3 Simple Sweet Treats made with a Cake Mix {Blast from the Past}


Oh these moist cookies will satisfy any sweet tooth.  And with only a few ingredients..MMMMM! 




Would you believe there's only 3 ingredients in this cake?  Easy enough for a kid! So moist and tasty too. 




Only FIVE ingredients to make these chocolatey, ooey gooey bars!

Beef Stroganoff Casserole - YES PLEASE!

This is another fabulous recipe from Tonya at 4 little Fergusons
Guess you know by now, I'm pretty partial to this special lady and know I can always trust her family-friendly dishes.  

This is such a hearty one-dish meal...Tonya has dubbed it "Man Casserole" as it's one of her hubby's favorites. (Mine too!)  With all these amazing flavors together, it's one Out of this World Dish!! 

I adapted it somewhat...one thing I did was to use Greek yogurt instead of sour cream. Use whatever your family likes best. 

With layers of ground beef, mushrooms, french fried onions, mushroom soup, and more...AND THEN...topped with biscuits, and an egg sauce...you can't go wrong!!!!!!!!!!

Serve with a salad or veggie and you're all set to enjoy a delightful meal!




BEEF STROGANOFF CASSEROLE 


1 c. plain Greek yogurt (or sour cream), divided
2 (10.75 ozs) cans mushroom soup
(or 1 lg. family size) 
2 lbs. ground beef
8 ozs. mushroom pieces & stems
2 garlic cloves, minced 
garlic pepper or just salt & pepper 
1 lg. (6 ozs) can french fried onions
1/2 tsp. salt
(I didn't add)
2 cans (8 count) buttermilk refrigerated biscuits 
2 eggs
1 tsp. celery salt

Preheat oven to 375. Spray 9" X 13" baking dish with cooking spray.

In small saucepan, heat 1/2 c. Greek yogurt (or sour cream) and soup. Set aside. 

In large skillet, brown burger, mushrooms and garlic, seasoning to taste.  Mix with the yogurt/soup mixture and place in bottom of prepared pan. Top with ff onions. Flatten each biscuit, cutting in half (from top to bottom) and placing over top of casserole as if you were putting puzzle pieces together, overlapping a little as you try to seal them together. 

(You may have a few biscuits left over - bake them separately for a snack or breakfast). 

Combine remaining 1/2 c. Greek yogurt, eggs and celery salt. Pour over biscuits.  Bake 25 - 30 minutes or until biscuits are brown and cooked through. 

TIP:  You want the meat portion to be hot when topping with the biscuits...otherwise you may end up with gooey biscuits underneath.

Refreshing 'n' Light Key Lime Pie (4 Ingredients!)



I saw this recipe on the inside of a lid of a whipped topping bowl... 

I LOVE that it only has 4 ingredients...not counting the water.



The results were fabulous.  What a perfect summertime pie this will make!

I'm thinking about strawberry or raspberry next time around.  

Simple & Delicious. I used sugar free jello, but 'regular' is fine too. 



REFRESHING 'N' LIGHT LIME PIE 

1 sm. pkg (4-serv. size) (sugar free) lime gelatin
1/2 c. boiling water
3 (8 ozs.) cartons (non/low fat) Key Lime Pie yogurt
(I used light, 80 calories each) 
 1 to 1-1/2 c. whipped topping
1 8" store purchased graham cracker or shortbread crust

 In large bowl, dissolve the lime gelatin in boiling water; refrigerate for 10 minutes. Stir in the yogurt. Chill until partially set (about 10 minutes).  Fold in the whipped topping. Pour into crust. Chill until firm.

Happy Mother's Day to all moms and grandmas! In honor of those women who have impacted the lives of anyone, young or old, I wanted to share this lovely story about the difference one person can make in the life of a child. And even if you weren't blessed to ever give birth, but gave yourself away to others, thank you to each of you for sharing your wisdom, love, joy, and support for those who have been blessed to know you in any way.

"MY MOTHER'S RICHES" 

"There must be something pretty special about a mother who can raise a daughter oblivious to the poverty she lived in. I didn't even know I was poor until I was in the second grade. I had everything I needed; nine brothers and sisters to play with, books to read, a friend in a handmade Raggedy Ann, and clean clothing my mother skillfully mended or often made herself. My hair was washed and braided by my mother each evening for school the next day, my brown shoes polished and shined. I was blissfully happy at school, loving the smell of the new crayons and the thick art paper the teacher handed out for projects. I soaked up knowledge like a sponge, earning the coveted privilege of taking messages to the principal's office one week. 

