Skinny Starbucks Copycat Caramel Macchiato


This drink is one I order often on a rare occasion I get coffee away from home.
I was SO tickled to see this simple recipe at Nancy's Skinny Kitchen

Nancy says... Each skinny remake has just 97 calories, 0 fat and Weight Watchers Freestyle SmartPoints.

What's not to love eh???? 

I thought this would make a great first post of 2019. 
Enjoy yourself with this one. 

And if you want to make it a little richer, go ahead and use regular milk and a little more ice cream topping to suit your taste.  Just remember you'll be adding 
WW Points also...



SKINNY STARBUCKS COPYCAT CARAMEL MACCHIATO

1 c. strong brewed coffee, regular or decaf, heated
1/2 c. fat free milk
2 packets Truvia or your favorite substitute
2 tsp. caramel ice cream topping
1/2 tsp. vanilla extract
1 tsp. caramel sauce for garnish

Brew the coffee extra strong. In a small saucepan over medium heat, add milk, 2 tsp. caramel sauce, Truvia and vanilla; stir (or whisk) until blended.  Heat until steaming over medium heat, about 2 minutes. Remove from heat.  Transfer to blender and process for about 20 seconds (or use a frother) . or just whisk for a while until its foamy.  Add hot coffee to mug; pour foamy milk over top.  Squirt a little whipped topping from a can, if desired, and drizzle with 1 tsp. caramel ice cream topping.

Enjoy right away! 

Makes 1 - 1-1/2 c. serving

Skinny Caramel (or Vanilla) Java Swappuccino (WW Pts. Available)


HAPPY NATIONAL COFFEE DAY!!

Oh how I LOVE me some coffee.  And I like it creamy and sweet!

(On a sidenote: We do coffee the scriptural way at our house...HEbrews!
My dear sweetie makes my coffee every morning and brings it to me in my chair.  He's a keeper for sure!)

DRINK UP! 

I've had this recipe in my files for some time and decided today was the perfect day to make it! There's only a few ingredients and it's simple enough to make it vanilla (or raspberry? or? or?)...whatever suits your fancy.  

And this is low-calories & has PROTEIN added to it!  What's not to loooove??? 



I have an amazing recipe for Salted Caramel Coffee Toffee Cookies that I use this Starbucks VIA caramel coffee granules in, so that's what I choose to add
to this, instead of plain ole instant coffee. That would be the perfect cookie to enjoy with this coffee drink too.  Drat!  I don't have any in the freezer. =(

Malted Mocha Bars would be awesome also. 

I added more almond milk, and fewer ice cubes...and as you can see, it was still very thick, so I let it stand a few minutes before enjoying it.

SKINNY 
CARAMEL (OR VANILLA) JAVA SWAPPUCCINO 

1 c. unsweetened vanilla almond milk
(original recipe calls for 3/4 c.) 
3 Tb. vanilla protein powder (100 per scoop)
1-1/2 tsp. instant coffee granules
(I used Starbucks VIA caramel flavored coffee)
1/4 tsp. vanilla extract
(I used Torani caramel coffee syrup) 
1 no-calorie sweetener packet (like Stevia or Truvia)
6 - 8 ice cubes, crushed (less than 1 c.) 

Place all ingredients in a blender. Blend at high speed until smooth. The longer you blend it, the more it will froth up. MMMMMM!!

Yield- 1 - 2 servings (about 20 ozs. total)

Skinny Meatloaf 'Cupcakes'

I have always had a special love for meatloaf.
It was the first meal my hubby asked his mom to make for him when he returned home from Vietnam. (I knew he was the one for me right then too!=) 

I'm also wild about single servings, so when I saw these
adorable and delicious 'cupcakes' at Skinny Kitchen
well...we ate them soon after and really enjoyed the idea of having the
mashed taters on top. 

DE-LISH!!! Very filling and satisfying too. 

They're easy and can even be (mostly) made ahead. 



