Grandma's Waldorf Salad

CAN WE TALK?

I wanted you to know that the next couple of weeks are going to be extra busy for me...we have sold our lovely home and will be moving just 3 doors down to a smaller home, where the landlord will take care of the yard and all the maintenance.  YAY!

In case you didn't know, my hubby is 100% disabled (because of exposure to Agent Orange) and can't do all the things he use to.  Oh he tries...believe me he continues to try, but there comes a time when you just have to slow down.

Our time has come...so...with that being said, I have two new recipes a week, scheduled to be published over the next few weeks, but I will not be online for several days, so I would appreciate you LIKE-ing my FB posts (or FB will remove them) and PIN-ning my recipes...until I'm back here sitting in my favorite chair, spending time with y'all!

On to today's new recipe post....

This is a great dish from Gooseberry Patch's 
FOOLPROOF FAMILY RECIPES. The recipe was submitted by 
Anne Alesauskas of Minocqua, WI. 

My very own CHEESEY COTTAGE POTATOES recipe is in this book, so I received the book for free.  I love that GP does that!  I'm building quite a collection. 

I think it's pretty funny that this recipe is named Grandma's...when it really reminds me of a dish my own mom made, nearly every Sunday.  And my mom called it Waldorf Salad too!

My mom would tear up a little bit of lettuce...then add whatever fresh fruit she had on hand..usually an apple, a banana, some grapes, maybe raisins, and marshmallows, then mix a little sugar and milk with mayo then stir it in.

We enjoyed this lovely dish so many times when my own kids were growing up too.  But you don't want to make more than you can eat for that meal, because the lettuce wilts and the fruit browns.  So if there was any left in the bowl at the end of the meal, I made sure it didn't go to waste...(it went to waist instead=). 

This salad has great CR-R-R-unch! And it's light and very tasty. Would be great for lunch or for any holiday meal. Perfect for autumn. 


GRANDMA'S WALDORF SALAD 

2 Gala apples, cored and diced
1 Granny Smith apple, cored and diced
1/2 c. chopped pecans or walnuts
1/2 c. celery, diced
1/3 c. sweetened dried cranberries
1/3 c. mayonnaise
(I added a few sprinkles of salt, and of sugar too...to make 
it taste more like MY mom's=) 

Stir together all ingredients in a large bowl. Cover and chill until serving time.

Simple Cinnamon Sugar Pretzels

Found this in local church cookbook given to me recently....

A great 'twist' on dressing up pretzels...and they are so good to eat. 

These would make a great holiday gift.  
And they're 'last minute/easy' too! Place in a decorated bag, or a jar, tie with a ribbon and the recipient will be delighted for this yummy sweet & salty snack. 

I only used 2 tsp. cinnamon and would have liked to have had more, so I'd advise to use the full amount. 

I sold my first batch at my recent garage sale and one of the gals who got them asked for the recipe within days!!  Yep...they're that good.  She was SURPRISED they were soo simple! 



CINNAMON SUGAR PRETZELS


1-1# bag of pretzels
2/3 c. vegetable oil
1/2 c. sugar
2 – 3 tsp. cinnamon

Preheat oven to 300. In large bowl, combine oil, sugar and cinnamon; mix well. Add pretzels, tossing to be sure they are well coated. Place in roasting pan or large baking dish with sides, sprinkling any remaining sugar/cinnamon mixture over the pretzels. Bake for 30 minutes; stirring every 10 minutes. Remove from oven; cool to room temp.

3 Healthier Snacks Using Coconut Oil {Blast from the Past}

These special little bites are sweetened with honey.  Oh SO scrumptious and chewy! 





What tasty little bites...baked in the oven. Oatmeal, flax seed, wheat germ, coconut oil and honey are among the listed ingredients. What's not to love? 




I can normally pass up ice cream, but pour this awesome topping over it and I'll scream for more. Sometimes I eat this just to satisfy my sweet tooth...and the recipe is actually
SUGAR FREE!

Browning Ground Beef in the Crockpot

We're foregoing a recipe today so I can share a 'technique' with you that's an awesome timesaving idea. 



I saw this nifty idea at Pinterest and am so grateful to 
One More Good Thing from Jillee for sharing.  

