Homemade Bisquick Mix (& Recipes to use it)

I've used this simple recipe for years.  Use it just as you would Bisquick. 
It's really great to have this on hand with all the holiday baking looming ahead! 

I made some wonderful Garlic Cheese Biscuits with it.  MMM! It's a wonderful and quick way to have biscuits on the table in no time.  Faster than mixing from scratch. 

Use it for coating chicken or veggies..whatever recipe you use that calls for Bisquick. 

It's family friendly and frugal.  Enjoy soon!

HOMEMADE BISQUICK 

6 c. all purpose flour
1/3 c. baking powder
2 tsp. salt
3 Tb. sugar
1 c. Crisco

In large bowl, combine dry ingredients; add Crisco and blend with pastry blender (or 2 forks) until it's a fine consistency.  Store airtight. 

To make 'regular' biscuits, blend 1 cup mix with 1/3 c. milk, or buttermilk. 
Drop and bake 8 - 10 minutes at 425. 



GARLIC CHEESE BISCUITS

2 c. Homemade Bisquick mix
2/3 c. milk
1/2 c. cheddar cheese
(we like cojack)
2 Tb. butter, melted
1/8 tsp. garlic powder

Preheat oven to 450. In large bowl, combine Bisquick mix, milk and cheese until soft dough forms.  Drop dough into 9 spoonfuls onto an UNgreased cookie sheet. Bake 8 - 10 minutes or until golden brown. Combine butter and garlic powder; brush over tops of biscuits.  Serve warm. 


FLUFFY PANCAKES 

2 c. Bisquick mix
1 c. milk (or buttermilk) 
2 eggs
1/2 tsp. vanilla
add-ins - chocolate chips, blueberries, etc. - optional

In large bowl, combine mix, milk, eggs & vanilla; stir until blended.  (Stir in up to a cup of add-ins if using). Pour just less than 1/4 cupful onto hot greased skillet. Cook until edges are dry and pancakes are bubbly. Turn; cook until done. Serve hot with warm maple syrup.  Yield: about 14 pancakes

Cream Cheesey Corn Bake (Crockpot or Oven Options)

I think most people have their favorite variety of a corn bake...or cornbread pudding, or whatever you may call it. 

The mixture of a jiffy corn muffin mix with corn, eggs, and sour cream.
Such a simple recipe...mix and bake. 

This recipe intrigued me because it has cream cheese instead - 

MY FAVORITE INGREDIENT!!

This recipe was exceptional to me for a couple of reasons.

Not only was it the FIRST recipe I made in my new 9" X 13" crockpot...
I got the recipe from another cookbook author here in the RV park where we are spending the winter.  This is her THIRD cookbook...with very simple recipes, just like I love....some are the same ones I have on my blog, or already in my cookbook.

So I knew I could trust Carol with this change, using cream cheese, and I'm so glad I tried it.  I took it to a park potluck and this is what I came home with...


It is absolutely delicious and moist. 

CREAM CHEESEY CORN BAKE 

4 ozs. cream cheese, room temp
3/4 c. milk
3 eggs
1 pkg. Jiffy cornbread mix
1 (15 ozs) can corn, drained
1 (15 ozs) can creamed corn
1 c. shredded (cheddar) cheese
(I used cojack)

Spray 9" X 13" baking pan with non-stick spray. Preheat oven to 350.
(Or spray 9" X 13" crockpot)

In large bowl, combine cream cheese with milk, then blend in eggs.  Add remaining ingredients. 

If baking in oven, bake about 35 minutes; remove and serve warm. 

If baking in crockpot, turn on high, bake for just about 2 hours. 
(Mine baked just over 2 hours). 

This was a special dish I plan to make again and again.

Fruited Raisin Oatmeal Mix (Gift Giving Idea)

I keep thinking of recipes I've had in my file for the last year, and am shocked when I haven't thought of it before. I've been making this recipe for quite a few years. 

