCKPOT ROOT BEER BBQ HOAGIES 

3.4 - 4.5 lb. pork loin
2 liter bottle root beer
1 (18 ozs) bottle BBQ sauce
12 - 15 hoagie buns, split
Additional BBQ sauce and Ranch dressing, optional

Place pork loin in your crock pot. Pour enough root beer over loin to cover it (save the rest to enjoy as a tasty drink!) Cover and cook on low for 8-9 hours, when pork is very tender, it is done. Remove loin from your crock pot (discard root beer) and shred with two forks or mixer. Stir in 18 ozs. bottle of BBQ sauce until all pork is well coated. Serve on hoagie buns with additional BBQ sauce and ranch dressing, if desired.

PERFECT CROCK POT BEEF ROAST

2 - 3 lb. beef roast
5 - 6 potatoes, peeled and sliced into wedges
1 bag of baby carrots
2 medium onions, sliced in half
1 envelope dry Ranch dressing mix
1 envelope brown gravy mix
(or use 2 envelopes brown gravy mix)
2 c. water, divided

Spray crock pot with non stick cooking spray. Place roast in crock pot. Place potatoes, onions and carrots around the roast. Mix together dry Ranch mix with 1 cup of cold water. Pour over your roast and veggies. Cover and cook on low for 8-10 hours (total). An hour before serving, combine brown gravy mix with 1 cup cold water, stirring until blended. Pour over roast and veggies. Cover again for the last hour of cooking. Serve with biscuits for a perfect meal. 

CROCKPOT CABBAGE CASSEROLE 
1/2 head cabbage, chopped
1 lb. ground beef, browned and drained
1 med. onion, chopped
1 (18 ozs) jar spaghetti sauce 
(I substitute part salsa for sauce)
1 c. water
salt, pepper, herbs, garlic powder, etc. to taste

In 4 - 5 qt. slow cooker, place 1/2 the chopped cabbage.  Top with half the onions, half the beef and half the spaghetti sauce. Repeat, adding seasonings as you prefer (or you may add them after). Pour water around the sides into the slow cooker.  Cover and place on low for 5 - 6 hours or on high for 3 - 4 hours. Serve over rice if desired, or just as it is. 


My family enjoyed this luscious dish for brunch during the holidays last year. MMM! 

CROCK POT CINNAMON ROLL CASSEROLE

2 - 12 oz tubes of cinnamon rolls, cut into quarters-divided
4 eggs
1/2 c. whipping cream
3 Tb. (pure) maple syrup
2 tsp. vanilla
1 tsp. cinnamon
1/4 tsp. nutmeg

Spray crockpot with cooking spray. Place a layer of cut cinnamon roll pieces to cover the bottom of your slow cooker completely. (Reserve icing packets). Beat eggs, cream, maple syrup, vanilla and spices until blended well. Pour evenly over the rolls in the slow cooker. Place remaining roll pieces on top and spoon one packet of icing evenly over rolls. Cover and cook on low for 2-1/2 to 3 hours or until sides are golden and rolls are set. Drizzle remaining icing over top and serve warm.

Instant Pot Spaghetti & Meatballs (Ready in Minutes)

I LOVE cooking in my countertop pressure cooker. Dinner can be ready in less than an hour...even using frozen meat!  I am in awe! No more splatters and mess on top of my stove browning meat...and the liner of my crockpot cleans easily. 

After seeing this recipe at a Facebook Pressure Cooker recipe swap that my sis-in-love added me to, I knew I had to make my hubby's favorite meal in it.....SPAGHETTI & MEATBALLS.  

Was thrilled to already have everything on hand...using canned sauce and frozen meatballs makes this a breeze. I used Dreamfields thin spaghetti too for lower carbs. 




PRESSURE COOKER SPAGHETTI & MEATBALLS

1 Tb. oil
1 small onion, diced
2 garlic cloves, minced
2 - 1# jars of spaghetti sauce
1 (12 ozs) bag frozen meatballs
2 Tb. brown sugar (or more to taste)
few dashes of garlic powder
1# box thin spaghetti

Pour oil into crockpot.  Add onions and garlic to taste. Saute on crockpot setting for about 5 minutes. Add both jars spaghetti sauce along with 1 jar of water; add frozen meatballs; cook for 5 minutes (I just used the timer for 'regular' setting); allow to naturally release pressure.  Remove lid; add brown sugar & garlic powder. Break spaghetti into 1/3's; add to sauce; stir well so spaghetti doesn't clump. Cover (don't forget to turn back your pressure valve so it's closed) Cook for 6 minutes; allow to naturally release pressure. 

Stir well; serve with salad and rolls and you're all set.

Crockpot Round Steak and Vegetables

This simple crockpot dish is AMMMMMazing!

I threw it all in the crockpot, turned on the switch and went about my day. 
Baked some rolls before we were ready to eat, and enjoyed a
delectable meal with very little fuss. 

The meat was fork-tender....I love it when it melts in your mouth and you don't have to chew forever!

I adore simple crockpot recipes like this.  Saw this one at Recipes that Crock and decided to make it a one-dish meal by adding the veggies.  The house smelled so good while it cooked...and I could hardly wait for dinnertime. 

I also added 1 TB. A-1 Sauce, since hubby loves it so much. It made
for a richer gravy too. 

I had the herb and garlic soup mix on hand and needed to use it, but the
onion soup would be really good too. 


CROCKPOT ROUND STEAK AND VEGETABLES 

5 medium pieces round steak 
3 or 4 medium potatoes, chunked
about 1 cup of 2" carrot pieces
(larger sized mini carrots work fine)
1 oz pkg dry herb and garlic soup 
(or onion soup)
1/4 c. water
1 - 10.75 ozs. can cream of mushroom soup
(I used a can of mushroom/chicken mixed)
1 Tb. A-1 Sauce, optional

Place meat in slow cooker; top with veggies. 
In medium bowl, combine dry soup mix, water, canned soup and A-1; mix well; pour over vegetables. Cover and cook on low for 6-8 hours.
