Peachy Baked Oatmeal


I have been a lover of oatmeal for many years.  I especially love it baked...
it's great to have handy to re-heat a few mornings without making a mess. 


I love that it uses canned peaches too, so....

I decided to make this simple recipe when I saw it shared at 
Gooseberry Patch online. 

But I did add 2 c. milk to the recipe. 

As I sat in my chair enjoying it, I recalled another Peach/Oatmeal
dish I have on the blog...it has added Greek yogurt for a protein boost. 

I cut back the sugar amount and diced the peaches, instead of leaving them in slices...it was delicious! COMFORTING! 

I enjoyed it warm, with warmed milk.  MMMM! 

It's quick, easy and mixed in one bowl!

PEACHY BAKED OATMEAL 

2 eggs, beaten
2 c. milk 
(almond milk works good too) 
1/3 c. brown sugar
(or use 1/4 c. honey) 
1-1/2 tsp. baking powder 
1/4 tsp. salt
1-1/2 tsp. cinnamon 
1/2 tsp. nutmeg
(I added a little more) 
1-1/2 tsp. vanilla extract
3 c. old fashioned oats, uncooked
1/3 c. oil
1 can (16 ozs.) sliced peaches, partially drained, diced
Serve with warmed milk

Spray 8" X 8" baking dish with non-stick cooking spray; set aside. 
Preheat oven to 375*. 

In a large bowl, combine eggs, milk, brown sugar (or honey), baking powder, salt, spices and vanilla; beat well.  (I mixed it all by hand - no need for a mixer) 
Add remaining ingredients (except warmed milk); mix until thoroughly blended.  Pour into prepared dish. 

Bake 20-25 minutes until the center is set.  Serve in bowls with warmed milk. 

Yield: Serves 6 - 7

Simple Hamburger Steaks (Ready in less than 30 minutes)


Oh these are 'comfort food' delicious!  Especially served with smashed taters! 

Mix some spices into the burger, fry up the patties, fry up some sliced onions,
simmer...ENJOY!! 


Simply scrumptious and flavorful...and frugal too.  

No doubt, we all grew up on burgers...and I love being able to 'dress them up' a bit...this is a pretty easy recipe. 

Make sure you brown the patties well...it's the dark pieces that stick to the pan that add much flavor.  This makes a fabulous gravy! 

Do try them soon..you may want to add them to your weekly rotation!!


SIMPLE HAMBURGER STEAKS 

1 & 1/2 lb. ground beef
3/4 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. salt
1/4 tsp. black pepper (or more)
1 tsp. dry ground mustard
(or 1 Tb. prepared mustard) 
1 small onion, sliced thin
1 c. beef broth 
(or 1 can french onion condensed soup, undiluted)
1 (.75 ozs.) packet brown gravy mix
1/2 c. water
1 Tb. worcestershire sauce 

In a large bowl, add ground beef; sprinkle with garlic powder, onion powder, salt, pepper and mustard; blend well, but don't overmix (that makes for a tough burger). Divide mixture into 4 patties. 

Heat skillet over medium-high heat. (Cast iron works great here). When the pan is hot, add steaks and allow them to cook without flipping for about 4 minutes.  Flip then cook for 4 more minutes. Remove steaks from pan and rest on paper towels. 

Remove all but 2 Tb. grease from the skillet; place back on burner and add sliced onions.  Cook until translucent, about 4 minutes.  

In small bowl, combine broth, gravy mix and water; whisk well.  Pour over onions; bring to a boil, then reduce to a simmer; add worcestershire sauce.  Add patties to the gravy and simmer until done, just a few more minutes. 

Serve with mashed potatoes or rice and a veggie for a perfect meal!

Chicken Pot Pie Soup (With Seasoned Pie Crust "Toppers")

This is a wonderfully tasty recipe that got lost in all my recipes.

And that's a real shame, because it is MIGHTY tasty! 

It's like chicken pot pie with toppers made from pie crust.  Brilliant! 
I've seen lots of recipes for this soup, but loved the idea of seasoning the pie crust 'toppers'...AND cutting them into bite-sized shapes!

Oftentimes when hubby and I eat out, we order Chicken Pot Pie...
it's truly Comfort Food to us...This is a soup version of that!!

And of course, it's great using (leftover) turkey as well. 


So tickled I saw this at my friend's blog, appropriately named for herself...
Joelle. She's actually a blogging friend I have met face to face as she just lives about 3 hours from me. 

HOW FUN IS THAT??? 

She cooks REAL food for her family and my goodness - they do eat dandy meals!

This can be ready to eat in about 30 minutes, so do give it a try soon. 
It'll warm your innards and remind you of your mom...or your grandma...
its true homecooked taste will bring you back for seconds...and
maybe thirds!  It's great for busy weeknights or to savor on weekends. 

I dressed it up some by sauteing some onions and celery, but if you're in a hurry you could skip that step. 

Love the thickening...with sour cream added to half and half and corn starch. 
Gives it a great flavor boost, richness and creaminess. 