I bagged this up and gave as gifts to our 'seniors', the JOY class 
(Just Older Youth) Sunday School class that my husband teaches.  That way, the recipients can enjoy them when they want.

They are just delicious with dried apples and/or banana chips and/or raisins. 

I also used xylitol for the white sugar to lower the sugar content... you can reduce the salt too (or reduced sodium salt) for those who need to watch that. 

Consider giving these as a gift to the newspaper or mail delivery person.  It's always a good, healthy 'warm up' after a cold day outside.  Keep it on hand for yourself!  We eat a lot of oatmeal during the cold months, even in the evenings.

How I love practical gift-giving ideas like this.  



FRUITED RAISIN OATMEAL MIX 

6 c. quick cooking oatmeal
1/2 c. raisins
1/2 c. chopped dried apples or dried banana chips
(use any flavor combo of dried fruit - I have used apricots also)
1/4 c. sugar (or substitute)
1/4 c. packed brown sugar (or Splenda brown sugar)
3 tsp. ground cinnamon
1 tsp. salt

In large bowl, combine all ingredients.  For gift giving, divide mix into two batches; store in airtight containers in a cool dry place for up to 1 month. 
 Yield: 7 cups of mix. 

Directions for one serving: In large microwave -safe bowl, combine 1/2 c. oat mixture, and 3/4 c. water.  Microwave, uncovered, on high for 45 seconds; stir.  Cook 20 - 50 seconds longer or until bubbly.  Let stand for 1 - 2 minutes before eating.

Pumpkin Bread Dip

This is the kind of  recipe I like to call..."F-U-N"! 
It's sort of a surprise...a really good one!  

Thanks to Jennifer at Mother Thyme for the inspiration for this 'revised edition'
of her recipe, which was a Banana Bread Dip

If you have followed my blog very long, you know I am a huge lover of cream cheese! Add anything to it and I must try it. 

Since I was helping furnish refreshments for a ladies Bible study, I wanted something that would better express 'FALL', so....

Instead of using a banana quick bread mix, I used a pumpkin bread mix.  I had to go to a couple of stores before I found one, but I had a spring in my step once I had that box in my hand!

I 'doctored' it up just a tad, and was very pleased with the tasty results.
It brought a lot of compliments to our refreshments that day.  

Have you seen these 'cutsie' seasonal-colored vanilla wafers?  I was delighted to find them and they brought a lot of conversation to this dish too. 

Very simple to make, so get your recipe and head to the kitchen.
This would make an awesome after school...or any time...snack. 
For today even!!


PUMPKIN BREAD DIP  

1 (8 ozs) pkg. cream cheese, regular or light, softened
1/4 c. butter, softened 
1 c. pumpkin quick bread mix 
(I made a double batch and still had about 1/2 c. left)
2 - 3 Tb. pumpkin puree
1/2 tsp. (+) pumpkin pie spice...to your liking. 
1 tsp. vanilla extract
2 Tb. milk 
(add a little more milk at a time to get the right consistency)
1 Tb. finely chopped (toasted) pecans, optional

In large bowl, with electric mixer, combine cream cheese and butter until smooth.  Stir in bread mix, pumpkin puree, pumpkin pie spice, vanilla and milk.  Beat until well blended. Stir in the nuts or sprinkle over the top. (I figure if you're serving it to a crowd, it's easier to pick them off the top than to dig them out of the middle=)  Cover; refrigerate at least 2 hours before serving. 

Serve with animal or (chocolate) graham crackers, vanilla wafers, or apple slices.  You could also spread it on your morning toast.  MMM good! 

Try different bread mixes too..I thought about trying cranberry/apple as well. 
Maybe you could toss in some brickle chips?? or some finely chopped apples?just have F-U-N with this recipe!

Best Ever Vanilla (or Spiced) Chai Mix


IT'S STORY TIME....if you have time...

