Old Fashioned Slow Cooker Baked Apples

I LOVE baked apples and this was a healthy treat for me while I'm cutting back on sweets. 

Simple, easy and delicious! Let the crockpot do your cookin' for you!

I saw the recipe at Cristy Jordan's Southern Plate.  You just gotta love that woman...so humble, down-to-earth and her love for family is so special. This recipe came from her granny...one passed down for generations, so you know it's gotta be awesome.

I reduced the sugar amount...drizzled with some agave nectar...added less water, skipped the butter and used fresh nutmeg instead of allspice.  There are many options in this recipe to make it your own...to fit your dietary needs or wants!  Add nuts or use raisins instead of cranberries, etc. etc. 

These apples were wonderfully sweet and the house smelled so amazing while they cooked.

I don't use it often, but am so thankful for my apple corer that made it much easier to core these babies. 

The recipe gives amounts for EACH apple, so you can make, or few, as many as will fit in your crockpot. 


OLD FASHIONED SLOW COOKER BAKED APPLES 

4 - 6 apples
1/3 - 1/2 c. apple juice, cider or water

For each apple:

1 Tb. (dark) brown sugar
(I used half xylitol with 1/2 tsp. molasses)
1 Tb. dried craisins or raisins
1/4 tsp. cinnamon and a few shakes of allspice
(or some fresh nutmeg)
1 Tb. butter, optional
agave nectar or honey, to taste

Core each apple (I went all the way through the bottom) and peel a strip from around the top of each one (about 1"). Place in bottom of slow cooker.

In small bowl, combine brown sugar, craisins and spices; stir until combined.

Stuff each apple with filling, all the way to the top, pressing down to make room for more. Place the butter on top. (Drizzle with agave nectar or honey over tops of apples, optional) Pour water or juice into bottom of slow cooker.

Cover and cook on low 4-6 hours or high 2-3 hours, or until tender. 

Serve warm with a scoop of ice cream and maybe some caramel syrup, or just be sure to serve some of the beautiful 'syrup' in the bottom of the crockpot on top of your apple. 

I love mine warm!! MMM!! SO comforting!

Crockpot (Pasta) Pizza

Looking for something simple for dinner this week? 

Here you go...you're welcome.  *-*

Let the crockpot fix dinner for you, and you'll love the ease, and the flavor!

This really isn't like a pizza...it has no crust, but it is a lovely meal and is prepared with little effort. I'm thinking it should be called Pasta Pizza!

I've had this one in my files for almost 30 years.  A friend brought it to our home that long ago and I've made it several times since.  It was high time to share it with you too!

I already had browned burger (see how to do that in the crockpot here) in the freezer, so it made this dish even easier to mix up. 

Cook the rigatoni...cut the pepperoni in half (if desired)..brown the burger if necessary... and mix everything up. 

You could combine everything but the pasta the night before, then mix it together before adding to the crockpot.  Since it only takes a few hours to cook, maybe you (or hubby?) could sneak home over lunchtime and get it going for dinner. *-*

Definitely cheesy, filling, comfort food!

Serve with garlic bread and a veggie. YUUMMMMM!


CROCKPOT PIZZA 

2/3 of 1# box of rigatoni pasta
2 lg. (16 ozs each) pkg. shredded mozzarella cheese, divided
3-4 ozs. pkg. pepperoni
2 (8 ozs. each) pizza sauce
1 - 2 lbs. (lean) ground beef
1 small onion, diced, optional
(I used a couple teaspoons of dried minced onion instead)

Cook the rigatoni; drain. (be careful not to overcook)
Cut pepperoni in half if desired, or leave whole.
Brown the burger, adding (fresh) onion if using; drain.
In large bowl, combine all ingredients, reserving some of the cheese to top dish before finishing. 

Spray a 3 - 4 qt. crockpot with cooking spray. Add mixture; cook on low for 3 - 4 hours or on high for 2, stirring occasionally. About 30 minutes before serving, top with remaining cheese to melt over top; turn to high until ready to serve.

Greek Yogurt Chocolate Brownies - Guest Post - The Big Man's World

While I'm away from my computer and enjoying some R & R in the sunshine, I wanted to share some recipes from favorite bloggers.