Joelle used 2 cans of chicken soup, I only used one. Make it according to your family's taste preferences...


            CHICKEN POT PIE SOUP 

           2 - 3 c. cooked chicken, diced ** (See tip below)
      2 Tb. butter
    2 stalks celery, diced
    1/2 c. onion, chopped
    (or use 2 Tb. dried minced onions, but don't saute them)
    2 potatoes, diced
    2 (15 ozs.) can chicken broth
    1 (10.75 ozs.) can cream of chicken soup 
    1 (16 ozs.) bag frozen mixed vegetables
salt & pepper, to taste 
(I like adding a Tb. dry chicken base when I have it. I don't add salt when I use the base) 

    Toppers:
    1 refrigerated pie crust
    seasonings of your choice 
    (You could use fresh ground black pepper, garlic powder, poultry seasoning, seasoned salt and/or thyme) 
   (Whatever you choose to season with, mix it all together in a bowl to sprinkle over toppers) 

    Roux: 
    (or Thickening)

    1/2 c. half and half
    1/4 c. corn starch
    2 heaping Tb. sour cream 

       Preheat oven to 400.  Roll out pie crust and season with          spices,  cut into small shapes, then place on a baking sheet.  Bake 8 - 10 minutes until brown. Remove to rack to cool. 
(If you're in a rush for time, just bake the pie crust whole and then cut/break into pieces to top off soup)...whatever turns your crank. 

Begin soup while toppers are baking - heat butter in a Dutch oven over medium heat. Add the celery, onions and potatoes; cook and stir for 5-6 minutes or until onion is tender. Add chicken stock; simmer for several minutes until vegetables are tender. Whisk in the cream of chicken soup; heat. 

In small bowl, combine roux; whisk into soup blending until smooth. Heat until thickened. (It will be creamy too!)

Spoon into bowls and add toppers when ready to serve. 

**TIP: I suggest NOT using canned chicken for this recipe. I believe it's better having chunks of chicken, leftover or rotisserie chicken.

Cape Ann Chowder

I've been making this tasty chowder for over 40 years. 

We lived in Alaska for 8 years when our kids were growing up, so we had plenty of fresh salmon and halibut to enjoy. And we enjoyed them in this chowder many times.  Oh so spoiled!! 

I now use canned salmon to make it, or any leftover fish is good. 

It's simple enough to make. My mouth waters just to think of how good it is. 

Such a great way to use up leftover fish...like tilapia or cod...

And it can be ready in under 30 minutes!


CAPE ANN CHOWDER

2 c. diced potatoes
1/2 c. chopped celery
1/4 c. chopped onion
2 c. boiling water
1 tsp. salt
1/4 tsp. pepper
1 (10.75 ozs) can cream of celery (or mushroom) soup
2 c. cheddar cheese, grated
1 - 2 c. cooked or smoked fish
(salmon, halibut or crab is great)

Combine vegetables, water and seasonings; cover and simmer 10 minutes or until potatoes are tender; don't drain.  Add soup and cheese; stir until melted. Add bite sized pieces or flaked fish; heat.

Simple Crockpot Ravioli

This is a simple recipe...great for when you're going to be gone a while, and want to come home to a warm meal.  Or you just need an easy supper on a busy day. Or you don't want to turn on the oven and heat up the kitchen.

CHA-CHING! 

I used a jar of purchased pasta sauce...'doctored' it up a little, then
poured over frozen ravioli and turned on the switch, then went about my
business while the crockpot did the work for me. It almost made me giddy to look at it as it cooked!


I saw this great recipe at my dear friend Brandie's
The Country Cook.  She made the sauce from scratch, so 
if that's what you prefer, then check out Brandie's yummy recipe. 

I cut Brandie's recipe in half (use half the amount of ravioli, but the same amount of sauce) and it made several meals for the 2 of us.  It was great every time I rewarmed it too. 

Feel free to double this recipe for larger families.  Just be sure to use a larger crockpot...at least 5-qt. 

I cut hot dog buns in half, then in half again...brushed with butter and then sprinkled on some garlic powder and baked a few minutes until crispy.  Was perfect along with the comforting ravioli.  




CROCKPOT RAVIOLI 

1 - 28 ozs. bags frozen ravioli (beef or cheese) 
1 - 32 ozs. jar prepared pasta sauce
(I rinsed the jar with about 1/4 c. water and added that to the sauce) 
dried minced onions, minced garlic and Italian seasoning, to taste 
salt & pepper to taste
1-1/2 - 2 c. shredded mozzarella cheese

Place pasta sauce in large bowl; add seasonings to taste, then stir in the frozen ravioli.  Make sure it's coated well, then add to the slow cooker, sprayed with non-stick coating. 

Cover and cook for 2-1/2 - 3 hours on high or 4 - 5 hours on low. 
You don't have to stir the ravioli while it cooks. About 10 minutes before you're ready to serve, sprinkle the mozzarella over the ravioli and allow it to melt...

MMMMMM - such awesome hearty & creamy goodness! 

Serve with a salad or veggie and garlic sticks.