I want to share a couple of stories along with this post. 
             If you're short on time today, just jump down for the recipe....
I am WILD about chai tea!  My daughter first introduced it to me when we lived across the country from each other!  

She had sent me an email one day saying she enjoyed a cup of spiced chai that day.  Soo...a few days later when I went away with a group of ladies for a convention, and we went to lunch...and chai tea was on the menu, 
I JUST HAD TO TRY IT!

(Chai is a creamy, sweet, sometimes spicy Indian tea.) 

I will never forget how we all passed it around at the table...smelling it...everyone tasting it with their spoon...and all the oohs and aahhs...comments like...
"WOW"!..."This smells like Christmas"..."MMMM good!".  

I have shared my love of it with others, who have become 'hooked' also...and told others, who told others...and so the story goes. 


And so....another story to go along with that one...

I have to tell you how I've always felt about people like Christy Jordan of 
Southern Plate .

I just figure that 'famous' folks like her don't need little ole me to follow them...I keep busy enough trying to keep up with all the blogs that I love....folks I can connect to via email and comments, and feel like these are mostly gals who 'live the kind of life I live'...not famous and all. 

I truly love & adore Paula Deen - I've even been honored to see her (on stage) in person and laughed til I thought my face would crack!  I don't cook like her (or atleast not like she USE to before becoming diabetic), but more like her son, who has the show "Not My Mama's Cookin"....healthier dishes. 

But I ADORE her life's story, her humility, her humor..everything!
So, truthfully...I have avoided anything of Christy Jordan's...just cause.

Don't judge me.  

BUT...that all changed when I saw her in an Operation Christmas Child video.  I head up that awesome ministry at our church, and so I got REAL interested when I saw that someone like Christy, cared about packing shoeboxes for poverty-stricken children. 

So when I decided I would go and check out her blog, I went NUTSO to see this wonderful recipe there, and made it within days of printing it. 

CHAI!  THE BEST EVER!? VANILLA CHAI!

She grabbed me by the neck..by the heart...and the taste buds too, and I am SO happy I made this wonderful mix.  I will be giving it as gifts for Christmas. 

IT.IS.FABULOUS!!! 

Christy even got her mama hooked on this, and those southerners rarely EVER drink tea hot...they are cold tea drinkin' folks! 

So...in looking at other chai recipes, I discovered that the recipe Cristy presents as 'vanilla' chai, really is spiced chai - MY FAVORITE!

The difference is just a couple more added spices, which are at the tail end of the list of ingredients, so you can opt to make 'vanilla' or 'spiced'.

Either way - I can promise you - it'll be the BEST EVER! 

(So since I've become SUCH good 'buds' with Cristy, should I tell her what I've discovered about her recipe?)  Just teasin....I wouldn't mess with a woman of HER status!  After all - a few months ago she had 114 comments on this post! 
I.CAN'T.IMAGINE!!!!

Anyway - enough of the gab....
here's a fabulous recipe that will make any recipient jump for joy!!!!!

You can make this 'very low sugar'(there is a little sugar in the nondairy creamer) and decaffinated also. 

This makes an awesome gift...if you can stand to give it up yourself. 
It's a terrific warm up for when it's frosty and chilly outside...or not. 

You might have to buy 2 or maybe 3 ingredients, but you probably have most of it on hand already. 



BEST EVER VANILLA CHAI MIX 

1 c. nonfat dry milk powder

1 c. powdered nondairy creamer
1 c. (sugar free) french vanilla powdered non dairy creamer
2-1/2 c. xylitol, splenda, ideal sweetener or sugar
1-1/2 c. unsweetened (decaf) instant tea
2 tsp. ground cinnamon

2 tsp. ground ginger

1 tsp. ground cloves
1 tsp. cardamom 
(no real substitute for this...it's what makes it chai!)
1/4 tsp. white pepper
(you don't really taste the pepper)


(If you want SPICED chai, add the next  ingredients)

1 tsp. nutmeg 
1 tsp. allspice


Place all ingredients into a food processor or large blender.  Blend until it is a fine powder.  Store in airtight container. 



