Leader Enterprise - December 17, 2014 - Quick holiday treats

I wanted to share that I was happy to recently tour the Jiffy Mix plant in Chelsea, Michigan. The hour-long tour is free and you can purchase half cases or full cases of assorted or same mix products,for only 50 cents per box. A lovely cookbook was included in one of the boxes. It wasn't that far away and it was very enjoyable.Take a group of friends for an outing. You'll be so glad you did.

I also enjoyed an awesome time in Charlotte, NC, the first full week of December, at the Operation Christmas Child processing center. It was a joy to serve and the fellowship was so sweet. Nearly 2 million boxes have been processed already and there are still volunteers manning the 10 facilities across the country. I was blessed beyond measure.

I hope you've enjoyed reading the staff's stories about childhood Christmas memories, as much as I have.One of my own favorites is when I was about 5, with a younger brother barely a year's difference in our ages (Actually, brother Alan and I are the same age for six days). We had visited friends on Christmas Eve (as we did often during the year), so when we got home late that evening,I clearly remember my mom walking to the window, looking out and exclaiming that she could see Santa and the reindeer in the sky. My brother and I could not get up the stairs to bed fast enough because we knew if we weren't in bed when Santa came, he would not leave presents.(Oh my clever mama!) I think I did this a time or two with my own children. 

Mini Brownie Treats 

As I browsed my Country Woman Christmas 1998 Cookbook recently, I came across this lovely poem and wanted to share.

CHRISTMAS PAST by Ruth Fiori Poynor

I remember a long-ago Christmas
And the candles that lit up the tree,
Strung with popcorn and cranberry garlands,
It was dressed up so elegantly.

We would gather around the piano,
Singing carols with faces aglow;
Then we would steal away for a moment
With our beaus 'neath the mistletoe. 

In the twilight we'd hitch up the horses
For a sleigh ride on snow-covered ground;
Soon harness bells jingling merrily
filled the air with a holiday sound. 

Christmas Day we would gather together
At the tiny white church on the hill
To honor the birth of the Savior--
In my mind,I envision it still.

Then surrounded by all of our loved ones,
We would open the gifts we received--
Simple presents tied up with bright ribbon..
But worth riches,everybody believed. 

Though my heart may be filled with nostalgia,
Like a child I look forward with glee
To the holiday season that's coming...
And the magic of Christmas-to-be. 

I thought I'd share some fast and easy recipes to consider making if you need something quick to share-maybe with a neighbor? How can you go wrong making recipes with only two ingredients? You're welcome.

CHOCOLATE-PEANUT BUTTER CUP COOKIES 

1(15 ozs)roll refrigerated ready-to-slice peanut butter cookie dough
48 miniature peanut butter cup candies

Preheat oven to 350. Slice cookie dough into 3/4-inch slices. Cut each slice into quarters. Place each quarter into ungreased mini muffin pans. Bake 8-10 minutes. Remove from oven and immediately press an unwrapped peanut butter cup gently and evenly into cookie (right side up). Cool before removing from pan.Refrigerate until firm. Yield: 4 dozen cookies. 

MINI BROWNIE TREATS  
1 pkg.(9" X 13" pan size) fudge brownie mix
48 striped chocolate candy kisses, unwrapped
Preheat oven to 350. Prepare brownie mix according to package directions for fudge-like brownies. Fill paper-lined miniature muffin cups 2/3 full. Bake 18-21 minutes or until a toothpick comes out clean. Cool about 30 seconds, then top each with a chocolate candy kiss. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield: 4 dozen yummy little treats

HOMEMADE KIT KAT BARS

1 bag vanilla cream sugar wafers
12 ozs. chocolate, melted according to directions
(almond bark works nicely too)

Dip each cookie into chocolate until coated completely. I remove them with a fork and bang the fork on the side of the pan to remove any excess chocolate (if there is such a thing! (wink). Set on a wax paper lined cookie sheet and chill until set. May be stored in fridge or at room temp.

(Lowfat) Cappuccino Fluff (Sugar Free)

Need a quick and easy sweet tooth fix?  Here ya go! Stir some instant coffee into milk and then mix with instant pudding mix! Stir in some whipped topping and you're all set to enjoy a sugar free treat.  Couldn't be easier! 

Nutritional info listed below also...


CAPPUCCINO FLUFF

2 c. skim milk
1 Tb. instant coffee granules
1 sm. pkg. (4-serv.) (sugar free) instant vanilla (or choc) pudding mix
2 c. Cool Whip Free
ground cinnamon, to taste, optional

Pour milk and instant coffee into medium bowl; blend until dissolved. Add pudding mix; whisk for 2 minutes until well blended. Fold in Cool Whip. Refrigerate at least 1 hour before serving. When serving, top with a few cinnamon sprinkles. 

Yield: 6 servings

Nutritional info per serving: Calories: 86, Fat: Trace (1.7% calories from fat), Protein: 3 gr., Carbohydrate: 16 gr., Dietary Fiber: Trace, cholesterol: 1 mg

3 Favorite Healthy Oatmeal Breakfast Dishes {Blast from the Past}

YES! YES! Who doesn't love cookies for breakfast?? This tasty cookie has NO refined flour or sugar!

Fresh (Crockpot) Tomato Soup

I am excited to share this recipe with you!

I recently received this cookbook in the mail...for free...because I have a few recipes in it.  Yahooooo!


I also have a few recipes in another one of Dr. Sonali Ruder's cookbooks...
The Greek Yogurt Diet Cookbook, and feel rather giddy about that!

