3 Tasty 'Healthier Choice' Oatmeal Dishes {Blast from the Past}

I really should buy stock in Quaker Oats!  I LOVE eating and using oatmeal in recipes.  It's good for you, so I thought I'd share some of my favorite ways to enjoy it....

This cake is OAT-rageously wonderful!  It can be enjoyed for breakfast, lunch, dinner or snacktime! Soak the oats overnight and the recipe has no refined sugar or flour.  I'm wild about having dessert for breakfast! 


(dairy, egg, gluten and sugar free options)




This has been a very popular recipe adding oatmeal for fiber.  You can't even tell it's there, but it's good for you, and it's filling. Substitute peanut butter for nutella if you so desire. It's all wonderful!

Peanut Butter Cookies in a Wink (4 Basic Ingredients - Flourless)

I've been asked to participate in our local farmer's market, every Friday, so I've been thinking of what I could bake that would be desired.

Love this simple 4-basic ingredient cookie recipe that has no flour. 
I've made ones before with 3 ingredients, but this recipe calls for baking soda also. I have to say I like these the best of the two. 

They baked puffy, and then sunk, just so you know.

They're quick to mix, and quick to bake, so the oven doesn't have to be on for long.  Enjoy!!!



PEANUT BUTTER COOKIES IN A WINK 

1 c. creamy peanut butter (I used crunchy)
1 c. white (or brown) sugar
1 egg, beaten
1 tsp. baking soda

Preheat oven to 325. 

In medium bowl, combine all ingredients (I used a wooden spoon) until well blended.  Allow dough to set 10 minutes (it will make it easier to handle).  Roll into 1" balls; place on ungreased baking sheet.  

Bake 8 - 9 minutes; remove from oven; cool on cookie sheet about 3 minutes until set; remove to wire rack to cool.  They will look a tad underdone when you want to remove them from oven. 

Yield: about 2 dozen

Healthy Oatmeal Raisin Breakfast Cookies (No refined sugar/flour)

These cookies are a wonderful and healthy way to start your day.
I'm such a Cookie Monster - the idea of enjoying cookies for breakfast sends me running to the kitchen in the morning!!! 

But mind you...if you're not use to 'healthy' eating, let me tell you these are not like a 'regular' cookie.  They are thick, soft, delicious, but a little 'rubbery'...as oftentimes these healthy cookies are.  Just so you're aware.

They are mighty tasty too.  I did just as Stacy suggested....I enjoyed them dipped in yogurt...What a lovely combo!

Not only are these 'handfuls', tasty and filling - I LOVE a recipe that I can stir  by hand and not have to drag out the mixer!


HEALTHY OATMEAL RAISIN BREAKFAST COOKIES 

3/4 c. rolled oats 

                                             3/4 heaping c. oat flour

2 tsp. baking powder

                                             3/4 - 1 tsp. cinnamon

1/2 tsp. nutmeg

(I use less of freshly grated)

                                           1 tsp. vanilla extract

                                                      1 egg

                                     4 - 5 Tb. honey (or agave nectar)

1/4 c. plain Greek yogurt

1/4 c. chopped nuts

                                     1/4 c. raisins or dried cranberries 

Preheat oven to 375. Line cookie sheet with parchment paper or non-stick foil                                        (or spray foil lined pan)

In medium bowl, combine dry ingredients - oats, oat flour (I placed a scant cup of oats in the blender and blended until powdery - measure to be sure you have 3/4 cup), baking powder, cinnamon and nutmeg.  Then add vanilla, egg, honey and yogurt. Stir until well blended.  Add in nuts and raisins. 

Spread cookie dough into 4 or 5 large cookies onto prepared pan. Shape with spoon and pat down a bit.  Bake 6 - 10 minutes or until done. 

Yield: 4 or 5 very large cookies

Healthy Peanut Butter Cookies (no refined sugar or white flour)

If you don't know it yet...I am a definite Cookie Monster! 

And sometimes I have to satisfy the cookie sweet tooth in my diabetic hubby too. This recipe was the perfect 'fit'. He really enjoyed these little gems. 

These great little cookies use crushed graham crackers for the 'flour'. They were easy to make and are on the 'healthier' side of sweets. 

This is another 'home run' recipe found at Diabetic Connect. I hope those of you who have to watch your sugar intake will enjoy these also. 

I made a double batch and ended up with 9 good sized cookies. 
I used 1 whole egg in the recipe instead of 2 egg yolks. 





HEALTHY PEANUT BUTTER COOKIES 

2 full graham cracker sheets
2 Tb. peanut butter
1 packet sweetener (stevia, truvia, splenda)
1 Tb. water
1 egg yolk
1 tsp. milk
1/2 tsp. baking powder

Preheat oven to 350*. 

Crush graham crackers and blend with peanut butter in medium bowl.  Dissolve sweetener in 1 Tb. water. Add baking powder. Mix well.

Add egg yolk and mix until smooth.  Add to graham and peanut butter mixture. Stir in milk; form balls. Place on cookie sheet sprayed with non stick cooking spray. Press flat with a wet fork and bake for 10 minutes. 


Yield: 6 (smaller sized) cookies
