Leader Enterprise - July 2, 2014 - Chores/Kid-Friendly Dishes

After reading this great article about getting your kids to help with chores, I wanted to share these practical thoughts and ideas from WebMD (www.webmd.com/parenting) Trust these things will help you all to have a more enjoyable summer while the kids are home.

I have always believed we're robbing our children of important life skills if we don't teach them to successfully do chores at home. They want privileges? Then teach them responsibilities go along with that. While it's true that sometimes, it's just easier to do it yourself, take time to teach because your children need to learn those skills that are important to a successful future.

"They’re learning that life requires work,"says James Sears,MD, co-author of Father’s First Steps: 25 Things Every Dad Should Know. For kids, chores are more than helping out; they are lessons in basic life skills. By loading the dishwasher, mowing the grass, or doing their laundry, "kids learn how the world works."

Make Chores Predictable: To take the sting out of chores, set aside a time each week when the whole family does chores, Saturday morning from 8 to 9 for example. Then you don’t get into battles about when chores get done. Having the whole family do chores at the same time also helps. Your kid knows that every Saturday morning, this is what the family does.

Assign Chores By Age: Tasks that are clearly over your child’s head will make chore time dreadful for everyone.T he following suggestions can get you started on assigning age-appropriate chores. Then it’s your turn to get creative.

4 or 5 years old: Sort socks, put away toys, help set table, stack magazines, gather trash.

6 or 7 years old: Take dog for a walk, empty the dishwasher, prepare lunch, make bed.

8 or 9 years old: Set table, load dishwasher, clean bathroom sink, feed, brush and bathe the pet.
10 or 11 years old: Put away groceries, run the dishwasher, fold laundry.
12 or 13 years old: Do laundry and put away, change sheets, mow the yard, fix simple meals, clean bathrooms.
Once chores are done, maybe the kids could have fun making some good snacks. Here's some simple ideas to get them started. Kids will always be more willing to eat something they've helped create themselves.

YOGURT PUDDING POPS

2 c. (1%) milk
1 sm. pkg. (4 serv. size) instant pudding mix
(vanilla, banana or lemon)
1 c. (plain or vanilla) Greek yogurt

Whisk together the milk and pudding mix. Chill about 15 minutes.
Fold in Greek yogurt. Pour into molds. Freeze at least 8 hours.
If you don't have molds, just pour into paper cups. Freeze half an hour, then insert a popsicle stick, or even part of a plastic straw, for a handle. (Place into a small cup of warm water to loosen, if necessary).

RASPBERRY SWEETIES
Just wash and dry your berries and put little chocolate chips upside down in them. The kids will be so proud they made this sweet treat for you.

 STRAWBERRY KOOL-AID PIE

1 pkg. Kool-aid (unsweetened-any flavor)
1- 14 ozs. can sweetened condensed milk
1- 8 ozs. tub of frozen whipped topping, thawed
1- 9" pre-made graham cracker crust
whipped cream and/or strawberries for garnish, optional

Place the kool-aid, sweetened condensed milk, and whipped topping in a large bowl. Mix and stir (a whisk works great) until it's well blended. Pour creamy filling into graham cracker crust. Refrigerate 2- 3 hours until set. Garnish with toppings and serve.

I have a creative friend who made this dish with a bottle of BBQ sauce instead of pizza sauce. Use your family's favorite. Try substituting cooked chicken for the pepperoni.

PEPPERONI PIZZA PUFF

4 cans (7.5 ozs each) buttermilk biscuits, cut into 1/6's
1- 5 ozs. bag pepperoni slices
1- 15 ozs. pizza sauce
1- 8 ozs. pkg.shredded mozzarella

Preheat oven to 350. Mix everything together and place in a greased 9"X13" baking dish. Bake uncovered for 25-30 minutes until hot and bubbly.

Enjoy a wonderful July 4th weekend. God bless America! (And isn't it about time America blesses God?)

Healthy Tropical Fruit Smoothies

Always happy to try another smoothie recipe.  I love that they can be whipped up in no time, consumed on the go, and it's a healthy way to begin, or end, the day!

Thanks to Jessica at Oregon Transplant for sharing this with us at a recent Weekend Potluck.  I added a little flax seed meal and some grated carrot also.

HEALTHY TROPICAL FRUIT SMOOTHIES

1 cup pineapple, chunked (crushed would work too)
1 orange, peeled in sections
2 frozen sliced bananas
1 c. orange juice
1 (8 oz) pineapple (or tropical) Greek yogurt
1 Tb.  coconut oil
2 tsp. flax seed meal, optional
(It helps you stay full longer)
about 1/3 c. grated carrot, optional

Yield: 2 servings

Combine all ingredients in a blender. Blend until smooth, about a minute. If you want a thinner consistency, you can add more orange juice, milk or water. Pour into 2 glasses, serve immediately.

A "Trick" for Preserving Fresh Cut Flowers

I read this info again this morning at another site.  I had tried this 'trick' and found it worked great, but I'd never had a separate blog post about it, so here you go....

This recipe & info for preserving fresh cut flowers, found at www.thekitchn.com has proven to be amazing. I was impressed at how long the peonies kept on my countertop! Try these tips for keeping your flowers looking fresher longer.