SKINNY MEATLOAF CUPCAKES

1 # extra lean ground beef or turkey
1 slice whole wheat bread
1 c. onions, diced
2 egg whites
3 Tb. ketchup
2 Tb. Worcestershire sauce 
1 Tb. spicy brown or yellow mustard
1/4 tsp. salt
fresh ground pepper, to taste

Topping:
1/4 c. ketchup
1 Tb. mustard
2 tsp. brown sugar

Taters:

3 c. (1#) baking taters, peeled and cubed
1/3 c. (reduced sodium) chicken broth
1 Tb. reduced-fat butter or Smart Balance Light
1/8 tsp. salt
fresh ground black pepper, to taste

Preheat oven to 350. Using non-stick cooking spray, coat a 12-cup muffin tin; set aside. 

Remove crust from bread; add to blender or food process. Process until crumbs.

In large bowl, add ground beef, bread crumbs, onions, egg whites, ketchup,
mustard, worcestershire sauce, salt and pepper. Mix together well, using your hands if necessary. 

Measuring about 1/3 c. of mixture, fill 9 muffin cups. In small bowl, mix topping ingredients.  Spread about 1 Tb. over each meatloaf.  Bake for 40 minutes. 

While baking, make the mashed potatoes.  In a medium saucepan, cover potatoes with water; bring to boil; simmer until fork tender. Drain well; mash with fork, adding butter, broth, salt & pepper. Mash until smooth, keeping warm over burner. 

Remove meatloaves from pan; place on paper towel to drain.  Top each with 2 rounded Tb. of mashed potatoes. Serve. 

Yield: 9 'cupcakes'

'Skinny' Magic Bars {WW Points}

FYI: We are on the road headed South to warmer temps for a few weeks...God graciously laid this opportunity in our laps just a couple of weeks ago.  I will be slowing down some...be on the lookout for some great guest posts while I'm away...and for new recipe posts on Sundays and Tuesdays.  I won't be online as much, so just wanted you to be aware.  Maybe I'll even share a photo or three of our fun in the sun. *-* As always - thanks for your support and interest in TBB blog. 

If you want to splurge, but stop from going overboard....
These luscious bars would be perfect for the upcoming Valentine's Day celebration.  They are fantastic and sweet, but the reduced-calorie version. 

It seems I am always trying one more recipe from Nancy's Skinny Kitchen. Must be because they are ALWAYS a winner right?

With so many sweets over the holidays, I was tickled to find this 'reduced sugar/fat' recipe for those amazing layered bars...called Magic Bars, and sometimes called Hello Dollies. 

We lived a very frugal life when I was growing up, so when mom made rarely made these, it was SUCH a special treat.  I've had a fondness for them for years. 

They were very easy to put together because you just layer everything, there's no mixing.  Using fat free sweetened condensed milk 
reduced fat butter, and less chocolate, coconut and nuts...you can enjoy these and count 4 Weight Watchers Points per serving also. 

I always appreciate the fact that Nancy allows me to share the nutritional info from her wonderful website too.  Trust you'll pay her a visit and stay a while. 
Just look how she reduced the calories...from 356 to 133!  These special treats really ARE Magic! 

Weight Watchers (old points) 3

Weight Watchers POINTS PLUS 4

SKINNY FACTS: for 1 bar
133 cal, 5.7g fat, 3g protein, 19g carbs, 1g fiber, 61mg sodium, 16g sugar
FAT FACTS: for 1 bar made with full fat ingredients
356 cal, 22g fat, 6g protein, 38g carbs, 2g fiber, 163mg sodium, 31g sugar



SKINNY MAGIC BARS 

1/4 c. reduced fat butter
(like Smart Balance)
1-1/4 c. graham cracker crumbs
1/2 c. flaked coconut, sweetened
(I used unsweetened)
1 c. semi sweet chocolate chips
1 (14 ozs) can fat free sweetened condensed milk
(click here for my homemade sweetened condensed milk)
1/2 c. chopped walnuts
(I used pecans)

Preheat oven to 350.  Spray 9" X 13" baking dish with nonstick cooking spray with flour, being sure to spray sides as well. Add butter to pan; place in oven to melt. (will take about a minute)

Sprinkle graham cracker crumbs over butter, patting down, but do not mix. 
Sprinkle coconut evenly over cracker crumbs, then do the same with the chocolate chips. 