Arman, author of The Big Man's World blog became acquainted after he began linking up at our Weekend Potluck party.  I'm a chatty kinda person...and he's a very funny one.  We quickly became friends and I appreciate him...not only does he make me laugh...he shares healthy recipes too! AND...he is such an awesome creator of recipes!!  I'm so impressed by that. 

(He once left me a comment on my FB page after seeing a dessert recipe...and said "Stop giving me diabetes of the eyes".)  
Oh What a Funny Guy! 

AND....HE LIVES IN AUSTRALIA!!! That makes him interesting from the start wouldn't you say? 

I LOVE this light and fluffy chocolate bar recipe he created...it blows me away to see all the ways he adds protein to dishes...Especially sweets! There's 100 comments at this recipe page at his blog!  (Granted, half of them are his own because he is great about replying to all comments - you'll get a kick out of just reading through them!)  

One of Arman's recipes I can't wait to try is

G’day readers of Marsha’s amazing blog - My name is Arman and I’m the blogger behind thebigmansworld.com. I’m in my mid 20’s and live in Melbourne, Australia. I have a passion for being creative in the kitchen and love breaking the stigma that men don’t enjoy cooking- Or can’t be good at it.

Okay, so the last one was corny but it’s true. I’m hoping to obtain an American working Visa this year and Marsha better set an extra plate at the table for me. As it’s rude for guests to turn up without a little something, I’ll be bringing one of my all time (and most popular recipes) – these Greek Yogurt Chocolate Brownies.


Chocolate for breakfast is something that occurs more often than I like to admit here and brownies for breakfast especially. Before you think this is something sinful, hear me out. These brownies can be made sugar free, are high in protein and are overall low in calories. Paired with some eggs or oatmeal- It pretty much is a balanced meal.


If chocolate for breakfast isn’t your thing, these are delicious as a snack or even healthy dessert. 1 bowl, barely any prep and you’ll have a delicious, fudgy pan of brownies sooner than you can say ‘Australia’.

Southern Style Chocolate Gravy

Well Y'all...

If you're a Southerner, you're probably very familiar with this recipe.
But if you're a Northerner like me, it was definitely something new. 

It's very delicious...no doubt about it.  I served it for a family holiday gathering and it was well loved...and was quite the conversation piece too! 

And I saved this one to share with you for Valentine's Day....
CHOCOLATE=LOVE 

I reduced some calories by using mostly xylitol instead of sugar, and using 1% milk. It would be the richest by using 2% or full fat milk. 

To me, it was just like chocolate pudding over the biscuits. We used Grands Biscuits from a can..wonderful!  But you can most certainly make your own...you could even enjoy this scrumptious gravy over these Killer 7-Up Biscuits, Copycat Cracker Barrel Buttermilk Biscuits or use your own homemade biscuit recipe. 

Oh trust me, I would NEVER complain about such a combination because it really was marvelous.  One of my most favorite 'comfort' foods is warm cooked chocolate pudding, so this was right up my taste bud alley!!!

After reviewing similar recipes online, I made a few revisions and we loved it! 
In fact....IT.WAS.GREAT! 

Do hope y'all will try it soon. 

(I have a number of Southern friends and have picked up saying y'all from them over the years...how I love 'em! =) 


SOUTHERN STYLE CHOCOLATE GRAVY 

3 Tb. butter
1/3 c. baking cocoa
3 Tb. all purpose flour
3/4 c. white sugar
(may use 1/2 c. xylitol and 1/4 c. sugar if desired)
2 c. milk, divided
2 tsp. vanilla extract 

Melt butter in a large skillet over low heat. Mix in cocoa, flour and sugar. (Using a whisk works best). Slowly pour 1 cup of milk into the skillet and whisk well to remove lumps. Whisk in remaining milk, stirring constantly, until mixture is thick, being careful not to scorch. Stir in vanilla until smooth. Serve hot over biscuits.

Leader Enterprise - February 4, 2015 - Love, Forgiveness & Chocolate



Valentine's Day is my favorite holiday of the year. I truly believe that love is a not a noun, it's a verb--an action word. So whether it be a sibling, a child, a parent, or a friend -let someone know you love them. I was so blessed and tickled when recently I missed hearing my 9-yr old grandson, Caden, tell me he loved me, so when I didn't respond, he then said I was suppose to tell him back, because that's 'what you do'. YES! We don't want to miss those kinds of opportunities.