• Make homemade plant food: Flowers need food, water, and a clean environment. So their water should have a little food, like sugar, and some bleach to slow fungi and bacteria growth. Here's a basic home recipe: Mix together 2 c.water, 1 Tb. lemon juice, 1-1/2 tsp. sugar and 1/4 teaspoon bleach.
• Trim stems: You want to open the stems up to the water, so cut off the dried bottoms at an angle to let them take up as much water as possible. Trim the ends every three or four days to keep them fresh longer.
• Remove leaves: Leaves left on the stems below the water level will quickly deteriorate and promote mold. Remove all leaves from the stems below the waterline.

Skinny BBQ Chicken (& Pineapple) Tortilla Pizza (WW Points)

I was so happy I saw this recipe...the day after I had cooked some chicken in the crockpot with BBQ sauce!  This was a perfect way to eat up some of that chicken.

If you're not counting Weight Watchers points, of course you could use more of everything.  I added crushed pineapple I had leftover in the fridge, so that is not included in the WW points Nancy shares at Skinny Kitchen. If you've never been to her blog, I invite you to get on over there...she shares awesome and delicious 'skinny' recipes...I make a lot of what she shares there.

The balsamic vinegar really adds the perfect touch...

This is a super recipe for summer because the oven doesn't have to be on for long at all....

I was excited to try this tip I've seen around the net...it worked GREAT for this recipe!

Place your grape/cherry tomatoes between two plastic lids...cut them all at once with a serrated knife.  Voila!!!

901 calories, 33g fat, 120mg chol, 48g prot, 105g carb, 3g fiber, 1,922mg sod, 24g sugar

SKINNY BBQ CHICKEN (& PINEAPPLE) TORTILLA PIZZA

2 whole grain or whole wheat flour tortillas
(I used low carb)
1 c. onions, thinly sliced
(I used less)
2/3 c. chicken, cooked and diced
1/4 c. barbecue sauce
1 tsp. balsamic vinegar
1/4 c. crushed pineapple, optional
1/2 c. cherry or grape tomatoes, sliced
6 Tb. light mozzarella cheese
(I used a little extra)
1 Tb. Parmesan cheese

Place tortillas under broiler for about 1-2 minutes to toast (I sprayed with canola oil to crisp them up more), turn over and broil 1 more minute to toast other sides. Keep an eye on them so they don’t burn. Remove from oven and set aside.

Place sliced onions on a microwave safe plate and cook in microwave for 2 minutes to soften. Add chicken to a small bowl. Toss with 3 Tb. barbecue sauce, balsamic vinegar and pineapple.

To Assemble: Spread each tortilla with 1/2 Tb. barbecue sauce. Use the back of a spoon to spread. Top each with 1/2 of chicken/barbecue sauce mixture and spread around.

Place 1/2 of the onions all over the top of each pizza. Sprinkle each with 1/4 cup tomatoes.

Lastly...Top each with 3 Tb. light mozzarella cheese and 1/2 Tb. parmesan cheese.
Place on a baking sheet and broil for about 1-2 minutes until cheese is melted and tortilla is browned. Be careful to not let them burn.

Remove from oven. Cut with pizza cutter; serve.
Yield: 2 tortilla pizzas

(this recipe can easily doubled or tripled )

American Flag Cupcakes (Add buttermilk to cake mix!)

What an easy treat to enjoy some foodie fun! I have always loved
doing something special for July 4th or any other patriotic holiday.

My hubby is retired after 20 years of military service...our home is decorated in red, white & blue...we have the tallest flagpole in town in our yard...
well, you get the picture.

Simply...WE ARE PROUD TO BE AMERICANS!

And we are grateful to all those who have served & sacrificed.

Did you know if you substitute milk instead of water in a cake mix, and add 4 eggs instead of 3, you can have a cake that turns out like a bakery cake?

It's true - I love that!  And I loved it when I saw that Kaylee at
Couponing & Cooking used buttermilk instead of milk. So glad she linked up at our Weekend Potluck just last week!

What a great idea!

The cupcakes have a great texture - I used a whipped cream cheese frosting I had on hand (yes, store purchased...I love shortcuts..=). Feel free to make your own favorite.

Two of my granddaughters were here doing some cleaning for me to earn some $$ - I baked while they cleaned, then they were great at getting them decorated!

left - Chloe Lyn    right - Charlie May

AMERICAN FLAG CUPCAKES

1 (16 - 18 ozs) boxed yellow cake mix
1 c. buttermilk (or milk)
1/3 c. oil
4 eggs

Preheat oven to 350. Line muffin tins (about 2 dozen) with papers.

In large bowl, combine all ingredients, beating about 2 minutes until smooth.
Fill papers about 2/3 full - bake about 15 minutes until done.  Insert toothpick to be assured they're done or just touch the tops; they should spring back.

Cool to room temperature; frost with favorite frosting.

1 pkg. Twizzlers Pull n Peels licorice candy

blue gel in a tube (or frosting tinted blue)

Cut licorice in pieces about 1-1/2" long...for longer stripes. Cut those in half for shorter stripes....then 'peel'..

Starting at the bottom of the cupcake lay three of the longer "stripes". Then place three smaller "stripes" on the upper right hand corner above the longer stripes.

Add gel (can use blue tinted frosting and a toothpick) dots for stars.

Now...SALUTE!!! & ENJOY!!

Hope you all enjoy a wonderfully fun and safe 4th!
