Marzetti (Lasagna-like pasta dish)

A HAPPY & BLESSED EASTER TO YOU!!



My dear sis-in-love, Susie, made this for our last  family get together.  She also made a large pan of lasagna too...I think this was my favorite of the two dishes. This is a little milder and sweeter (I'm always about sweet stuff!). 

It uses burger, cream of tomato and mushroom soups, mixed with ketchup, sugar, salt & pepper...with creamy mozzarella in between the layers and over the top.

It may seem like the ingredient amounts are 'too much', but it all cooks together and turns out a fabulous & comforting dish. 

A great recipe to serve to a crowd..it can be made ahead and refrigerated, up to 24 hrs. ahead.

MARZETTI

1-1/2 - 2# lean ground beef
1/2 onion, chopped, optional
2 (10.75 ozs. ea.) cans cream of tomato soup
2 (10.75 ozs. ea.) cream of mushroom soup
1/2 c. ketchup
1/4 c. sugar
3/4 c. parmesan cheese
salt & pepper to taste
9 -12 lasagna noodles, cooked according to pkg. directions
2 (8 ozs. ea) pkg. shredded mozzarella cheese (or more)

Brown ground beef with onion; drain grease; set aside. 

Spray 9" X 13" baking pan with 2" sides; set aside. Preheat oven to 300*.

In large bowl, combine soups, ketchup, sugar, parmesan, salt & pepper. Stir in browned beef.

In prepared baking dish, cover bottom of dish with some meat and sauce. Place 3 noodles over the top, add more sauce/meat, then sprinkle some mozzarella. Make 3 layers....noodles, sauce, & cheese, topping off with cheese.

Bake, covered, for 30 minutes. Uncover; bake another 30 minutes. Let stand a few minutes before serving. 

Serve with a salad or veggies and garlic bread.

3 Fun Easter Treats {Blast from the Past}

A sweet and salty mixture of peanuts, pretzels, popcorn and candy...covered with white chocolate.  Delicious and easy. 



Use goldfish (or whales) crackers....reese's pieces....or orange jelly beans to make these fun shaped treats...




Made with crushed mini wheats cereal and coconut...covered with chocolate and shaped into a bowl.  A fun conversation-stirring centerpiece.

Sweet Potato Casserole with Praline Topping!

I didn't get this posted at holiday time so thought you might like to make this luscious dish for Easter??!!

These are perfection! So glad I saw this recipe at Stacey's Southern Bite.  I so appreciate his family values and humility. He has made #1 in the ranks of cookbooks sold on Amazon this year! Simple, down home cookin..you just can't go wrong with it!

If you're looking for a special sweet tater side dish, this is it folks!

My mouth waters to think of it.  I REALLY enjoyed leftovers too after I served this for our family Thanksgiving brunch.

(The topping really is more crumbly than my photo.  I was in a rush and baked it a little longer after taking the photo...then everyone was ready to scarf, so this is all I've got)




SWEET POTATO CASSEROLE WITH PRALINE TOPPING 



3# sweet potatoes

(about 7 - 8 medium)
1-1/2 c. sugar
(I used 1 c.- xylitol works great)
1 tsp. vanilla 
2 lg. eggs
1/2 c. evaporated milk
1/2 stick butter (4 Tb.) butter, softened


TOPPING: 

3/4 - 1 c. light brown sugar
(if using xylitol...add a tsp. of molasses)
1/3 c. all purpose flour
1/3 c. butter, melted
1/2 - 3/4 c. chopped pecans


Preheat oven to 350. Grease 1-1/2 qt. baking dish. 



Scrub sweet taters, then boil until fork-tender.  Cool; peel. 

(You can peel then boil them, but I think that's more work=)


In large bowl, mash potatoes until smooth.  Add sugar, vanilla, eggs, evaporated milk and butter; stir until blended. Pour into prepared dish. 



In small bowl, mix brown sugar, flour, butter and pecans. Spoon mixture over the potatoes.  Bake 30 - 40 minutes until done.

Sugar Free Anzac Cookies - The Big Man's World - Guest post

Hopefully, you're already acquainted with my buddy Arman...from Australia!

He recently had a guest post here at TBB sharing his terrific recipe for Greek Yogurt Chocolate Brownies


He's an awesome recipe creator and adds protein to just about anything.  I am very excited about his first e-cookbook...which he's fervently been working on. And I love that he uses 'natural' ingredients. 

One of Arman's recipes I can't wait to try is

Big Man's World Sugar Free Anzac Biscuits

It's Arman here Again! You might remember me from my guest post a month or so ago here and I'm back taking the reigns!

Last week, I announced some big news on the blog- I've gotten a work visa to America! This means that when I meet up with Marsha, I'll be coming armed with a recipe that I know she'd love- These delicious

Anzac biscuits are an iconic Australian cookie which I grew up on. They are generally made of whole wheat flour, sugar, butter, rolled oats and golden syrup. When I develop recipes, I tend to give them a healthy makeover without sacrificing on taste so of course I had to do the same with these ones.

These cookies are granulated sugar free, vegan and gluten free. The sweetness comes from the small amount of golden syrup, which can easily be subbed for sugar free maple syrup if you want a completely sugar free cookie. 

For those of you who haven't been to Australia, make these cookies and have a taste of some of the deliciousness that we can come up with.

Actually, I lied. We really don't have too much here.

Fruited Chicken Salad

I love chicken salad with fruit.  And I discovered there are many variations all over the net. 

This is a simple recipe 'basic' that you can make your own by adding more or less of what you want most. 

I love the crunch of the apples, celery and nuts, and the sweetness the grapes add.You could also add drained pineapple tidbits or mandarin oranges. 
(If making ahead, I suggest adding those ingredients just before serving). 

We gobbled this up right after I made it, along with some bacon flavored ritz crackers.  OH MY!

(Yes, that's a big beautiful FL strawberry...we sure are enjoying them while we're here on vacation)


FRUITED CHICKEN SALAD 

4 medium chicken breasts, cooked and diced
1/2 c. seedless grapes
1/2 c. celery, diced
1/2 apple, cored and diced
1/2 c. (toasted) pecans, chopped
1/2 c. golden raisins (or craisins)
3/4 c. mayonnaise
1 tsp. honey dijon dressing, or more to taste, optional
(instead of honey dijon, you could add 1/2 tsp. apple pie spice)
fresh ground pepper, to taste

In large bowl, combine chicken and fruit. Add mayo and dijon; stir until blended, adding more mayo according to your preference.  Refrigerate any left overs.