Drizzle sweetened condensed milk evenly over all. (You can place can in a cup of warm water to make spreading easier). Top with nuts. Bake for 20 - 25 minutes or until golden brown. 

Cut into squares while still warm, otherwise, they'll be difficult to cut. 

Yield: 24 squares

Skinny Frozen Hot Chocolate

If you've been with me very long, you know I am always trying a new smoothie or cold beverage, especially during the summer months.  In the cold months, then it's a warm beverage to get me going. 

I've seen MANY recipes for frozen hot chocolate - some even using frozen bananas, but this one from Gina's Skinny Taste is the one I went with, and I'm so glad I did.

I changed it up to reduce a few more calories, and used a sugar free packet of hot cocoa mix. Ovaltine gives it a rich chocolate flavor also. 

I was so excited about drinking it, I wish I would have taken time to top it with whipped cream (as well as the whipped topping IN the drink). 

After taking photos on my deck, I sat down in the swing and 'chilled' while I enjoyed my cooling frozen drink.  MMMM!

IT.WAS.AWESOME!


SKINNY FROZEN HOT CHOCOLATE 

  • 1-1/2 c. fat free milk
  • 1 pkt. (sugar free) hot cocoa mix 
  • (or 4 Tb. Ovaltine)
  • 1 Tb. unsweetened baking cocoa
  • 2 Tb. fat free whipped topping (optional)
  • drop of peppermint extract (optional)
  • 1 c. ice
  • 1 - 2 pkts. sweetener (Stevia, etc) or sugar, to taste, optional

Pour the milk into your blender. Add cocoa mix, baking cocoa and whipped topping (or top off your drink with it.) Then add ice. And sweetener.

Blend about 3 minutes until the ice is completely chopped and the mixture is thick and icy. Serve immediately.

Yield: 2 servings

Skinny BBQ Chicken (& Pineapple) Tortilla Pizza (WW Points)

I was so happy I saw this recipe...the day after I had cooked some chicken in the crockpot with BBQ sauce!  This was a perfect way to eat up some of that chicken. 

If you're not counting Weight Watchers points, of course you could use more of everything.  I added crushed pineapple I had leftover in the fridge, so that is not included in the WW points Nancy shares at Skinny Kitchen. If you've never been to her blog, I invite you to get on over there...she shares awesome and delicious 'skinny' recipes...I make a lot of what she shares there. 

The balsamic vinegar really adds the perfect touch...

This is a super recipe for summer because the oven doesn't have to be on for long at all....

I was excited to try this tip I've seen around the net...it worked GREAT for this recipe!

Place your grape/cherry tomatoes between two plastic lids...cut them all at once with a serrated knife.  Voila!!!

SKINNY BBQ CHICKEN (& PINEAPPLE) TORTILLA PIZZA 

2 whole grain or whole wheat flour tortillas
(I used low carb) 
1 c. onions, thinly sliced
(I used less)
2/3 c. chicken, cooked and diced 
1/4 c. barbecue sauce
1 tsp. balsamic vinegar
1/4 c. crushed pineapple, optional
1/2 c. cherry or grape tomatoes, sliced
6 Tb. light mozzarella cheese
(I used a little extra)
1 Tb. Parmesan cheese


Place tortillas under broiler for about 1-2 minutes to toast (I sprayed with canola oil to crisp them up more), turn over and broil 1 more minute to toast other sides. Keep an eye on them so they don’t burn. Remove from oven and set aside.