I still remember the feeling of pride as I went by myself up the stairs of the school to deliver that day's lunch count. As I returned to my classroom,I met two older girls going back up the stairway. "Look, it's the poor girl," one whispered to the other,and they giggled. Face flaming red and choking back tears, the rest of the day was a blur.

Walking home that day, I tried to sort out the conflicting feelings that the girls' comments had wrought. I wondered why the girls thought I was poor. I looked down critically at my dress and for the first time noticed how faded it was, a crease at the hem visibly announcing that the dress was a hand-me-down. Despite the fact that the heavy boy's shoes were the only kind with enough support to keep me from walking on the sides of my feet, I was suddenly embarrassed that I wore ugly brown shoes.

By the time I got home, I felt sorry for myself. I felt as if I were entering a stranger's house, looking critically at everything. I saw the torn linoleum in the kitchen, smudged fingerprints on the old paint in the doorways. Dejected, I didn't respond to my mother's cheery greeting in the kitchen, where she prepared oatmeal cookies and powdered milk for a snack. I was sure the other girls in school didn't have to have powdered milk. I brooded in my room until suppertime,wondering how to approach the topic of poverty with my mother. Why hadn't she told me, I wondered. Why did I have to find out from someone else?

When I had worked up enough courage, I went out to the kitchen. "Are we poor?" I blurted out, somewhat defiantly. I expected her to deny it, defend it, or at least explain it away, so I wouldn't feel so bad about it. My mother looked at me contemplatively, not saying anything for a minute. "Poor?" she repeated, as she set down the paring knife she'd been peeling potatoes with. "No,we're not poor. Just look at all we have," she said, as she gestured toward my brothers and sisters playing in the next room.

Through her eyes I saw the wood stove that filled the house with warmth, the colorful curtains and homemade rag rugs that decorated the house, the plate full of oatmeal cookies on the counter. Outside the kitchen window I could see the wide open space of country that offered so much fun and adventure for 10 children. She continued, "Maybe some people would think we are poor in terms of money, but we have so much." And with a smile of contentment, my mother turned back to preparing a meal for her family, not realizing she had fed far more than an empty stomach that evening. She had fed my heart and soul". 

This lovely cake begins with a box mix, and ends up being a very special dessert. No mixer needed. Older children could make this for mom!                                           


NUTTY PISTACHIO PINEAPPLE CAKE 
1 (18 ozs) yellow cake mix 
1(4-serv.size) instant (sugar free) pistachio pudding
3 eggs
1/4 c. sour cream (or Greek yogurt)
1 c. (1%) milk
1 (8 ounce) can crushed pineapple, undrained
1 tsp. vanilla (or almond) extract
1 c. (unsweetened) shredded coconut
1 c. chopped pecans, or your favorite, toasted 

Preheat oven to 350. In large bowl, mix pudding and cake mix with a wire whisk. Add eggs, sour cream/greek yogurt, milk,pineapple, vanilla, coconut and nuts. Mix well. Spray a 9-inch bundt pan or a 9"x 13" baking pan with nonstick cooking spray. Bake 45 - 50 minutes, checking just before 45 minutes..and every few minutes after. Cool in pan for about 15 minutes,turn out on plate. Drizzle with a simple powdered sugar/milk glaze or frost with your favorite frosting. 
It won't be long and we'll be enjoying rhubarb. This lovely'makeover' recipe reduces sugar/fat/calories. De-Lish!

MAKEOVER STRAWBERRY/RHUBARB CRUNCH
1/2 c. sugar
2 Tb. cornstarch
2-1/2 c. sliced fresh (or frozen/thawed strawberries)
2 c. diced fresh or frozen rhubarb
1 tsp. vanilla extract
1 Tb. sugar free strawberry jello,dry
2/3 c. all purpose flour
1/2 c. quick-cooking oats
1/4 c. brown sugar blend(Splenda)
1/2 tsp. ground cinnamon
1/4 c. cold butter
reduced-fat whipped topping or reduced-fat strawberry  or vanilla ice cream, optional

Preheat oven to 350. Spray an 8" square baking dish with cooking spray. In a large saucepan, combine sugar and cornstarch. Stir in strawberries and rhubarb until blended. Bring to a boil; cook and stir for 1 - 2 minutes or until thickened.  Remove from heat; add vanilla and stir in jello until dissolved. In small bowl, combine flour, oats, brown sugar blend and cinnamon; cut in butter until crumbly. Sprinkle over fruit mixture. Bake 25-30 minutes or until filling is bubbly and topping is golden brown. Serve with whipped topping or ice cream if desired. Yield: 6 servings

One serving without topping = 210 calories, 6 gr.fat (4 saturated), 45 mg sodium, 37 carb, 2 fiber, 2 protein

Homemade Toaster Strudels (2 Ingredients!)