I've been reading through this latest one and one chilly day during Christmas week, I decided I'd use the frozen tomatoes I had on hand, and make this soup.

I like my tomato soup creamy, so I added a dollop of plain Greek yogurt and stirred...it was GREAT. You could also add some cream cheese if you'd prefer...there's just something about it being milky that comforts me.

FRESH CROCKPOT TOMATO SOUP

16 medium, ripe Roma tomatoes
2 medium, sweet yellow onions, chopped
3 med. carrots, peeled and thinly sliced
1 lg. garlic clove, minced
3 Tb. brown sugar
1/4 c. chopped, fresh basil leaves
(I used about a tsp. dried)
1/4 c. chopped, fresh parsley
(used 1 tsp. dried) 
2 Tb. Worcestershire sauce
1 tsp. sea salt
1 tsp. freshly ground black pepper
6 cups chicken stock
(I used 4 because I like a thicker soup)

Carefully drop tomatoes in a big pot of boiling water for 20 seconds.  Immediately transfer to a big bowl or pot of cold water.  Peel and quarter the tomatoes and place in a large ( 6 - 7 qt.) crockpot.  Add onions, carrots, garlic, brown sugar, basil, parsley, Worcestershire, salt pepper and stock.  Cover and cook on low for 6 hrs. (or high for 3 - 4 hours) or until vegetables are very soft.  Puree*, in batches, in a food processor or blender until smooth.

*I used my hand held blender right in the crockpot and it worked great*

Healthy Cookie Dough Pumpkin Baked Oatmeal

HAPPY NEW YEAR!!!

Thanks so very much for your support of this blog over this past year.  I would be so lost without you.
I am elated to share that I gained over 5700 new LIKES at Facebook in 2014!  WOOOHOOO!!  

It's only right I would begin the year sharing an awesome oatmeal recipe. 
I'm wild about oatmeal, and have over 60 recipes at my blog using it. 

I love the recipes I see at Chocolate Covered Katie.  She experiments a lot...just look - this dish bakes at 380*!  Who else does that?  I don't know of anyone. I love that she gives options too. And it's always a healthy recipe...

I enjoyed this by topping (EVERY piece I ate) with almond butter to bump up the protein.  It was heavenly.  

I will definitely make this again.  Such a great recipe to begin the year with...a 'healthier choice'.  And it's really pretty simple to make too. 


HEALTHY COOKIE DOUGH PUMPKIN BAKED OATMEAL 

2 c. rolled oats 
1/2 tsp. salt, scant 
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice OR additional cinnamon
4 packets stevia or 1/3 c. pure maple syrup
1-1/3 c. pureed pumpkin 
1 single serving cup of applesauce, about 1/3 c. 
2/3 c. milk of choice (cut back to 1/3 c. if using maple syrup)
2 Tb. (coconut) oil or or more milk of choice 
1 tsp. pure vanilla extract
optional 1/2 c. chocolate chips, plus more for the top if desired
Grease an 8" x 8" square pan. Set aside. Preheat oven to 380*F. In a large mixing bowl, stir together all dry ingredients, then add all remaining ingredients. Smooth evenly into the prepared pan, sprinkle chips on top if desired, and press down with a spoon. Bake 24 minutes, then let sit in a closed oven 20 minutes with the heat turned off. Top with syrup, or coconut or nut butter. MMMM!

Eggless Eggnog (Sugar Free Option)

(This will be my last NEW recipe post for the year...I will be taking a break over the holidays and will plan to return on Friday, January 2nd, 2015 for our Weekend Potluck party!)

OH.MY.GOODNESS!

This easy recipe says 'HAPPY HOLIDAYS' for sure....it's great for Christmas or New Years. 

I just love so many wonderful holiday recipes floating around in blog world....
And this is definitely a favorite.

I've never been fond of drinking store-purchased eggnog.  It's just too thick, so I've always added more milk.  I use to have a cooked recipe that I would chill and mix with the store-purchased product. 

But after finding this recipe at Mandy's Recipe Box , then trying it, and being impressed! there's no turning back. My family LOVED it too. 

This is wonderful cause it tastes just like eggnog...has no eggs...is no cook, and you can even make it sugar free - which is what I did for my family. 

I have some of this luscious beverage in the fridge now and I'm trying to keep it 'hidden' from hubby so we can have some this coming week! 




EGGLESS EGGNOG (No Cook)

1 sm. box (4-serv. size) instant (sugar free) vanilla pudding mix
4 c. milk
(I suggest you use 2% for fullest flavor, but 1% works too)
4 c. heavy cream
1/3 - 1/2 c. sugar
(I used xylitol)
2 tsp. vanilla extract
2 -  3 tsp. rum extract

Garnish: whipped cream & nutmeg (fresh grated is best) 

In a large bowl (or blender) stir together dry pudding mix and 1 C. milk. 
When mixture beings to thicken, add remaining ingredients... 
(except garnish).
Mix well. Cover and chill for at least 2 - 3 hours. 
Garnish with whipped topping and a sprinkle of nutmeg.
Yield: 1/2 gallon.

3 Simply Delicious Simple Appetizers for the Holidays {Blast from the Past}


Warmed bacon, canned chili, cream cheese, shredded cheese & onions...
Serve with tortilla chips. Then step aside cause you might get run over. 



Only 4 simple ingredients...Sour cream,
cream cheese, rotel tomatoes, ranch dressing.  LOVE!
Fix it and forget it....serve chilled.