I've opted to re-share a story from A Second Helping of Chicken Soup for the Soul. It seems we are surrounded by sickness and death,and we need reminders to live life to the fullest. May it be a sweet reminder that life is short and we don't have the promise of tomorrow, so don't hesitate to do today what needs done!

In a class I teach for adults, I recently did the 'unpardonable.' I gave the class homework! The assignment was to go to someone you love within the next week and tell them you love them. It has to be someone you have never said those words to before or at least haven't shared those words with for a long time.

At the beginning of our next class, I asked if someone wanted to share what happened when they told someone they loved them. I fully expected one of the women to volunteer, as was usually the case,but on this evening one of the men raised his hand. He appeared quite moved and a bit shaken.

As he unfolded out of his chair (all 6'2"of him), he began by saying "Dennis, I was quite angry with you last week when you gave us this assignment. I didn't feel that I had anyone to say those words to, and besides, who were you to tell me to do something that personal? But as I began driving home my conscience started talking to me. It was telling me that I knew exactly who I needed to say "I love you"to. You see, five years ago, my father and I had a vicious disagreement and really never resolved it since that time. We avoided seeing each other unless we absolutely had to at Christmas or other family gatherings. But even then, we hardly spoke to each other. So,last Tuesday by the time I got home I had convinced myself I was going to tell my father I loved him.

"It's weird, but just making that decision seemed to lift a heavy load off my chest. When I got home, I rushed into the house to tell my wife what I was going to do. She was already in bed, but I woke her up anyway. When I told her, she didn't just get out of bed, she catapulted out and hugged me, and for the first time in our married life, she saw me cry. We stayed up half the night drinking coffee and talking. It was great! The next morning I was up bright and early. I was so excited I could hardly sleep. I got to the office early and accomplished more in two hours than I had the whole day before.

At 9:00 I called my dad to see if I could come over after work. When he answered the phone, I just said, 'Dad, can I come over after work tonight? I have something to tell you.' My dad responded with a grumpy,'Now what?' I assured him it wouldn't take long, so he finally agreed. At 5:30, I was at my parents' house ringing the doorbell, praying that dad would answer the door. I was afraid if mom answered that I would chicken out and tell her instead. But as luck would have it, dad did answer the door.
I didn't waste any time - I took one step in the door and said 'Dad, I just came over to tell you that I love you.'

"It was as if a transformation came over my dad. Before my eyes his face softened, the wrinkles seemed to disappear and he began to cry. He reached out and hugged me and said 'I love you too, son, but I've never been able to say it.' It was such a precious moment I didn't want to move. Mom walked by with tears in her eyes. I just waved and blew her a kiss. Dad and I hugged for a moment longer and then I left. I hadn't felt that great in a long time.

"But that's not even my point. Two days after that visit, my dad, who had heart problems but didn't tell me, had an attack and ended up in the hospital, unconscious. I don't know if he'll make it.

"So my message to all of you in this class is this: Don't wait to do the things you know need to be done. What if I had waited to tell my dad - maybe I will never get the chance again! Take the time to do what you need to do and do it now!

This luscious and moist cake makes enough for a family so celebrate your love with chocolate.

CROCKPOT HOT FUDGE CHOCOLATE(PEANUT BUTTER) CAKE

1-1/2 c.packed brown sugar,divided
1 c. all purpose flour
6 TB. baking cocoa,divided
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
2 TB.butter, melted
1/2 tsp. vanilla
1-1/2 c. semisweet chocolate (or peanut butter) chips
1-3/4 c. boiling water
vanilla ice cream for serving
Coat a 3-qt. crockpot with nonstick cooking spray. In a large bowl, combine 1 c.brown sugar, flour, 3 Tb.cocoa, baking powder and salt. In another bowl, combine milk, butter and vanilla; stir into dry ingredients just until combined. Spread evenly into prepared crockpot. Sprinkle with chocolate(or peanut butter) chips. In a bowl, combine remaining brown sugar (1/2 c.) and baking cocoa (3 TB.); stir in boiling water. Pour over batter; DO NOT STIR.Cover and cook on high for about 4 hours or until a toothpick inserted near center of cake comes out clean. Allow to set 15 minutes, covered,before serving. Serve warm with ice cream. Yield: 6-8 servings(Hint:lay a couple of paper towels over top of crockpot before placing on lid to catch any moisture).