Place sliced onions on a microwave safe plate and cook in microwave for 2 minutes to soften. Add chicken to a small bowl. Toss with 3 Tb. barbecue sauce, balsamic vinegar and pineapple. 

To Assemble: Spread each tortilla with 1/2 Tb. barbecue sauce. Use the back of a spoon to spread. Top each with 1/2 of chicken/barbecue sauce mixture and spread around. 

Place 1/2 of the onions all over the top of each pizza. Sprinkle each with 1/4 cup tomatoes. 

Lastly...Top each with 3 Tb. light mozzarella cheese and 1/2 Tb. parmesan cheese.
Place on a baking sheet and broil for about 1-2 minutes until cheese is melted and tortilla is browned. Be careful to not let them burn. 

Remove from oven. Cut with pizza cutter; serve. 
Yield: 2 tortilla pizzas 

(this recipe can easily doubled or tripled )

Skinny Salted Caramel Hot Chocolate

OHMYGOODNESS!

I came across this photo in my pictures, and realized I'd best be sharing this one NOW. 

With spring just around the corner, we may not be enjoying hot chocolate as much as we do in cold weather.

It's been a brutal winter for many, and I am more than overjoyed to say I got to escape much of it and enjoy time in Florida.  We have even enjoyed hot chocolate in Florida too. The evenings can be cool. And there's always room for chocolate!

This one did not disappoint and I am excited to add it to my blog...and hopefully, into your recipe files. 

This scrumptious drink makes me think of my amazing Best Ever Caramels
with a sea salt topping optional. OH.MY!

Love Love Love the coarse salt topping on this.  Just makes me giddy and makes me feel so special.

Enjoy every tasty sweet n salty sip!!



SKINNY SALTED CARAMEL HOT CHOCOLATE 

2 c. skim milk
2-1/2 Tb. unsweetened baking cocoa
2 Tb. sugar free caramel ice cream topping
1 - 3 pkts. stevia, truvia, or your favorite sweetener

For Garnish:
Lite Reddi Whip
Sugar Free Caramel Ice cream topping
Coarse Sea Salt 

Heat the milk in a medium  saucepan over medium heat. Whisk in the baking cocoa until smooth. Heat through and add caramel, then sugar substitute until blended and smooth. Heat for about 5 minutes or until warmed. Pour into mug. 

Top with whipped cream; drizzle with caramel. Sprinkle sea salt over top and serve...proudly!!  This is the kind of drink you want to serve company!!!

(I prefer stirring the caramel and salt into the drink before enjoying).

Starbucks Skinny Cinnamon Dolce Latte

That Nancy at Skinny Kitchen has nailed it again!!  I LOVE her yummy recipes!

She is a woman after my heart...always creating these 'skinny' beverages to satisfy my caffeine intake, minus the guilt and calories.  

According to her website, she shares this information...
"One (12oz) skinny latte has just 48 calories, 0 grams fat and 1 Weight Watchers POINTS"

WOOOOHOOO!!! You won't get that at Starbucks!

I really enjoyed this tasty drink!!

STARBUCKS SKINNY CINNAMON DOLCE LATTE 

3/4 c. strong brewed coffee
(click here to see how I make 'homemade, cold brew, coffee concentrate')
2 pkgs. Stevia, Truvia or your favorite sugar substitute
1 Tb. water
1/4 tsp. cinnamon
(I used several drops of cinnamon syrup instead)
1/2 teaspoon vanilla extract
1/2 c. fat free skim milk

In a small saucepan, over medium heat, blend sweetener, water, cinnamon and vanilla with a whisk until blended. Add milk; heat until steaming, stirring occassionally...about 2 minutes. Remove from heat. Pour mixture into blender and process for about 20 seconds or until foamy. 

Or whisk fervently until foamy.  

Add 3/4 c. hot coffee to mug. Add foamy milk. Stir and enjoy immediately. 

Yield: 1 - 12 ozs. beverage