I was SO excited when I saw this quick and easy recipe from Tiffany at 
JUST BEFORE I was heading to my daughter's for a visit.  

I love being able to involve my grandchildren in kitchen 'fixins' so this was perfect.  I picked up the ingredients on my way there. 

Here's my little helper Kaity - apron & all.  She did a great job and loved being able to press them together with a fork.

(3 - counting store purchased frosting)

These were so simple, but I also want to give you some options to try that I've read up on also, so keep reading...

I loved that Tiffany didn't even bother to roll out the dough, though you could...and you could have more than 6 strudels too. 

Six was perfect for us, so that's what we went with. 


HOMEMADE TOASTER STRUDELS 

1 box Puff Pastry (found in freezer section, thawed) 
(It will have 2 sheets of pastry..and each one will be cut into 6 triangles)
 (20 ozs) can pie filling 
(you'll have leftovers) 
1 egg, beaten, optional

Glaze: 
1/2 c. powdered sugar
2 Tb. cream cheese, softened, optional
1 tsp. vanilla
enough milk to make consistency for spreading 

(OR, as we did...use ready made frosting - 
heat if necessary to drizzle or spread over top while pastries are warm) 

    Preheat oven to 375 degrees. Place the thawed pastry sheets on a lightly floured surface. Cut into equal size rectangles (we cut on the dough creases, then cut that large rectangle in half...worked perfectly!) Place half the pastry pieces on a large baking sheet (we covered with parchment paper). Add about heaping Tb. pie filling to each rectangle, leaving about 1/2" on the sides. Cover pie filling with remaining pastry pieces. Seal edges by gently pressing with a fork. (Brush tops with beaten egg, if using - we didn't) Bake for approximately 20 - 25 minutes or until golden brown. Let cool slightly and add glaze if desired.
The hardest part is definitely having to wait for them to cool!  I suggest about 10 minutes cooling time so you don't burn your tongues! 

Options: 
Add a few cinnamon or white chocolate chips 
Combine 1/2 c. jam with 2 tsp. cornstarch for filling
(I'm thinkin raspberry white chocolate together!!!) 
Freeze pastries after they are completely cooled.  Place on waxed paper lined cookie sheet - freeze for at least an hour; place into ziploc freezer bags; heat in 400* oven for about 5 minutes; cool, serve.

Brown Bobbies - A Family Tradition

This was one of the 'biggest' posts I published in my first year of blogging.  This was originally posted in 2010. Since I am going to visit my dad - 3 hours away - this week, and all my brothers will be there, I made a couple batches of Brown Bobbies to share, so I'm sharing this with you...once again

I have been blessed to inherit a special kitchen 'appliance' from my mother, after she passed away in 1987 - who inherited it from my dad's mother.  This is a picture of grandma holding my newborn firstborn - daughter, Deb ~ a month before grandma went to heaven.

This appliance is called a "Brown Bobby Machine."  It has a cloth-covered cord...that should give you a clue to how old it is. (I am always amazed it STILL works!!!) 

My grandparents purchased this little machine about 1910.  My grandmother made the 'greaseless donuts' and my dad and his siblings sold them door to door, in little cartons, similar to our egg carton today.

This is a picture of the machine ~ it's similar to a waffle iron and makes 6 donuts at a time.

I wasn't able to get a clear picture of the metal plate on the bottom front of the base, but this is what it reads...

3 Bangin' Bean Dishes {Blast from the Past}

Unbelievably delicious! A cousin of mine (I wouldn't dare name her!) recently made this for her and her hubby...they shared some with a neighbor and then the 2 of them finished off the whole thing in one evening!

Guess we know things were really rootin' tootin' at their house that night!  =) 
(She said they simply couldn't stop eating it!) 

Crockpot Beans & Kraut Stew



A lovely assortment of beans, doctored up with burger, bacon and a few other ingredients. These are terrific for a reunion or potluck...they'll go quickly!

This simple recipe is best with fresh green beans, but frozen make for a great dish too.  MMM good!