I LOVED it!  While the burger browned, I did some laundry, cleaning and baking! This was WAY better than standing over the stove stirring every few minutes so it won't burn. 

This would be soooo perfect to do before the busy holiday season hits!!

Place as much (lean) burger as you want to brown, in your crockpot. Stir it around to break up any lumps. (I used about 4# in my 3-qt. crockpot)


Place the lid on the crock and cook on high for about 2 hours...depending on your crockpot. 


I stirred it a few times while it cooked. 

When it was done (no pink remaining), I drained the grease into a bowl, then rinsed the burger with hot water to remove more grease. 


After it cooled, I bagged it up into freezer bags...whatever size suits your family's needs...and there you have it! 

Label it, date it and you're ready to rumble.

Now you're all ready for a quick meal...GO!

Orange Creamsicle Poke Cake

This is an awesome dessert.  Poke cakes are great all year long, but especially for the fall months...


Orange use to be my favorite color.  I'm not sure when or why, but one day I decided that dark rich purple was the color that moved me.  When I wore it,  folks complimented me on how good that color looks with my skin...

And purple is a 'royal' color...which I love...

So purple it is now, but I still favor orange.

Especially in this yummy moist cake.  The cake has orange juice instead of water - poke holes and pour orange jello over.  Top with instant vanilla pudding and cool whip. 

Luscious I tell you...do try it soon.  You will be so glad you did! 

The only thing I changed was to use less water when mixing the jello. Original recipe calls for 2 c. water, but for me, that waters the jello down...I prefer a stronger flavor. 

I found this recipe idea from Jocelyn at Inside BruCrew Life.  She topped her cake with Orange Crush Dessert Topper - brilliant, but I didn't have any so I used sprinkles. 

This is a lovely moist cake...perfect for your next fall party. 



ORANGE CREAMSICLE POKE CAKE 

1 (16 - 18 ozs) white cake mix 
1 c. orange juice
1 lg. box (6 serv. size) orange jello
1-1/2 c. boiling water
1 sm. box (4 serv. size) instant vanilla pudding
1 c. milk
1 (8 ozs) Cool Whip, thawed
Orange Crush Dessert Topper (ice cream topping), optional


Preheat oven to 350.  Grease 9" X 13" baking dish.

In large bowl, mix cake according to directions on box, using orange juice instead of water. Bake for about 25 minutes, but check time listed on box directions. Remove from oven and poke holes all over top of cake with a meat fork. 

Dissolve jello in boiling water; let cool about 5 minutes. Spoon jello over top of cake, trying to spread evenly. Cool completely in the refrigerator.

In small bowl, whisk together pudding mix and milk; fold in 1/2 the cool whip; spread over cake. Top with remaining cool whip; sprinkle with topping if desired.

Chocolate & Peanut Butter Treats (Naturally Sweetened)

M-M-M-M-M-M-M!!! 

This is one very satisfying sweet treat, especially while I'm trying to drop a few (few? teehee) pounds. 

I need chocolate...and I need something sweet...while I try to cut way back on carbs.  I added the crisp cereal to the top layer because I'm all about crunch!

I don't have to feel a bit guilty about enjoying this wonderful snack.

I so adore the smoothness you get when you use coconut oil. 
I sweetened this with agave nectar...feel free to use honey if you prefer. 


CHOCOLATE & PEANUT BUTTER TREATS
(NO SUGAR ADDED)

3/4 c. natural salted peanut butter
1/4 c. coconut oil
2 Tb. agave nectar, or raw honey

Warm peanut butter and coconut oil together until melted. (A few seconds in the microwave does the trick) Stir in agave and pour into mini muffin pans (about 24) or just a small pan. (The oil keeps them from sticking). Place the pan in the freezer while you prepare the second layer. 

Chocolate Layer:

2 Tb. coconut oil
2 Tb. butter (nor margarine)
2 Tb. agave nectar, or honey
2 Tb. unsweetened baking cocoa
about 1/3 (brown) rice krispies cereal, optional
 

Melt coconut oil and butter together; stir in agave and baking cocoa, stirring until smooth. Add cereal; stir to coat. Pour over top of peanut butter layer. Place in freezer for about 15 more minutes...they should be ready for you to enjoy!  Store in the refrigerator.