To make chai, add 2 or 3 Tb. mix to 8 ounces of hot water or milk.

(I like using half water/half milk). 


Yield: about 6 cups of mix. 



Put into jars or you could fill small ziploc bags and place inside a coffee mug to give as a hostess gift.

Homemade {Candy Cane} Hot Cocoa Mix


 I was not disappointed when I found this yummy drink mix at Pennies on a Platter. She also has a  Salted Caramel Hot Chocolate Mix  there too.  OH MY! 

I decided I would adapt this recipe a bit and I added some dry powdered creamer.
You could use flavored - peppermint or marshmallow - for a flavor boost,
or none at all.  It's all up to you.

This makes a great gift. You could even put some in a bag and place inside a mug to give as a gift. I love having things like this handy to give as a hostess gift when we go to dinner somewhere. 

I also like the idea of giving the mix along with a box of candy canes to use as 'stirrers'. 

You could even use candy cane kisses instead of the white chocolate chips in this recipe.  I used the swirled white/chocolate chips in mine.  Lots of options here.


HOMEMADE {CANDY CANE} HOT COCOA MIX 

3 c. nonfat dry milk powder
2 c. powdered sugar
1-1/2 c. unsweetened cocoa powder
1 c. powdered coffee creamer, optional
(sugar free...or flavored)
1-1/2 c. white chocolate chips
(or candy cane kisses)
1/4 tsp. salt

Mix all ingredients in a large bowl.  Pour half the mixture into food processor and process until chocolate is finely ground.  Transfer to an airtight container, then repeat with remaining mix. Store in airtight container for up to 3 months. 

To make drink; mix 1/4 - 1/3 c. cocoa mix with 1 c. hot milk.  Enjoy!!

Hot Cinnamon Milk Mix & Gift Giving Ideas and Tags

If you're looking for something quick to give as a gift this Christmas season, read on....

I LOOOOVE giving homemade mixes for Christmas.  I love receiving gifts that express that the giver put some thought and time into personalizing them.

And lest we forget...IT'S FRUGAL!!

It seems we are already eating soooo much from Thanksgiving through the New Year, so I really like giving something the recipient can enjoy in their own timing.

I was tickled to come across this mix via a blog hop...I found it at Craftaholics Anonymous.  You really should go to her site and check out the adorable cloth bow she made to tie around the jars of this fabulous mix too.

It is amazing and intriguing to me to think of how this mix sorta tastes like eggnog...minus the egg. It doesn't even have any rum extract or nutmeg in it??  HHMMMMM....

I was thrilled to be able to make this mix sugar free.  I will be giving it to the older folks in our Sunday School class at church.  (My hubs is the teacher).


I have enjoyed this many evenings, as it has NO caffeine, and I think the warm milk even helps me sleep sounder. 

I went to my Word program and typed up some labels to 'dress up' the gift a little more....


(Since printing this label, I've decided I like this better with only 1/4 c. mix)

I've made up about 20 simple Snowman Soup packets.

Give the cinnamon milk a try...only 4 ingredients and you are ready to enjoy.

HOT CINNAMON MILK MIX

2 c. powdered milk
1 c. powdered french vanilla creamer
(I found sugar free)
1 c. sugar (Use Splenda or xylitol)
1/2 TB. ground cinnamon

In large bowl, combine all ingredients; fill 1 qt. jar or 2 pint jars if desired. 
(I like to run everything through the blender so it dissolves easier) 
Tie with a bow and give as a hostess, or any time, gift.  
(Be sure to keep some for yourself!!! 

To enjoy the mix, warm 1/2 c. water with 1/2 c. milk.
Place 1/4 c. mix in a mug, add the liquid and stir well.
(May dissolve mix in all water, but the milk adds creaminess that is wonderful)
